Beef, Black Bean and Jalapeno Chili image

2 pounds ground beef
2 cups chopped onion (red or yellow)
2 tablespoons olive oil
1 cup chopped carrots
1 cup chopped celery
2 teaspoons garlic powder
2 teaspoons ground cumin
2 tablespoons chili powder
2 28-ounce cans crushed tomatoes
2 15.5-ounce cans black beans (drained and rinsed)
1/2 cup chopped jarred jalapeno (or ¼ cup chopped fresh (seeded) jalapeno)
3 bay leaves
Kosher salt and freshly ground pepper (to taste)
Shredded cheese, chopped tomatoes, sour cream, guacamole or diced avocado, slivered or chopped onions or scallions, cilantro leaves

Steps:

  • In a large pot or Dutch oven brown the meat stirring frequently to break it up into crumbles, until no pink remains. Turn it into a colander to drain.
  • Return the pot to medium heat, and add the oil. When the oil is hot, add the onions, carrots, and celery and sauté for 5 minutes until the vegetables start to become tender. Add the tomatoes, beans, browned beef, jalapeno, chili powder, garlic powder, cumin, bay leaves, and salt and pepper. Bring to a simmer and simmer for about 20 minutes, stirring occasionally. Either serve immediately, or cool and refrigerate or freeze until ready to reheat and serve.
  • Serve in bowls with all of the garnishes.

2 tablespoons olive oil
1 lb ground turkey
1 lb ground beef
1 lb chuck steak, fat trimmed, cut into 1-inch cubes
6 garlic cloves, minced
2 cups water
2 tablespoons ground cumin
2 tablespoons chili powder
2 teaspoons dried oregano
2 teaspoons salt
1 teaspoon cayenne pepper
3 (6 ounce) cans tomato paste
2 teaspoons sugar
3 cups fresh tomatoes, diced
3 cups onions, diced
3 cups red bell peppers, diced
3 cups canned black beans, drained, rinsed (from 3 15-oz cans)
1 cup fresh cilantro, chopped
2 3/4 cups beef broth, approximately
1 (8 ounce) package cheddar cheese, grated

Steps:

  • Heat olive oil in heavy large pot over medium-high heat. Add ground turkey and ground beef and saute until brown, about 3 minutes. Add cubed beef and garlic and saute 5 minutes. Add 2 cups water; bring to boil. Add cumin, chili powder, oregano, salt, and cayenne pepper. Reduce heat, cover, and simmer 10 minutes. Add tomato paste and sugar and simmer 5 minutes. Add tomatoes, onions, and peppers and simmer until vegetables are tender, about 30 minutes.
  • Add black beans, cilantro and any amount minced hot chile peppers you may desire. Add beef broth 3/4 cup at a time, until thinned to desired consistency. (Can be prepared 1 day ahead. Refrigerate uncovered until cold, then cover and keep refrigerated.) Bring chili to simmer. Ladle hot chili into bowls; top with grated cheddar cheese and serve.

  • Heat oil in large heavy-based pot (or casserole pot) over medium-high heat. Add onions and sauté until transparent, then add the green peppers (or capsicum), jalapeños and garlic; sautéing for a further minute, until the garlic is fragrant.
  • Add beef and cook until browned, breaking up any big chunks with the end of your wooden spoon. Stir in the cumin, chili powder, paprika and salt and mix through until beef is fully coated in the seasonings.
  • Mix in the crushed tomatoes along with the juices, the tomato sauce (or soup), broth and beans. Bring to a boil, then lower heat and allow to simmer while stirring occasionally, until the chili thickens (about 30 minutes).
  • Ladle into individual bowls, and top with sour cream, grated cheese, sliced jalapeños, chopped green onions, and/or cilantro.
