MARINATED BEEF SHORT RIBS

3 3/4 pounds beef short ribs, cut in 1/2-inch slices with bones
Salt and freshly ground black pepper
1/2 cup water
2 tablespoons fresh lemon juice
1 teaspoon dried red pepper flakes
1/4 cup hoisin sauce
3 tablespoons plum sauce
2 tablespoons oyster sauce
2 tablespoons soy sauce
1 tablespoon peanut oil
1 tablespoon sesame oil
1 tablespoon honey
1 tablespoon chili paste
1 tablespoon pureed garlic
1 tablespoon freshly grated ginger
1 bunch cilantro, stems trimmed and roughly chopped
1 bunch scallions, finely chopped

Steps:

  • Preheat oven to 350F.
  • Season ribs with salt and pepper. Lay across a rack in a roasting pan or baking sheet and bake 10 minutes. In a small bowl, combine water, lemon juice, and red pepper flakes. Brush over top side of ribs and bake an additional 10 minutes. Turn, brush again, and bake 10 minutes more. Set aside to cool.
  • Combine marinade ingredients in a large bowl. Add roasted ribs and toss to coat. Cover with plastic wrap and refrigerate a minimum of 4 hours or as long as 24.
  • Preheat grill or broiler. Grill ribs for 2 minutes per side and serve immediately.

2 slabs BBQ beef ribs
2 tablespoons kosher salt
1 1/2 tablespoons light brown sugar
1 tablespoon paprika
1 tablespoon ancho chile powder
1 tablespoon ground cumin
2 teaspoons freshly ground black pepper
1/2 cup pure maple syrup
1/4 cup apple juice
3 tablespoons light brown sugar
3 tablespoons apple cider vinegar
3 tablespoons Dijon mustard
1 teaspoon ancho chile powder
Pinch of cayenne
Kosher salt and freshly ground black pepper

Steps:

  • Prepare the grill for indirect heat using hickory and charcoal and heat to 250 degrees F.
  • Place the ribs on a clean cutting board and pull off the membrane, the thin fatty skin that lines the underside of the ribs. Trim the ribs of excess fat and meat.
  • For the rub: Whisk together 2 tablespoons salt, brown sugar, paprika, chile powder, cumin and pepper. Rub the beef ribs with the seasoning and place on a sheet tray, cover with plastic wrap, and if time, let marinate in the refrigerator for 8 hours or overnight.
  • For the glaze: Add the maple syrup, apple juice, brown sugar, vinegar, mustard, chile powder, cayenne, salt and pepper to a medium saucepan and bring to a simmer. Cook until syrupy, about 8 minutes, stirring with a wooden spoon on occasion.
  • Remove the ribs from the refrigerator. Place the ribs meatier-side-down on the grill away from the coals. Cook the beef 3 hours, adding more coals as needed. Turn and cook until the ribs "bend" and the meat easily separates from the bone using a fork, about 45 minutes more. Brush on the glaze to the ribs and cook for another 5 minutes. Remove and slice into individual ribs.

This is good on grilled meats - chicken, beef - however, we always use it for pork ribs. I omit the oil and have never had a problem but I know marinade is technically supposed to have oil so I put it in the recipie. I don't really know where this recipe comes from. Can be used for up to 10 lbs of meat. Can be stored in the refrigerator if you don't use it all.

I make a prime rib roast every year for Christmas. About 2 years ago I wanted to try something new so I whipped this recipe together on a whim and its been a tradition ever since.

1/2 small white onion
6 garlic cloves
2 tablespoons rosemary (fresh)
2 tablespoons thyme (fresh)
4 tablespoons Worcestershire sauce

Steps:

  • Place all ingredients in a food processor and pulse until ingredients are minced and combined.
  • Note: I usually rub this marinade over the roast the day before I cook it. That way it marinates all day and the night before cooking. Enjoy!

2 beef ribeye steaks (about 1 inch thick and 12 ounces each)
1/3 cup hot water
3 tablespoons finely chopped onion
2 tablespoons red wine vinegar
2 tablespoons olive oil
2 tablespoons soy sauce
1 teaspoon beef bouillon granules
1 garlic clove, minced
1/2 teaspoon paprika
1/2 teaspoon coarsely ground pepper

Steps:

  • Pierce both sides of steaks several times with a fork. In a small bowl, combine the remaining ingredients. Remove 1/2 cup marinade to another bowl; cover and refrigerate until serving. Pour remaining marinade into a large shallow dish; add the steaks. Turn to coat; cover and refrigerate overnight. , Drain and discard marinade. Grill steaks, covered, over medium heat for 5-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°).   • If your butcher has not already done so, remove the thin papery membrane from the bone-side of the ribs by working the tip of a butter knife underneath the membrane over a middle bone.
  • Put the ribs in a nonreactive pan large enough to hold them. You can also use a large resealable plastic bag.
  • Make the marinade: Combine the wine, olive oil, Worcestershire sauce, mustard, salt and pepper in a bowl and whisk to combine. Stir in the garlic, onion and bay leaf.
