KOREAN-INSPIRED GROUND BEEF LETTUCE WRAPS

- For the beef: Add the beef to a medium skillet over medium-low heat. Cook, breaking up with a wooden spoon and slowly rendering the fat, 8 to 10 minutes. Using a large spoon remove half of the rendered fat and discard. Add the garlic, scallions and ginger and cook an additional 2 to 3 minutes. Set aside.
- For the sauce: Stir together the soy sauce, gochujang, honey and sesame oil in a small bowl. Stir some of the sauce into the beef, a few tablespoons at a time, until seasoned to your taste. Set aside.
- For the sticky rice: Rinse the rice until the water runs clear. Combine the rice, oil and 1 1/2 cups water in a pressure cooker or Instant Pot®. Cook on high pressure, 8 minutes. Allow the steam to release slowly, for about 5 minutes, then remove the lid. Roll the beef, sticky rice, sauce and cucumber slices in lettuce leaves and eat.
BEEF AND MANGO WRAPS

- In a large bowl, whisk together mustard, lime juice, and oil; season with salt and pepper. Add onion, bell pepper, and mango; toss to combine. Set aside.

- Clean shrimp and set aside.
- In a medium skillet, melt butter, and add chunks of frozen mango. Saute for a minute or two.
- Put mango and butter mixture in a blender and puree. Add in the tsp of Thai sweet chili sauce and mix together
- Return to pan and add shrimp
- Cook 3-4 minutes until shrimp are cooked through and pink.
- Remove from heat and set aside.
- Chop up the mini peppers, mango, cilantro, red and green onion and mix together in a bowl.
- Add lime juice and seasonings, and stir
- Add avocado and stir one more time to mix the salsa together
- Wash butter lettuce leaves and assemble lettuce wraps by placing shrimp down (2-3 depending on lettuce leaf size), and topping with fresh salsa

- Brown ground turkey & it in a smig sesame oil & a little hot chili oil.
- Added some light soy sauce, pepper, garlic, 1/2 pkg of stir fry seasoning & 2 tbs of teriayaki sauce.
- After it browned about halfway I added 1 bunch chopped green onions & about a half a bag of coleslaw mix (just thin sliced cabbage& a little carrot not enough to worry about) and finished browning.
- While it continued to cook wash a head of iceberg lettuce & carefully peel off the leaves leaving whole.
- When turkey mixture is done & good & hot you just put some in the middle of the lettuce leaf wrap it up & enjoy.
- The hot mixture with the crisp cold lettuce is a wonderful combination.

Add in the beef and season to taste (I use about 1/4 teaspoon salt and 1/8 teaspoon pepper). Increase heat to high; cook and break up until browned on the outside (about 5 minutes). While the beef is cooking, whisk together the cornstarch and 1 tablespoon beef stock in a small bowl. Once smooth, add in the remaining 1/4 cup beef stock, soy sauce, oyster sauce, sesame oil and brown sugar. Whisk until smooth.
- COOK CONT.: To the beef, add the carrot and white sections of the green onions. Stir for another 2-3 minutes or until tender. Drain off any fat (or dab it off with a paper towel) if needed. Add in the sauce and stir for about 1 to 1 and 1/2 minutes or until it thickens and coats the beef.
