4 ounces beef tenderloin, minced
1 tablespoon all-purpose flour
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1 clove garlic, minced
1/2 medium potato, peeled and grated
1/2 medium sweet yellow onion, minced
Kosher salt and freshly ground black pepper
1 batch Part-Butter/Part-Shortening Easy Pie Dough, recipe follows, chilled
1 large egg whisked with 2 tablespoons water, for the egg wash
2 cups (240 grams) all-purpose flour, cold, plus more for dusting
1 tablespoon sugar
1 teaspoon salt
12 tablespoons (170 grams) unsalted butter, cut into small pieces and chilled in the freezer for 10 minutes
4 tablespoons (50 grams) shortening, chilled in the freezer for 10 minutes
1/2 cup ice water
1 teaspoon lemon juice

Steps:

  • In a mixing bowl, combine the beef, flour and paprika. Stir to combine. Add the thyme, garlic, potato, onion and some salt and pepper. Stir to combine.
  • Divide one portion of the chilled Part-Butter/Part-Shortening Easy Pie Dough into 8 equal pieces. Roll each piece of dough into a round about 3 inches in diameter. You can use a 3-inch round cookie cutter to cut each round and even the edges if you desire. Repeat with the second piece of chilled dough.
  • Preheat the oven to 350 degrees F.
  • Brush each round of dough with the egg wash. Divide the filling among the rounds, piling it in the middle of each round. Bring the sides of the dough up to meet the middle and gently crimp the edges down in the center. Cut 3 small slits into each hand pie to allow steam to escape. Brush the top of the pies with egg wash.
  • Bake until golden brown, about 30 minutes. Allow to cool slightly before serving.
  • In the bowl of a food processor fitted with the blade attachment, pulse together the flour, sugar, salt, butter and shortening until the mixture resembles cornmeal but there are still pea-sized chunks of fat.
  • In a small bowl, stir together the ice water and lemon juice. Slowly add the liquid to the flour mixture, pulsing, until the dough just comes together. Squeeze a small piece of dough between your thumb and index finger to make sure it holds its shape.
  • Turn the dough out onto a lightly floured surface and divide it in half. Gently turn over each piece of dough a few times so that any dry bits are incorporated. Form each piece into a loose disk, cover the dough with plastic wrap and let it rest in the refrigerator for at least 20 minutes.

2 pound stewing beef
2 tablespoon olive oil
¼ cup all-purpose flour
1 teaspoon salt (or to taste)
1 teaspoon pepper (or to taste)
1 large onion (chopped)
4 cloves garlic (minced)
2 stalks celery (chopped)
2 large carrots (cut into 1 inch cubes)
2 tablespoon all-purpose flour
1 cup red wine (or Guinness)
2 cup beef broth
2 sprigs fresh thyme
2 bay leaves
6 slices bacon (chopped)
1 pound mushrooms (sliced)
1 sheet puff pastry
1 egg yolk (for brushing pie)

Steps:

  • Season beef with salt and pepper then toss with the 1/4 cup of flour. Sear in an Instant Pot with 1 tbsp of olive oil until fully browned on all sides. You will have to do this in a couple batches. Transfer to a plate.
  • Saute the sauteables and cook the beef: Add the remaining tbsp of olive oil and heat. Add the onion, garlic, celery, carrots to the pot and saute for 5 minutes until the onion softens. Sprinkle the 2 tbsp of flour over the veggies and stir. Add the wine or beer and beef broth and stir until the flour dissolves. Add the thyme, bay leaves, and cooked beef back to the instant pot. Close the lid (follow the manufacturer's guide for instructions on how to close the instant pot lid). Cook on high pressure for 35 minutes until the beef is fork tender. After the pressure cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick release cycle is complete. Careful of any remaining steam, unlock and remove the lid.
  • Fry the bacon and mushrooms: In another skillet, fry the bacon, drain some of the fat then add the mushrooms and saute for 5 minutes. Add the bacon and mushrooms to the instant pot. Stir everything together. Remove the bay leaves and thyme. Season with salt and pepper as needed. Switch the instant pot to the saute setting again (do not put the lid on) and simmer for 10 minutes until mushrooms are tender.
  • Preheat oven to 400 F degrees.
  • Finish the dish: Pour the stew into a 9x13-inch casserole dish, then top with a sheet puff pastry. You might need 2 sheets, depends on how big they are. Brush with egg yolk. Bake for 30 to 35 minutes until golden brown. Rest for 5 minutes before serving.

1 1/4 cups unbleached all-purpose flour (plus extra for the work surface)
1/2 teaspoon table salt
3 Tablespoons vegetable shortening
5 Tablespoons butter (cut into 1/4-inch pieces and chilled)
4-6 Tablespoons ice water
2 lbs. chuck steak (cut into 1/2- to 1-inch cubes)
2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 Tablespoons olive oil
1 onion (chopped)
3 cloves garlic (minced)
1 celery rib (chopped)
3-4 carrots (peeled and chopped into bite-size chunks)
1 yukon gold potato (unpeeled, washed and diced)
8 ounces button mushrooms (sliced)
2 Tablespoons fresh rosemary (chopped)
1 teaspoon dried oregano
1 teaspoon dried thyme
3 cups beef broth
1/3 cup flour
1 egg (beaten)

Steps:

  • Prepare pie crust by stirring together the flour and salt. Using a pastry cutter or a food processor, cut the shortening and butter into the flour until the mixture resembles coarse crumbs.
  • Sprinkle 2 tablespoons of the ice water over the flour mixture and gently stir it in using a fork, then repeat with the remaining water, adding 2 tablespoons at a time, just until the dough starts to come together. Use your hands to press the dough into a ball, then flatten into a disc and wrap tightly in plastic wrap and refrigerate for at least 1 hour.
  • Season the meat with the salt and pepper. In a large skillet or dutch oven over medium-high heat, add the oil. When the oil is hot, add the seasoned meat, working in batches if necessary, and searing until nicely browned on all sides, about 8 to 10 minutes. Remove from skillet and set aside.
  • Reduce the heat to medium and add another tablespoon of oil if the skillet is looking dry, then add the onions and garlic and sauté for 2 minutes.
  • Add the carrots, celery and potato and cook for another 6 to 8 minutes, until the vegetables are starting to soften a bit and the onions look translucent. Add the mushrooms and continue to cook 2-3 minutes more.
  • Add the chopped rosemary, thyme, and oregano and cook for another 30 seconds, then sprinkle the flour over the vegetables and stir to coat everything evenly. Cook for another 2-3 minutes.
  • Stir in the beef broth until flour is completely dissolved, then add the seared beef back to the vegetables and gravy. Cover the skillet or dutch oven with a lid and reduce the heat to low. Simmer gently for 1 1/2-2 hours or until the meat is tender, stirring occasionally. Allow the chilled pie crust dough to sit on the counter for 10 minutes before rolling it out to assemble the pie.
  • Pour the beef stew filling into a deep pie dish until 3/4 full. Any remaining stew can be used to make individual size pies or eaten plain.
  • Roll out the pie crust on a floured surface, then transfer it to cover the beef filling, making sure there is some overhand so the crust doesn't shrink entirely away from the side of the pie dish while baking.
  • Decorate the pie with leaves cut from scraps of pie crust, if desired and brush the entire crust with the beaten egg. Cut slits in the top of the pie to allow steam to escape, then bake for 25 to 30 minutes in a 400 degree oven until the filling is bubbling and the crust is golden brown.
  • Remove from the oven and allow to cool for 30 minutes before serving.

1.5 kg (3lbs) chuck steak (sliced into 2cm/1 inch chunks)
2 onions (finely chopped)
4 celery sticks (finely chopped)
2 carrots (peeled and finely chopped)
1 sprigs fresh rosemary
4 garlic cloves (crushed/minced)
2 tbsp flour
400 g (14oz) chopped tomatoes
2 cups beef stock
2 tsp mustard
1 tsp sugar
salt and pepper (to taste )
400 g (14oz) frozen puff pastry (thawed)
1 egg (beaten)

Steps:

  • Heat a large pot or Dutch oven over high heat and add a few tablespoons of olive oil.
  • Dry the meat with paper towels then add to the pot. Cook in batches until the beef is browned all over. Remove from the pot and set aside.
  • In the same pot, add the onion, celery and carrots. Cook for 5-7 minutes until the vegetables start to soften and turn golden brown. Add the garlic and rosemary and cook until fragrant.
  • Stir the flour into the vegetables then add the meat back into the pot and combine.
  • Pour in the tomatoes, beef stock, mustard and sugar. Season with salt and pepper, stir to combine then cover with a lid.
  • Reduce the heat and allow to simmer for 90 minutes or until the beef is almost completely soft. Remove the lid and allow to simmer for another 30 minutes until the beef is very tender and the sauce has reduced and thickened slightly.
  • Preheat the oven to 180°C/350°F.
  • Transfer the stew to a deep casserole dish. If there's a lot of sauce, feel free to only use half of it.
  • Top the pie with a sheet of puff pastry. Crimp the edges, make a few slits into the top of the pastry to act as vents and brush with beaten egg.
  • Place in the preheated oven and bake for 20-25 minutes until the pastry is golden brown, puffed and cooked through.
  • Remove from the oven, allow to rest for 10 minutes then serve.

  • In a large resealable plastic bag, combine the flour, salt, pepper and paprika; add beef, a few pieces at a time. 2 medium purpletop turnips, peeled, cut in irregular 3/4-inch chunks 1/2 cup frozen green peas

2 carrots cut in irregular 3/4-inch chunks
3 pounds lean stewing beef (rump, chuck roast, sirloin tip, top or bottom round)
4 ounces lean bacon
2 medium carrots, minced
1 onion, minced
1 stalk celery, minced
6 tablespoons clarified butter
6 tablespoons flour
Pinch cayenne
3 cups red wine (chianti or burgundy are good choices)
6 cups low salt beef bouillon (or other brown stock) (don't use bouillon made from cubes)
3 tablespoons tomato paste
2 garlic cloves, minced
Herbs tied in cheesecloth:3 to 4 parsley sprigs, 2 bay leaves, 2 teaspoons thyme
4 cups sifted all-purpose flour
2 sticks cold butter
1/2 cup vegetable shortening
3/4 teaspoon salt
3/4 cup ice water

Steps:

  • Procedure: Filling is made in 2 parts and then combined: the stew and the vegetables. The crust is partially baked before filling.
  • The vegetables: Blanche the turnips and then the carrot chunks in rapidly boiling salted water until just tender, removing the vegetables from the water and immediately cooling them under running water to stop the cooking. Microwave the peas in a 1/2 cup of water for 20 seconds or pour some of the hot blanching water over them and then drain. Mix the vegetables together. This can also be done ahead, the same day as the pie will be served or even the night before, but don't freeze the vegetables.
  • The stew: Cut beef into 1-inch chunks and dry thoroughly with a paper towel. Cut the bacon into 1-inch pieces and brown slowly in the casserole. Remove the bacon and set aside, and turn the heat to high. Brown the beef quickly in the bacon fat. Add olive oil if necessary. Remove the beef from the casserole and set aside with the bacon. Add the minced carrots, onions and celery and brown on medium high heat in the remaining fat. Remove the vegetables from the pot and add to the reserved beef and bacon. Add the clarified butter to the pot and sprinkle in the flour. Stirring constantly, brown the flour on medium high heat until it is a dark, nut brown. Return the bacon, beef and vegetables to the pot. Stir to coat them with the browned flour and cook for 1 minute on medium-high heat. Lower the heat, add the cayenne, wine, bouillon or stock, the tomato paste, the garlic and the herb bouquet tied in a cheesecloth. Stir to mix well and simmer for at least 3, preferably 4, hours, stirring occasionally. When done the meat should be very tender. Skim fat if necessary. Check for seasoning. Remove the meat from the gravy with a slotted spoon and set aside. Remove and discard the herb bouquet. Reserve the gravy in a separate container. The stew may be prepared to this point a 1 or 2 days ahead and kept refrigerated. It can also be frozen after preparation to be kept longer.
  • The crust: Preheat oven to 400 degrees Process the flour, butter, shortening, and salt until mixture is like coarse cornmeal. Add the ice water and pulse processor a few times until dough begins to clump. Do not overprocess. Scrape dough onto a board, divide in half and put each half in a plastic bag. Working through the bag, quickly press the dough into a ball. Refrigerate dough for at least 1 hour. (May be frozen at this point for future use.) Roll 1 of the balls out to about 1/8-inch thick. Butter the tart pans and line with the dough. Roll the other ball of dough out and cut circular pieces about 1/8-inch larger than the individual tart pans (or 3/8-inch if using the single 9 or 10-inch pan). The circles for the top crust of the pot pie are cut larger because there will be shrinkage when it is baked. The edges can be crimped with a fork if desired. Leftover dough can be cut into decorative shapes for the top crust.
  • Butter pieces of aluminum foil and line the crust in the tart pans with them. Fill the foil with dried beans or rice to a depth of about 1-inch -- this will keep the crust from puffing when it is baked empty. Place the top crust circles on a cookie sheet and prick with a fork. Bake for about 10 minutes. Crust should just start to brown. The top pieces will likely take a little less time. Remove the aluminum foil and return the beans or rice to their container. Leave the tart pan rings in place. The crust can be made up to 4 hours before the dish is assembled and served.
  • Assembly: Preheat oven to 400 degrees. If you have made the stew and gravy ahead of time, warm them separately on the stove until they just begin to simmer. Add gravy back to the stew a little at a time until it is liquid enough but not too soupy. Stir well to mix. The proportion will vary according to the cut of meat used and the actual cooking time. Once you've made it a couple of times you'll know how you like it. If there is leftover gravy, keep it warm on the stove while you bake the pie. Mix the vegetables into the stew just before you assemble the pie. Spoon the filling mixture into the partially baked pie shell. It should fill it right to the top. There may be some filling mixture left over. This is not a bad thing. Bake for about 8 to10 minutes, until the crust starts to look quite brown at the edges and the filling is bubbling. Allow to rest for 5 to 10 minutes before serving. Carefully remove rings from the pans and slide the pies onto warmed plates. If there is remaining gravy, serve on the side with the pie. Garnish with chopped parsley.

1/2 cup all-purpose flour
1 yellow onion (diced)

2 sprigs fresh thyme
1 sprig fresh rosemary
1 teaspoon smoked paprika
1 bay leaf

1 pound yellow potatoes (quartered)
1 tablespoon Worcestershire sauce
1 (12 ounce) can or bottle pale ale, amber ale, or light brown ale, porter or stout
2 cups beef broth
2 pie crusts
1 egg yolk

Steps:

  • In a large dutch oven or sauce pan, heat 2 tablespoons of olive or avocado oil.
  • In a bowl, toss the meat in 1/4 cup of flour to coat.
  • Add diced onion, carrots, and celery to dutch oven. Saute for a few minutes until veggies begin to soften and the onion is translucent.
  • Next, add the meat to the pan and saute until browned on all sides.
  • Add in garlic, paprika, salt, pepper, thyme, rosemary, bay leaves and tomato paste.
  • Then, add the potatoes to the pot and pour in the Worcestershire sauce, beer and beef broth, scraping the bottom of the pan to get the browned bits off.
  • Heat, covered, over medium-low heat for 45-50 minutes or until the potatoes are tender.
  • After the stew has cooked through, make a slurry with 3 tablespoons of flour and 1/2 cup of cold water in a separate bowl, then pour into the stew to thicken it. Stir and turn off the heat.
  • Preheat the oven to 425 degrees F, unroll the refrigerated pie crust and press into a 9-inch pie pan.
  • Fill your pie dish with the stew filling, roll out the other pie crust and cover the pie. Brush the top crust with egg yolk, cut a couple of slits in the center of the crust and bake for 25-30 minutes until golden.
  • Let rest for a few minutes, then enjoy!

Steps:

  • Pre-heat oven to 350°F.
  • In a deep glass baking dish (either round or square, Corning or glass), layer meat, potato and onion, sprinkling flour over each layer.
  • Salt and pepper each layer. Pour water slowly over layers and top with rolled out crust. Roll edges of crust under around the edge and flute to seal edges to pan. Vent with knife several times.
  • Bake at 350° F for about one hour until water bubbles and gravy have formed. Pierce with a cake tester through vents for doneness of potatoes.

3 tbsp sunflower oil
1kg braising steak, diced
2 onions, roughly chopped
3 tbsp plain flour
1 tbsp tomato ketchup
2 beef stock cubes mixed with 600ml boiling water
375g sheet of ready-rolled puff pastry
1 egg yolk, beaten

Steps:

  • To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.
  • Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.
  • To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

This recipe was created by trying to copy a steak pie made at the 'Butt and Ben' Scottish Bakery in Pickering, Ontario. My husband says it's better! You could also add 2 calf kidneys (well washed and de-veined and cut into bite sized pieces) to make Steak and Kidney Pie!

1 tablespoon vegetable oil
1 pound cubed beef stew meat
1 large onion, chopped
1 (1 ounce) package dry mushroom gravy mix
1 cup water
1 teaspoon Worcestershire sauce
1 pinch salt and pepper to taste
1 sheet frozen puff pastry, thawed
1 egg
1 tablespoon water

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add beef stew meat, and cook until browned on the outside. Add the onion; cook and stir until tender, about 5 minutes. Stir in the mushroom gravy mix and 1 cup of water. Season with Worcestershire sauce, salt, and pepper. Turn heat to low, and simmer for 20 to 30 minutes.
  • Preheat the oven to 400 degrees F (200 degrees C). Transfer the beef mixture to a casserole dish. Roll out the puff pastry to cover the top of the casserole dish. Press edges onto the rim of the dish to seal. Whisk together the egg and 1 tablespoon of water in a small cup using a fork. Brush over the top of the pastry.
  • Bake for 20 minutes in the preheated oven, until the pastry is puffed and golden brown.

900g stewing steak, diced
25g flour, plus extra for dusting
100g butter
2 onions roughly chopped
2 cloves of garlic, roughly chopped
2 medium carrots, roughly chopped
150g button mushrooms
2 sprigs fresh thyme
400ml good-quality ale
500ml beef stock
Salt and pepper
1 egg, beaten for glazing
300g ready-made rolled puff pastry

Steps:

  • Preheat the oven to 220°C/428°F/Gas Mark 7.
  • Pour flour into a bowl and season well. Coat the meat with the seasoned flour.
  • Heat half the butter in a heated pan and add the meat. Sear all over until golden brown.
  • Add the vegetables, herbs, ale and stock. Bring to a simmer, then cover with a lid and gently simmer for 1 hr. When cooked, season, add the remaining butter and pour into an ovenproof serving dish.
  • Brush the edge of the dish with the beaten egg. Roll out the pastry using as little flour as possible and place over the dish. Pinch the edges of the dish so that the pastry will stick to it and trim off any remaining pieces of pastry from around the edge. Brush the pastry top thoroughly with the remaining beaten egg and place on a baking tray.
  • Bake in the oven for 20-30 mins until the pastry is golden brown on top.

Entered for ZWT. By Australian chef Brigitte Hafner. Very English dish, but updated. Gravy beef is beef shin, also called diced beef; it is tougher and less expensive than chuck beef. If you can't find gravy beef, you can use stew meat. If you feel rich, indulge in blade steak. If you opt for refrigerated pie crusts, the secret is to brush it first with egg white and refrigerate for 10 minutes before putting in the filling (it keeps the pie crust from getting soggy). Most of the preparation time is for preparing the pie crust after the filling has completed, allowing the filling to cool off.

2 tablespoons olive oil, for browning beef

1 garlic clove, sliced
salt and pepper, to taste
50 g butter (3 1/2 tablespoons)
2 tablespoons flour
500 ml red wine (2 cups plus 1 tablespoon)
1 sprig rosemary
1 small piece orange rind
1 bay leaf
15 g dried porcini mushrooms, soaked in 1 cup water (1/2 oz. dried mushrooms) (optional)
400 g mushrooms, sliced (14 oz.)
270 g cold butter (2 sticks plus 3 tablespoons)
360 g flour (1 1/4 lbs., about 2 3/4 cups plus 2 tablespoons)
4 -5 tablespoons cold water
1 egg, separated

Steps:

  • FILLING:.
  • Cut beef into 4cm cubes (1 1/2-inches). Heat a heavy-based pan with two tablespoons of oil and fry the beef until brown all over. Season with salt and pepper and set aside.
  • Meanwhile, heat a casserole pot with the remaining oil and cook the onion and garlic until quite brown, season with salt and pepper and push to one side.
  • Add the butter and flour and cook for a few minutes, stirring.
  • Add the beef, red wine, rosemary, orange rind, bay leaf and porcini mushrooms and liquid. Stir well, bring to the boil and reduce to a simmer.
  • Cover and cook for 1 1/2 hours or until the meat is tender.
  • Add the mushrooms and cook for five more minutes, then leave to cool.
  • PASTRY:.
  • Take the butter out of the fridge half an hour before using.
  • Put the flour on the kitchen bench; chop the butter into small pieces and sprinkle over the flour. Lightly rub the butter into the flour, then make a well in the middle and pour in four tablespoons of the water. Quickly and lightly work the flour and butter together using the heels of your hands by smearing the mixture across the bench - it will come together in lumpy bits. Add a little extra water if the pastry is too dry. Don't overwork this pastry; lightly bring it together - it will look a little speckled - wrap in plastic and refrigerate for 30 minutes.
  • Preheat oven to 180C/350°F.
  • Take a 23-26cm round pie dish (9-10 inches) and grease with a little butter.
  • Roll out half the pastry with a little flour and line the bottom of the dish. Beat the egg white with a fork and brush over the pastry. Return to the fridge for 10 minutes. This will seal the pastry and prevent sogginess.
  • ASSEMBLE:.
  • Pour the mixture into the pie case and trim the edges 2cm (3/4 inch) from the filling.
  • Roll out the remaining pastry to about half a centimeter (1/4 inch) and lay on top of the pie. Cut a slit in the middle to allow steam to escape.
  • Beat the yolk with a tablespoon of water and brush over the top of the pastry. Bake about 20 minutes or until the pastry is golden brown and serve.

3 cups beef broth
3 cups beef (cubed; leftovers if you have them)
1 1/2 cups green peas and carrots (frozen; cooked and drained)
1 tablespoon parsley (dried)
1 batch pie pastry (for ​a 1-crust pie)
2 tablespoons evaporated milk (or regular milk; more or less as needed)

Steps:

  • Gather the ingredients.
  • In a medium saucepan, cook onion in butter until onion is tender.
  • Stir in flour and salt and cook, stirring constantly, for about 2 minutes.
  • Slowly stir in beef broth. Continue to cook, stirring constantly, until thick and bubbly.
  • Add leftover beef, peas, carrots, and parsley; heat through.
  • Taste and adjust seasonings, adding more salt if necessary.
  • Preheat oven to 450 F. Pour beef mixture into a 2-quart casserole dish.
  • Roll out pastry dough to about 1/2-inch larger than casserole dish top.
  • Carefully place pastry over hot beef mixture.
  • Cut several slits in the top for steam to escape, turn edge under, and crimp all around.
  • Brush lightly with milk.
  • Bake for 20 to 25 minutes.

Steak Pie - Really Easy Recipe with Puff Pastry and Rich Gravy image

This Steak Pie recipe has everything you need in a comfort food pie. Tasty home cooked meat, delicious gravy and light fluffy pastry topping.

1 tbsp Oil (See Note 1.)
700 g Stewing beef (See Note 2.)
2 Large onion (Peeled and chopped into big chunks (See Note 3).)
4 Carrots (Peeled and chopped (See note 4).)
50 g Plain flour
2 tbsp Tomato puree
Salt and black pepper
600 ml Beef stock ((See note 5))
320 g Puff pastry sheet ((See note 6))
1 Egg (Beaten)

Steps:

  • Heat your oil in a large frying pan or saucepan and add the beef. Cook for about 5 - 10 minutes until just starting to turn brown.
  • Add in the vegetables and cook for a further 5 minutes until they start to soften.
  • Add the flour and stir through everything, cook for 5 minutes.
  • Add the tomato puree, salt and pepper and stock. Pop the lid on and cook on a very low heat for about 2 hours or until the beef is very soft.
  • NB: Keep an eye on the beef as it cooked, stir it well occassionally and if it looks like there is not enough liquid, don't be afraid to add a little more stock or water.
  • Spoon into a pie dish and leave to cool for at least 30 minutes if you have time.
  • Smooth the pastry over the top of the filling.
  • Decorate the pie with cut out shapes if you feel that way inclined and brush with the beaten egg.
  • When you are ready to bake the pie, preheat the oven to 220C and bake for about 30 minutes until the filling is hot throughout and the pastry is crisp and golden.
