2 cans (15 ounces each) black beans, rinsed and drained
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
1 large onion, finely chopped
1 medium green pepper, finely chopped
2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons adobo sauce
2 garlic cloves, minced
1 boneless beef chuck roast (2 pounds), cut into 1-inch cubes
1 tablespoon ground cumin
1 tablespoon dried oregano
1/2 teaspoon salt
1/2 teaspoon pepper
Optional toppings: shredded Monterey Jack cheese, reduced-fat sour cream, minced fresh cilantro and lime wedges

Steps:

  • In a large bowl, combine beans, tomatoes, onion, green pepper, chipotle peppers, adobo sauce and garlic. In another bowl, combine beef, cumin, oregano, salt and pepper., Pour half of the tomato mixture into a 4- or 5-qt. slow cooker; add beef. Top with remaining tomato mixture. Cover and cook on low for 7-9 hours or until meat is tender. Serve with toppings of your choice. Freeze option: Before adding toppings, cool chili. Freeze chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary. Sprinkle with toppings.

3 tablespoons canola oil
2 large onions (chopped)
2 stalks celery (chopped)
4 large Poblano peppers (seeded and chopped)
1 large red bell pepper (seeded and chopped)
10 cloves garlic (chopped)
4 pounds ground chuck
Salt and freshly ground black pepper
1/4 cup chili powder (hot or mild)
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon dried Mexican oregano
1 tablespoon smoked paprika
4 cups beef broth
1 can (29-ounce) crushed tomatoes
1 can (10.75-ounce) tomato puree (10.75-ounce tomato puree)
1 can (10-ounce) diced tomatoes with green chiles (undrained)
1 cup water (for rinsing out the cans of tomatoes)
3-4 chipotle chiles canned in adobo sauce (plus 2 tablespoons of the adobo sauce, chopped)
2 cans (15-ounce each) pinto beans (drained and rinsed)
2 cans (15-ounce each) black beans (drained and rinsed)
1 tablespoon sugar (if needed or to taste)
Cheese
Tortilla chips
Sour cream
Cilantro
Jalapeno
Avocado
Onion
Lime wedges

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat.
  • Add the onion, reduce heat to medium-low and cook for 5-7 minutes or until beginning to soften.
  • Add the celery, Poblanos and red bell pepper. Cook for 4-5 minutes or until softened.
  • Add the garlic and cook for 1 minute or until fragrant. Set aside.
  • Heat a large skillet over medium-high heat. Add the ground chuck, season with 1 teaspoon salt and 1/2 teaspoon black pepper. Brown well, breaking up the meat as you go until no longer pink. Drain off all excess fat.
  • Transfer the browned meat to the Dutch oven. Sprinkle the spices over the meat and stir well.
  • Add the beef broth, crushed tomatoes, tomato puree, diced tomatoes with green chiles.
  • Measure out approximately 1 cup water and rinse out the cans of tomatoes and add the liquid to the Dutch oven.
  • Add the chopped chipotle chiles, the adobo sauce and the beans.
  • Bring to a boil, reduce heat to low, partially cover and simmer, stirring occasionally for 1 hour.
  • Let stand for 15-20 minutes. Season to taste with salt, black pepper and a pinch of sugar if needed.
  • Serve with garnishes of choice: Cheese, tortilla chips, sour cream, cilantro, jalapeno, avocado, onion/scallion and lime wedges.

1 tablespoon Creole seasoning
1 beef top sirloin steak (2 pounds), cut into 1/2-inch cubes
3 tablespoons olive oil
1 large sweet onion, chopped
3 chipotle peppers in adobo sauce, seeded and finely chopped
2 tablespoons minced garlic
1/3 cup masa harina
2 tablespoons chili powder
2 tablespoons Worcestershire sauce
1 tablespoon ground cumin
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
4 cups reduced-sodium beef broth
1 can (28 ounces) diced tomatoes, undrained
3 cans (15 ounces each) black beans, rinsed and drained
Shredded cheddar cheese and/or finely chopped red onion, optional

Steps:

  • Place Creole seasoning in a large resealable plastic bag. Add beef, a few pieces at a time, and shake to coat. , In a Dutch oven, saute beef in oil in batches. Stir in the onion, chipotle peppers and garlic. Cook 3 minutes longer or until onion is tender. Drain. , Stir in the masa harina, chili powder, Worcestershire sauce, cumin, cinnamon, salt and cayenne. Cook and stir for 3-5 minutes. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 45 minutes or until beef is tender. , Stir in beans; heat through. Garnish with cheddar cheese and/or red onion if desired.

3 (15 ounce) cans black beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes
1 medium chipotle chile in adobo, plus
2 tablespoons adobo sauce (from a can of chipotles in adobo sauce)
2 tablespoons extra virgin olive oil
1 lb 85% lean ground beef
kosher salt
1 large red onion, finely diced
1 1/2 tablespoons chili powder
2 teaspoons ground cumin
1 lime, juiced
1/2 cup chopped fresh cilantro
fresh ground black pepper

Steps:

  • Put one-third of the beans into the bowl of a food processor, along with the tomatoes and their juices, chipotle, and adobo sauce. Process until smooth and set aside.
  • Heat the oil in a 5- to 6-quart Dutch oven or similar heavy-duty pot over medium-high heat until it's shimmering hot, about 2 minute Add the beef, season with 1/2 teaspoons salt, and cook, using a wooden spoon to break up the meat, until it loses its raw color, about 3 minutes. Transfer the beef to a large plate using a slotted spoon. Add half of the onion and 1/4 teaspoons salt, and cook, stirring, until it begins to brown and soften, about 3 minute Reduce the heat to medium. Add the chili powder and cumin and cook for 20 seconds. Add the remaining black beans, the puréed bean mixture, and the beef to the pot and simmer for 10 min., stirring frequently. Add half of the lime juice, half of the cilantro, and salt and pepper to taste. If the chili is thicker than you like, it may be thinned with water.
  • Meanwhile, in a small bowl, mix the remaining lime juice and onion. Season generously with salt and pepper. Serve the chili topped with the onion mixture and remaining cilantro.

5 lbs ground beef
2 medium yellow onions
2 poblano peppers
3 tablespoons chili powder
2 tablespoons powdered cumin
1/2 tablespoon garlic powder
28 ounces tomato sauce
14 ounces chicken broth
14 ounces Mexican tomatoes (tomatoes with chiles)
5 chipotle chiles in adobo
3 (14 ounce) cans black beans, drained and rinsed

Steps:

  • Brown the beef in three batches.
  • While browning the beef, finely chop the onions and poblanos and sweat in olive oil until softened.
  • Finely chop the chipotles.
  • Place the browned beef, peppers and onions, chopped chipotles, all of the remaining adobo sauce from the can, and rest of the ingredients into a large pot or electric skillet.
  • Bring chili to a simmer and simmer for 1-2 hours (I just simmered it until the chili cook off :) ).
