This Pakistani beef curry has been a family favorite for years. It's super easy and everyone loves it. Serve over steamed white rice.

6 tablespoons olive oil
1 small onion, diced
1 pound ground beef
2 medium tomatoes, chopped
1 tablespoon curry powder
1 teaspoon paprika
1 teaspoon salt
¾ teaspoon black pepper
½ teaspoon chile powder
¼ teaspoon cayenne pepper
1 (8.5 ounce) can peas, including liquid

Steps:

  • Heat olive oil in a saucepan over medium heat. Add onion; cook and stir until browned, 5 to 8 minutes. Add beef and tomatoes. Cook, uncovered, until tomatoes break down, about 15 minutes.
  • Add curry powder, paprika, salt, pepper, chile powder, and cayenne. Cover and simmer until flavors combine, about 30 minutes. Uncover and stir in peas with liquid. Cook until heated through, 3 to 5 minutes.

This is my favorite traditional side dish for our holiday meals... it may sound a bit on the weird side... but go for it!

1 (16 ounce) can sliced pears, well drained
1 (20 ounce) can pineapple chunks, drained
1 (15 ounce) can apricot halves, drained
2 (15 ounce) cans sliced peaches
1 (4 ounce) jar maraschino cherries
¼ cup packed brown sugar
¼ cup white sugar
3 teaspoons curry powder
2 tablespoons butter

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Drain the fruit and arrange it in an oven-proof casserole dish. Dot the fruit with butter or margarine. Mix the sugars and the curry powder together, sprinkle over the top of the fruit.
  • Bake at 400 degrees F (205 degrees C) until slightly brown, about 15 to 20 minutes.

Steps:

  • Cook onion and green pepper in oil in large frying-pan until onion is transparent. Add ground beef and brown lightly. Pour off drippings. Soak bread in milk. Add eggs, apple, apricots, curry powder, salt and pepper to beef. Add bread and milk. Mix well. Place in 2-quart oven-proof casserole; bake in a moderate oven (350 degrees F. ) for 45 minutes. Serve with curry condiments such as chutney, raisins, shredded coconut and sunflower seeds.

Wonderfully sweet, aromatic curry, Mum's recipe the kids adore!

Number Of Ingredients 17

* 1 kg Round (or chuck or topside) steak
* 3 tablespoons of oil (or 3 tablespoons of melted Ghee)
* 1 onion (chopped)
* 1 apple (peeled and chopped)
* ¼ cup chopped raisins
* 1½ cups (250g) chopped dates
* 2 teaspoons curry powder
* 1 teaspoon of grated lemon rind
* 2 tablespoons of lemon juice
* 1 tablespoon of tomato paste
* 2 teaspoons of worcestershire sauce
* 1 tablespoon fruit chutney
* 1 tablespoon of sugar (preferrably brown or raw)
* 2 cups of beef stock
* 2 tablespoons of cornflour
* 2 tablespoons of water
* 2 cups of cooked (steamed) rice

Steps:

  • Dice the steak into cubes (the thickness of your steak will govern the size of the cubes, but if possible don’t exceed ¾-inch cubes).
  • Brown the meat in the pan with the oil.
  • Add the stage two ingredients, and bring to the boil. Immediately reduce heat and simmer covered for 1½ hours or until the meat is tender (i.e. falls apart).
  • Steam your rice closer to the end of the cooking time. (2 cups rice, 3 cups water, 1/2 teaspoon salt, microwave for 14 mins).
  • Stir in the blended cornflour and water (stage 3 ingredients) and keep stirring over medium heat until the mixture bubbles (not quite boiling but close) and thickens.
  • Serve curry on bed of rice.
  • I always do this in the pressure cooker which produces a far superior result as far as I’m concerned, however if planning to do it on the stovetop you may need more than the 1.5 hours specified, and beware of the liquid levels so as to prevent sticking.

2 tbsp oil
500g diced braising steak
1 tbsp butter
1 large onion , chopped
2 garlic cloves , crushed
1 thumb sized piece of ginger , finely grated
¼ tsp hot chilli powder
1 tsp turmeric
2 tsp ground coriander
3 cardamom pods , crushed
400g can chopped tomatoes
300ml beef stock
1 tsp sugar
2 tsp garam masala
2 tbsp double cream (optional)
½ small bunch coriander , roughly chopped
naan bread or rice, to serve

Steps:

  • Heat one tbsp of the oil in a casserole pot over a medium-high heat. Season the beef and fry in the pot for 5-8 mins, turning with a pair of tongs half way until evenly browned. Set aside on a plate.
  • Heat the remaining oil and butter in the pan and add the onions. Fry gently for 15 mins or until golden brown and caramelised. Add the garlic, ginger, chilli, turmeric, ground coriander and cardamom and fry for two mins. Tip in the tomatoes, stock and sugar and bring to the simmer.
  • Add the beef, put a lid on top of the curry and cook over a low heat for 1 ½ - 2 hrs or until the meat is tender and falling apart. Remove the lid for the last 20 minutes of cooking.
  • Stir through the garam masala and cream (if using) and season to taste. Scatter over the coriander and serve with naan breads or rice.

1 tablespoon reduced-sodium soy sauce
6 tablespoons cold water, divided
2 tablespoons canola oil, divided
1 pound boneless beef sirloin steak, cut into thin strips
1 garlic clove, minced
1/2 teaspoon minced fresh gingerroot
1 small onion, cut into 1/2-inch wedges
1 cup sliced celery
1 medium green pepper, cut into 1-inch pieces
3 medium tomatoes, cut into 1/2-inch wedges
SAUCE:
1 tablespoon cornstarch
1/2 cup cold water
3 tablespoons ketchup
1 tablespoon reduced-sodium soy sauce
1 teaspoon curry powder
Hot cooked rice

Steps:

  • In a large bowl, combine the cornstarch, soy sauce, 2 tablespoons water and 1 tablespoon oil until smooth; add beef and toss to coat. , In a large skillet or wok, stir-fry beef, garlic and ginger in remaining oil until meat reaches desired doneness. Remove meat with a slotted spoon and keep warm. Add the onion, celery, green pepper and remaining water to the skillet. Cover and cook for 2 minutes. Add tomatoes and beef. , For sauce, combine the cornstarch, water, ketchup, soy sauce and curry until smooth; add to the skillet. Bring to a boil; cook and stir for 2 minutes. Serve with rice.

My sister-in-law sprang this one on me without telling me what was in it. That is probably a good thing because I may not have tried it had I known what was in it. This uses a strange mix of ingredients that I wouldn't have thought would go well together but they do.

2 lbs boneless beef chuck roast
1/2 cup chopped onion
1 tablespoon vegetable oil or 1 tablespoon olive oil
1 (15 1/4 ounce) can pineapple chunks (in juice)
2/3 cup orange juice
2 tablespoons quick-cooking tapioca
1 tablespoon brown sugar
2 -3 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup dried fig, coarsely chopped
3 tablespoons currants
1 (16 ounce) can unpeeled apricot halves in light syrup, drained and halved
4 cups hot cooked couscous or 4 cups rice
chopped fresh cilantro

Steps:

  • Trim all the fat you can from the meat.
  • Cut roast into 3/4-inch cubes.
  • In a big skillet, heat oil; cook meat and onion until meat is browned, stirring frequently (may have to do this in two batches); drain off fat.
  • In a 4-quart slow cooker, add the undrained pineapple, orange juice, tapioca, brown sugar, curry powder, salt, and pepper; stir to mix it all up.
  • Add the meat and onion.
  • Cover and cook on low for 7-9 hours.
  • Add in the fruit; cover and cook on high for 30 minutes or until heated well.
  • Season more to taste if needed.
  • Serve over couscous.
  • Sprinkle cilantro over the top.

PRESSURE COOKER BEEF CURRY

Make this beef curry in a pressure cooker for an easy midweek meal. Serve with rice or naan bread to mop up the juices

2 tbsp sunflower oil
500g beef , stewing or braising steak
1 tbsp butter
1 large onion , chopped
2 garlic cloves , crushed
1 thumb-sized piece ginger , finely grated
¼ tsp hot chilli powder
1 tsp turmeric
2 tsp ground coriander
3 cardamom pods , crushed
400g can chopped tomatoes
500ml beef stock
1 tsp caster sugar
2 tsp garam masala
2 tbsp double cream (optional)
½ small bunch of coriander , roughly chopped
naan bread or rice, to serve

Steps:

  • Heat 1 tbsp of the oil in a pressure cooker. Season the beef and fry in batches for 5-8 mins, turning occasionally until evenly browned. Set aside on a plate.
  • Heat the remaining oil and butter in the pan and fry the onion gently for 10 mins or until golden brown and caramelised. Add the garlic, ginger, chilli, turmeric, coriander and cardamom and fry for 2 mins. Stir in the beef and cook for 1 min to coat the beef in the spices.
  • Tip in the tomatoes, stock and sugar and bring to a simmer. Lock the lid onto the cooker and bring up to high pressure. Cook for 15 mins, then turn off the heat and let the pressure drop naturally. Give everything a good stir and add more water if the sauce is already thick.
  • Lock the lid back in place and give it another 10 mins, then let the pressure drop naturally. Check the meat is tender - depending on the cut it might need 5 mins more.
  • Take it off the heat, stir through the garam masala and cream, if you like. Season to taste. Scatter over the coriander and serve with naan bread or rice.
