2 pounds beef chuck roast, trimmed and cut into 8 pieces
1 tablespoon Italian seasoning
Kosher salt and freshly ground pepper
8 ounces cremini mushrooms, sliced
5 cloves garlic
1 12-ounce jar pepperoncini, drained and sliced, plus 1/3 cup brine
1 14-ounce can cherry tomatoes
3/4 cup low-sodium beef broth
1 cup quick-cooking polenta
1/2 cup grated parmesan cheese
2 tablespoons unsalted butter

Steps:

  • Toss the beef with the Italian seasoning, 1/2 teaspoon salt and a few grinds of pepper. Scatter the mushrooms and garlic in a 6- to 8-quart slow cooker; top with the beef. Add the pepperoncini, brine, tomatoes and beef broth. Cover and cook on low until the beef is tender, 8 hours.
  • Uncover the slow cooker and let stand 5 minutes. Spoon off any fat from the top and discard. Shred the beef with 2 forks.
  • Meanwhile, cook the polenta as the label directs. Remove from the heat and stir in the parmesan and butter until smooth; season with salt and pepper. Divide among bowls and top with the beef mixture.

4 tablespoons unsalted butter
3 tablespoons olive oil
3/4 cup finely diced carrots
3/4 cup finely diced celery
4 garlic cloves, minced
1 large yellow onion, finely diced
Kosher salt and freshly ground black pepper
2 1/2 pounds bone-in short ribs
1/4 cup pancetta or bacon, diced (about 2 ounces)
1 cup dry white wine
1 1/2 cups whole milk
One 28-ounce can diced tomatoes
2 cups whole milk
2 cups chicken broth
1 cup coarse-ground polenta
1/2 cup grated Pecorino Romano, plus more for garnish
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
Olive oil, for garnish

Steps:

  • For the short rib ragu: Place a large saucepan over medium heat and melt the butter in the oil. Add the carrot, celery, garlic and onion with a good pinch of salt and saute for 5 minutes, stirring often. Increase the heat to high, push the vegetables to the outer edges of the pan and add the short ribs and pancetta. Brown the short ribs on one side, about 4 minutes, then reduce the heat to medium and turn them a quarter turn. Continue to cook, turning them as they brown, until thoroughly brown on all sides but not burnt (don't worry about crispy bits in the pan), about 15 minutes.
  • Pour the white wine into the saucepan. With a wooden spoon, scrape up all the brown bits stuck to the bottom of the pan. Push the meat all around to make sure you scrape it all off. Cook for 2 to 3 minutes to let some of the alcohol cook off. Add the milk, diced tomatoes (with liquid), 1 teaspoon salt and a good grinding of pepper. Bring to a boil, then lower to the lowest heat and let simmer very slowly, half-covered and stirring from time to time, until the meat is very tender, 2 1/2 to 3 hours; the sauce should be more oil- than water-based and thick like oatmeal. Transfer the short ribs to a plate to cool.
  • When cool enough to handle, remove the meat from the bones and shred; discard any excess fat and cartilage. Return the meat to the pan. Season to taste and set aside.
  • For the polenta: Combine the milk, chicken broth and 1 cup water in a pot. Bring to a simmer over high heat. Add the polenta gradually, whisking constantly. When the mixture starts to boil rapidly, reduce the heat to medium low, at a steady but not too vigorous bubble, and switch to a wooden spoon. Cook, stirring often, until thick, about 15 minutes. Stir in the Pecorino Romano and butter. Season with 1 1/2 teaspoons salt and plenty of freshly ground pepper.
  • To serve, put the polenta and ragu in two separate presentation-ready pots. At the table, pour the hot polenta onto a large serving platter or board. Next, pour the hot ragu over the center of the polenta. Finish with a dramatic drizzle of olive oil and a cloud of grated pecorino.

3 cups boiling water
1 (10 ounce) package frozen peas
1 (16 ounce) can tomato sauce

3 sprigs parsley

1/2 teaspoon marjoram
1/2 teaspoon thyme
1/2 teaspoon rosemary
4 medium carrots, cut in 1 inch slices
4 small onions, cut in half

Steps:

  • Shake beef with flour and salt in a paper bag.
  • Brown in fat, or oil.
  • Place in a 4 quart dutch oven and cover with water and tomatoe sauce.
  • Simmer 2 hours.
  • Place garlic and all the herbs on a square of cheesecloth and tie tightly. Add to the dutch oven along with the potatoes, celery, and peas.
  • Melt butter with sugar in skillet, add onions and carrots. Cook on medium heat stirring until well glazed.
  • Add to meat mixture.
  • Cook until the vegies are tender; check every 30 minutes however this could take 1 -2 hours.
  • Remove herb bag.
  • Place in refridgerator overnight.
  • Reheat in oven at 350 until heated through about 20-30 minutes.

2 lbs round steaks or 2 lbs other lean beef, cut in 3/4-inch cubes
2 cups chopped onions
5 garlic cloves, minced
2 tablespoons chopped fresh parsley or 2 teaspoons dried parsley
1 tablespoon grated orange zest
1 tablespoon chopped fresh rosemary or 1 teaspoon dried rosemary
2 bay leaves
1 teaspoon cinnamon
1/2 teaspoon salt
2 cups sliced fresh mushrooms
1 cup sliced green bell pepper

Steps:

  • Heat the margarine in a large non-stick skillet.
  • Brown the beef cubes on all sides over high heat; transfer to a large pot or Dutch oven.
  • Lower the heat under the skillet and add the onion and garlic; stir and cook about 5 minutes.
  • Transfer to the large pot.
  • Add 1/2 cup water, the parsley, orange zest, rosemary, bay leaves, cinnamon, and salt to the large pot.
  • Cover and simmer 1-1/2 hours, or until the meat is tender.
  • Add water if the mixture becomes dry.
  • Remove the bay leaves.

2 cups chopped onions
2 garlic cloves, minced
2 tablespoons butter or 2 tablespoons margarine
2 lbs boneless round steak, trimmed of fat and cubed
reserved tomato juice, plus water to make 1 cup
2 bay leaves
pepper
2 cups whole baby carrots
2 cups sliced mushrooms
1 (14 ounce) can stewed tomatoes, drained and juice reserved
1 medium green pepper, slivered
paprika
seasoning salt
1/3 cup water
2 tablespoons flour

Steps:

  • Sauté onion and garlic in margarine in large frying pan until onion is soft and golden. Turn into ungreased 3 quart casserole.
  • Add beef. Add tomato juice mixture, bay leaves and pepper. Stir. Cover. Bake in 325F oven for 1 1/2 hours.
  • Add next 6 ingredients. Stir. Cover. Bake for about 1 hour until beef is very tender. Remove and discard bay leaves.
  • Stir water into flour in small cup until smooth. Gradually stir into beef mixture. Cover. Bake for 15 minutes until bubbling and thickened.
  • Makes 10 cups.

1.2kg beef shin, cut into chunks
4-5 tbsp olive oil
2 onions, finely chopped
3 carrots, finely chopped
4 celery sticks, finely chopped
4 garlic cloves, sliced
3 tbsp tomato purée
400ml red wine
2 rosemary sprigs
2 bay leaves
2 x 400g cans chopped tomatoes
500ml beef stock
parmesan, grated, and pappardelle (see 'Goes well with', below), to serve

Steps:

  • Heat the oven to 160C/140C fan/gas 3 and season the beef all over. Heat 1 tbsp oil in a flameproof casserole over a medium-high heat and brown the beef until dark, about 15 mins, in batches if you need to, using 1 tbsp oil for each batch. Drain the beef in a colander to remove the fat while you cook the rest.
  • Wipe out the pan with kitchen paper, then add about 2 tbsp oil, the onions, carrots, celery and garlic with a pinch of salt and cook for 8-10 mins over a low-medium heat. Stir in the tomato purée and cook for a further 3 mins. Add the wine, herbs, tomatoes and stock, season and bring to the boil, stir the beef back into the sauce and reduce to a simmer. Cover and put in the oven for 2 hrs 30 mins, then remove the lid, stir and put back in the oven, uncovered, for 30 mins. Stir or use a fork to roughly shred the beef, and season. Serve now, or chill until serving - it tastes better if made a day ahead.
  • When ready to serve, gently reheat the ragout over a medium heat. Cook the pasta in a large pan of salted water for 3 mins, drain then tip into the ragout, toss together with some of the parmesan and leave for 1 min. Ladle the pasta into bowls, scatter over the remaining parmesan and serve.

1 3/4 cups vegetable broth or 1 3/4 cups chicken broth
1/4 teaspoon dry mustard
1 pinch cayenne powder
1 cup yellow cornmeal
1 large leek, trimmed, halved and rinsed well
2 cups small cauliflower florets
1 cup baby carrots, halved lenghtwise
8 ounces baby bella mushrooms or 8 ounces white mushrooms
4 garlic cloves, coarsely chopped
2 tablespoons olive oil
1 cup fresh corn or 1 cup frozen corn
roma tomato, chopped
1/4 cup thinly sliced basil leaves
1 tablespoon fresh marjoram
1 tablespoon fresh thyme

Steps:

  • For the polenta:Coat a 8 in glass baking dish with cooking spray. In a large saucepan combine 2 cups water with broth, mustard and cayenne, bring to boiling. Reduce heat to medium and whisk in cornmeal. Reduce heat to medium low, cover and cook 5 minutes or until thickened, stirring occasionally. Remove from heat, pour into baking dish, set aside to get firm.
  • For the ragout: Preheat oven to 425 degrees. Cut off and discard dark green top from the leek, cut it into 1 inch slices and put in a large bow. Add cauliflower, carrots, mushrooms and garlic, drizzle with oil and toss to coat. Spread vegetable in a large roasting pan. Roast for 8 minutes.
  • Remove pan from oven and stir in corn and tomatoes. Put back in the oven for 20-25 minutes or until the vegetables are tender. Remove from oven and put vegeetables and juices in a large dutch oven.
  • Put dutch oven over medium heat. Cook vegetables for 5-10 minutes or until thickened. Stir in basil, majoram and thyme.
  • Meanwhile preheat broiler with top rack 4-6 inches from heat source. Line a baking sheet with foil and coat with cooking spray. Cut polenta into 12 squares and place on baking sheet. Broil 5-8 minutes or until lightly browned.
  • To serve; place 2 polenta squares on each plate and top with ragout.
