BEEF HOTPOT
James Martin's warming beef hotpot is a wintry dream come true. The beef is meltingly tender in its red wine sauce and it's all topped with crisp potatoes. There will be no leftovers.

Steps:
- Preheat the oven to 170C/325F/Gas 3.
- Season the beef with salt and freshly ground black pepper. Heat a large casserole dish until very hot then add the oil and a small knob of butter. Fry the beef until browned all over, then remove from the pan and set aside. (You may need to do this in batches.)
- Add the onions and another knob of butter to the pan and fry for 2-3 minutes, or until lightly browned. Add the carrots and cook for a further minute.
- Stir in the flour and cook for 2 minutes. Then gradually add the red wine, stirring until smooth. Add the browned beef back to the pan with the stock, season with salt and freshly ground black pepper and bring to the boil. Stir in the fresh thyme, then arrange the potatoes on top. Dot the surface with the remaining butter.
- Cover with a lid and cook in the oven for one hour or until the potatoes are crisp and golden brown on top.
- Remove the lid and increase the heat to 200C/400F/Gas 6 for 30 minutes. Serve the hotpot with buttered boiled greens and the remaining red wine.

- In a Dutch oven coated with cooking spray, brown pork over medium-high heat. Add ham, green pepper, onion, celery and garlic. Reduce heat to medium; cook for 8-10 minutes or until vegetables are just tender, stirring occasionally. Add the next nine ingredients. Reduce heat; cover and simmer for 20 minutes or until meat is tender. Add spinach and cook until heated through.

Steps:
- Preheat oven to 375°F.
- Heat a little oil in frying pan and brown (only) stew meat along with onions and carrots (to soften slightly); remove from pan.
- Layer sliced potatoes, onion, carrot and meat in a 3 pint casserole, finishing with a layer of potatoes.
- Pour over the stock.
- Brush the potatoes with 1 tbsp melted butter. Cover and bake for 1 hour.
- Remove the hot pot from the oven. Uncover and brush the potatoes again with melted butter or dripping.
- Return to the oven for a further 30 minutes, uncovered, to brown the potatoes.
- Serve garnished with parsley.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Melt butter and cook beef chuck cubes in batches until browned on all sides, about 5 minutes per batch.
- Return all beef chuck to the pot. Add potatoes, mushrooms, onion, carrots, and garlic; cover with beef broth. Stir in Worcestershire sauce, tomato paste, salt, pepper, and rosemary. Close and lock the lid. Select Meat/Stew function according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

- Mix the wine, beef broth, tomato paste water, paprika, cayenne pepper salt, pepper and allspice together in a large bowl. Stir in the uncooked beef chunks. Cover and let marinate in the refrigerator overnight.
- Put potatoes, onion, garlic, baby carrots and jalepeno into the crock pot.
- Pour beef mixture over the vegetables and stir well with a wooden spoon.
- Set on low heat. Let cook for at least 8 hours. The meat should be tender and falling apart.
- Stir in frozen peas approximately 30 minutes before you plan on serving the stew.
- Serve over yellow rice.

- In a skillet, warm oil over medium heat, and saute meat until browned and thoroughly cooked.
- Drain off fat and set aside.
- In the crock pot, whisk together the broth and tomato paste.
- Add all remaining ingredients and meat to the crock pot and stir.
- Cover and cook until meat and veggies are tender (6-8 hours on LOW or 3-4 hours on HIGH).
- Stir well before serving.
