BEEF AND SAUSAGE MEATBALLS
These Beef and Sausage Meatballs are tender, juicy and full of Italian herbs for a rich flavor. Add pasta and marinara sauce for an "Italian Night" at home.

- Grate the onion and garlic into a medium size bowl; then add the panko breadcrumbs and stir to combine. Set aside.
- In a large bowl, add the ground beef and ground sausage. Break up the meat with a fork. Add the remaining ingredients and the reserved breadcrumb mixture. Use your hands to blend the mixture together. Do not over mix or the meatballs will be tough.
- Scoop the meat mixture into 2-inch size meatballs, rolling them in the palm of your hand to create a smooth meatball. Transfer the rolled meatballs to a plate as you roll each one. Alternatively, scoop the meat and place on a sheet of parchment, then roll each one.
- When all the meatballs are rolled, heat 2 tablespoons of oil in a large skillet set over medium-high heat, add the meatballs and brown, rolling them with tongs or a tablespoon to brown all areas. Brown the meatballs in 2 batches, transferring them to a paper towel-lined plate as they brown.
- In a large skillet, heat your favorite jar of marinara sauce, or make a homemade marinara sauce; then add the meatballs to the sauce.
- Reduce the heat to low and simmer while cooking 16 oz. of spaghetti.
- Place a portion of cooked, drained spaghetti into individual bowls and scoop sauce and several meatballs on each portion. Garnish with chopped parsley and serve with a dish of grated Parmesan cheese. Enjoy!

- In a large bowl combine ground beef with italian sausage and mix well. Add beaten egg, onion, salt, pepper and seasoned bread crumbs. Mix together and shape into meatballs - about 1 1/2" to 1 3/4" round.
- Place in a lightly greased 9" x 13" baking pan or casserole dish; Bake, uncovered, at 375º for 30 to 35 minutes. Drain off fat before serving.

GROUND BEEF AND SAUSAGE MEATBALLS
I had some spicy homemade sausage to use and thought some meatballs sounded good! Found a couple recipes and combined. The kids thought it was great! So did the wife and I. Use them in Italian dishes or as appetizers. Would also be good on a meatball sub!

Steps:
- Line shallow baking dish with foil and oil.
- Combine all ingredients and mix, using enough water to meld.
- Shape into meatballs 1 1/2 to 2 inches in diameter.
- Broil the meatballs 8 inches from broiler for 10 minutes. Turn over meatballs and broil for 10 more minutes.
- I had 50 meatballs so you may have to broil in two batches. I used my Holland grill and cooked them on there which helped eliminate them sitting in the grease.

ITALIAN SPAGHETTI SAUCE WITH MEATBALLS, SAUSAGE AND STEW BEEF
My mother-in-law has a life-long friend named Rosie, a dear Italian woman, who shared with us her family recipe for a hearty spaghetti sauce. I usually omit the ribs, as I'm not that much of a carnivore! Oftentimes I just make the meatballs with the sauce. No need to fry or bake the meatballs, add just add carefully to the hot sauce, then simmer.

- Pour oil into skillet. Cook stew beef, sausages and ribs until brown.
- Add onion and continue to cook until the onions turn golden brown.
- Remove all meats except for the beef and put them in a dish and cover to keep warm. Add beef, onions, tomato paste, water, and spices, to a heavy bottomed dutch oven, mixing well.
- Cover and cook 1½ hours. Return meats to pan and cook an additional ¾ hours.
- Add warm water to the dry bread. Squeeze out 2 handfuls and put into large bowl.
- Add hamburg, eggs, Romano cheese, garlic salt and pepper.
- Mix all of the Meatball's ingredients together. Shape into meatballs and add to sauce 25 minutes before the sauce is done. Watch carefully for burning.

- Beat the egg in a small bowl.
- Blend in the wine and tomato paste and set aside.
- Place the ground beef and italian sausage in a large bowl and blend with your hands.
- Add the bread crumbs and dry ingredients.
- Slowly blend in the egg mixture with the hamburger mixture until it is mixed well.
- If it is too dry, add more tomato paste or wine.
- Shape into 2 to 3 inch meatballs.
- Place meatballs on a baking sheet.
- Bake in a preheated oven 400 degrees for 20 minutes, turn meatballs at 10 minutes.
- Add them to your tomato sauce (see Simple Tomato Sauce Recipe) and cook approximately 30 minutes or longer for more flavor.
