CHEESY LAYERED GROUND BEEF AND PASTA CASSEROLE

This is a great casserole, it tastes similar to lasagna. You can also top with grated cheese the last 15 minutes of baking if desired, I also like to add in some green bell pepper and dried chili flakes for heat but that is optional.

2 1/2 lbs ground beef
1 medium onion, chopped
1 -2 jalapeno pepper (optional)
2 tablespoons minced fresh garlic (or to taste)
fresh sliced mushrooms, any amount (or use canned, drained)
1 cup grated parmesan cheese, divided (or to taste)
3 (8 ounce) cans tomato sauce
salt and pepper
2 cups grated mozzarella cheese (or to taste)
4 cups medium noodles (use any kind of pasta you desire, 4 cups measured after cooking)
1 cup cottage cheese or 1 cup ricotta cheese
1/2 cup sour cream
2 cups grated mozzarella cheese (optional or to taste) or 2 cups cheddar cheese (optional or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large lasagna dish.
  • Cook the pasta until only firm-tender; drain (it does not have to measure exactly 4 cups cooked, careful not to overcook the pasta as it will cook more in the oven) drain and transfer to a bowl, toss with a couple tablespoons oil to prevent sticking; set aside.
  • In a skillet, cook ground beef, onion, jalapenos (if using) mushrooms and minced garlic until meat is brown and cooked stir in 1/2 cup Parmesan cheese, tomato sauce salt and pepper, stir until heated through (you can the sauce for up to 45 minutes on low heat).
  • Spread 1/2 meat sauce on bottom of pan.
  • Spread 1/2 noodles on top of sauce.
  • Top noodles with 1 cup mozza cheese.
  • Mix 1 cup cottage cheese with 1/2 cup sour cream and 1/2 cup Parmesan cheese.
  • Spread over mozzeralla cheese.
  • Top with remaining tomato sauce, noodles,and remaining mozza cheese.
  • Sprinkle with remaining 1/2 cup Parmesan cheese.
  • Bake, covered for 20 mins, uncover casserole (at this point you can sprinkle with grated mozzeralla or cheddar cheese if desired).
  • Return to oven to bake for another 10-15 mins, or until bubbly.

2 1/2 tb All-purpose flour

1 1/4 c Beef or chicken stock
1/2 c Beef or chicken stock
1 tb Margarine or butter
1 c Onion chopped
1 2/3 c tomato sauce Prepared
1 1/4 c 2% milk
1/2 c Cheddar cheese shredded
2 ts Garlic crushed

Steps:

  • Tips: This is an excellent casserole for children and teenagers. Adults love it too! Substitute ground chicken or veal for beef. Its great to reheat. Make ahead: Prepare up to a day ahead but do not bake until ready to eat. In large nonstick skillet, heat oil; saute garlic and onions for 4 minutes. Add beef and saute until no longer pink, approximately 4 minutes. Add stock and tomato sauce; simmer on low heat for 12 minutes or until thickened, stirring occasionally. Set aside. Cook pasta in boiling water according to package instructions or until firm to the bite. Drain and place in baking dish. In medium nonstick saucepan, melt margarine, add flour and cook for 1 minute, stirring constantly. Add stock and milk; simmer on medium heat until slightly thickened, approximately 5 minutes. Add Cheddar cheese and Parmesan cheese. Add tomato sauce mixture to pasta. Mix well. Pour cheese sauce over top. Cover and bake for 15 minutes or until hot. Let rest for 10 minutes before serving. 1 pound lean ground beef
1 (28 ounce) jar spaghetti sauce
8 ounces cream cheese, softened
1 clove garlic, minced
1 teaspoon Italian seasoning
1 pinch garlic salt
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking pan.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, heat a skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain fat and stir in spaghetti sauce.
  • Drain spaghetti and place in a bowl. Add cream cheese, garlic, Italian seasoning, and garlic salt. Stir until cream cheese is melted and spaghetti is thoroughly coated. ½ (8 ounce) package cream cheese, softened
1 (24 ounce) jar pasta sauce
1 teaspoon Italian seasoning

1 onion, minced

½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook the bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and return pasta to pot. Melt cream cheese into the pasta. 2 lbs ground chuck
10 ounces Rotel Tomatoes
16 ounces tomato sauce
4 garlic cloves, chopped
salt and pepper
10 ounces thin egg noodles
8 ounces cream cheese, room temperature
2 cups reduced-fat sour cream
12 green onions, chopped (use the entire onion)
2 cups fat-free cheddar cheese, grated

Steps:

  • Preheat oven to 325 degrees.
  • Brown meat in large skillet. Drain and return to pan. Stir in tomatoes, tomato sauce, and garlic. Simmer for a few minutes. Season to taste.
  • Meanwhile cook noodles and drain. Combine hot noodles with cream cheese. Stir to combine and melt cream cheese. Add sour cream and green onions.
  • In a 4 quart casserole, layer noodles, meat mixture, then top with grated cheddar.
  • Bake for 30 minutes until bubbly.

1 1/2 lbs lean ground beef
1 teaspoon vegetable oil
1 (15 ounce) can tomato sauce
1 (15 ounce) can diced tomatoes
3/4 teaspoon salt
fresh ground black pepper
1/2 cup sour cream
1 (3 ounce) package cream cheese, softened
1 cup low fat cottage cheese
6 green onions, including some of the green part, sliced
1/2 green bell pepper, seeded and chopped
2 cups grated cheddar cheese

Steps:

  • Cook egg noodles per package directions.
  • Preheat oven to 350°F.
  • In a large skillet over medium-high heat, brown beef until meat is no longer pink, about 5 minutes.
  • Add oil if needed.
  • Add tomato sauce, tomatoes, salt and pepper and simmer 5 minutes.
  • With an electric mixer, beat together sour cream, cream cheese, and cottage cheese in a medium bowl.
  • Fold in onions and bell pepper and mix well.
  • In 9 x 13-inch baking dish lightly coated with cooking spray, add half of the noodles, half the cheese mixture and half the meat mixture in layers.
  • Repeat layers, ending with meat.
  • Top with cheddar cheese.
  • Cover and bake 30 minutes.
  • Uncover and bake until bubbly, about 15 minutes longer.
  • Let stand 5 to 10 minutes before serving.

I also used 1 1/2 cup egg noodles but I think 2 2/2 cups would be better. I got the recipe from Parish Pickens from Lakeshore United Methodist.

1 small white onion, chopped
2 garlic cloves, minced
1 1/4 lbs ground beef
16 ounces large shell pasta or 16 ounces elbow macaroni
10 ounces frozen chopped spinach, thawed and drained
8 ounces cream cheese, softened and cut into cubes
1 (29 ounce) can tomato sauce
2 cups shredded cheddar cheese, divided
2 teaspoons fresh thyme
2 teaspoons dried oregano
1 teaspoon dried basil
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Brown ground beef in a skillet with onion and garlic. Drain.
  • While beef is browning, prepare pasta in a large pot according to package directions. Drain pasta and set aside.
  • Return empty pasta pot to stove and over med-low heat, stir together tomato sauce and cream cheese until cream cheese is melted and mixture is smooth.
  • Reduce heat to low. Add 1 cup of the cheddar cheese; stir well. Add thyme, oregano, basil, salt and pepper. Stir well.
  • Add drained pasta, drained browned beef mixture and drained spinach to pot. Gently stir to combine and coat well.
  • Pour into a 13 x 9" baking dish or similar size casserole dish. Sprinkle with remaining 1 cup cheddar cheese.
  • Bake at 350 for 25-30 minutes or until cheese is melted and starting to slightly brown.

1 (1 1/4 ounce) envelope taco seasoning (or homemade)
1 (32 ounce) can refried beans (again, homemade is great if you have the time)

1/3 cup salsa, of your choice plus 1/2-3/4 cup additional
2 cups shredded cheese (I use cheddar and a colby jack blend, then throw some crumbled queso fresco on top for good measure)

Steps:

  • Preheat oven to 350. Spray a 9x13 baking dish with vegetable oil spray; spread the refried beans in the bottom and set aside.
  • Brown the ground beef and garlic, drain, season with taco seasoning and stir in the cream of mushroom soup and the 1/3 cup salsa.
  • Layer on top of the beans: salsa, half of the cheese, the meat mixture, jalapeños and olives, if using, remaining cheese.
  • Bake for 30 minutes, and enjoy!
