HAMBURGER BEEF JERKY
THE BEST beef jerky recipe. I have made a ton of recipes out of all kinds of things. Roasts, steaks, etc. But the only stuff I get asked for is this stuff. It is so cheap and so versatile.

Steps:
- Mix all spices with ground beef EXCEPT Worcestershire, liquid smoke and ketchup.
- You need to really get your hands in to mix it well.
- Press into strips with a jerky gun.
- Mix Worcestershire, liquid smoke and ketchup in a shallow dish.
- Coat strips with sauce.
- Place on trays to dry.
- Dry according to your dehydrator manufacturers instructions.
- Other flavors as follows:.
- Hot and spicy - mix Louisiana hot sauce with water to thin a bit. Coat strips and dry.
- BBQ - thin your favorite bottled bbq sauce with water. Coat strips and dry.
- Teriyaki - thin bottled teriyaki sauce with soya sauce. Coat strips and dry.

HOMEMADE BEEF JERKY
This is excellent beef jerky and worth the wait! Less expensive than store bought and tastes better. Double the recipe next time and experiment with different spices you like!

Steps:
- Trim all fat off meat.
- Cut steak in to 4 inch strips.
- The steak should be about 1/2 inch thick.
- It's easier to cut meat partially frozen.
- Pound meat lightly, you don't want it too thin.
- Add all ingredients in a large bowl.
- Mix well.
- Cover and refrigerate overnight (8 hrs).
- Line cookie sheets with tin foil.
- Place steak strips on sheets, don't overlap meat.
- Set oven at lowest temperature. (150-175°F).
- Bake six hours, turning after three hours.
- Jerky is done when meat is dried out, depending on your oven.
- Worth the wait!

- Place all the above ingredients into a large freezer bag or large bowl. Let marinate for 4 to 8 hours in refrigerator. Place pieces of meat on liner pan and 4 inch rack (when using 2 inch rack you can use 3 different levels). Tent the dome during drying out process. Do not let meat touch it will slow down the dehydrating. Dehydrate on power level 4 for about 3 hours. (2 hours and 45 minutes if 1/4 inch thick). Half way through the process I move the beef to different racks. Pat excess moisture with paper towel, cool, and store.
COPYCAT BEEF JERKY

- Trim all visible fat from meat. Partially freeze. Slice with the grain 1/8 to 1/4 inches wide and 4 to 12 inches long.
- Combine all remaining ingredients. Mix with beef strips. Place in a glass dish; cover and refrigerate 8 hours or overnight.
- Lay beef strips in single layers on oven racks with cookie sheets below.
- Bake at 140° to 150° for 10-15 hours or until they are leathery.Or use a
- commercial dehydrator, following manufacturer's directions.
- With a paper towel, blot any drops of oil from the jerky.
- Place in an airtight container and store in the refrigerator or freezer. Yield: 30 servings.

BEST EVER BEEF JERKY
Western Barbecue Beef Jerky! We've been making this for years! I've tried a million recipes, and this is the best! Every year my husband goes deer hunting and every year we make this beef jerky to take on his trip. It's addictive! Your jaw will be aching!!!!!!! (I always use London Broil)

Steps:
- Combine all ingredients (except the meat) until combined.
- Add meat that has been thinly sliced (the meat is easier to slice when its half frozen) and marinade 24-48 hours, refrigerated.
- Remove from marinade, disguarding excess.
- Place onto food dehydrator trays, you'll know its done when it cracks when bent but does not break.
- I have never "over dehydrated" my jerky, I always feel its better over dried than under dried. Mine usually takes about a day and a half to be fully done. Rotate trays for even dehydration.
