KOREAN-INSPIRED GROUND BEEF LETTUCE WRAPS



Korean-Inspired Ground Beef Lettuce Wraps image

1 pound ground beef, preferably grass-fed and organic
3 cloves garlic, minced
3 scallions, white part only, thinly sliced
1-inch piece ginger, minced
1/2 cup soy sauce
3 tablespoons gochujang (Korean red chile paste)
1 tablespoon honey
4 teaspoons sesame oil
1 1/2 cups short-grain white rice
1 1/2 tablespoons avocado oil
Sliced cucumber, for serving
1 head butter lettuce, separated into whole leaves

Steps:

  • For the beef: Add the beef to a medium skillet over medium-low heat. Cook, breaking up with a wooden spoon and slowly rendering the fat, 8 to 10 minutes. Using a large spoon remove half of the rendered fat and discard. Add the garlic, scallions and ginger and cook an additional 2 to 3 minutes. Set aside.
  • For the sauce: Stir together the soy sauce, gochujang, honey and sesame oil in a small bowl. Stir some of the sauce into the beef, a few tablespoons at a time, until seasoned to your taste. Set aside.
  • For the sticky rice: Rinse the rice until the water runs clear. Combine the rice, oil and 1 1/2 cups water in a pressure cooker or Instant Pot®. Cook on high pressure, 8 minutes. Allow the steam to release slowly, for about 5 minutes, then remove the lid. Roll the beef, sticky rice, sauce and cucumber slices in lettuce leaves and eat.

3 tablespoons fresh lime juice, from 2 limes
1 tablespoon olive oil

1/2 medium red onion, thinly sliced
1 red bell pepper (ribs and seeds removed), halved lengthwise and cut crosswise into thin strips
1 mango (about 1 pound), peeled and cut into 1/2-inch-wide strips
4 whole-wheat tortillas (10-inch)
4 cups loose spinach (about 5 ounces), trimmed, well washed and dried
1 pound cooked beef, very thinly sliced, room temperature
Black-Bean Relish (optional)

Steps:

  • In a large bowl, whisk together mustard, lime juice, and oil; season with salt and pepper. Add onion, bell pepper, and mango; toss to combine. Set aside.
  • Lay tortillas on a work surface; dividing evenly, line each with spinach, leaving a 1-inch border all around. Arrange beef slices down center of each wrap. Top beef with mango mixture and any juices from bowl.
  • Fold in 2 opposite sides, and roll up wraps tightly; cut in half.
  • For Black Bean Relish: In a medium bowl, combine 1/2 medium red onion, finely chopped, one can (15.5 ounces) black beans, rinsed and drained 1 cup chopped fresh cilantro, 2 tablespoons fresh lime juice, and 1 tablespoon olive oil. Season with salt and pepper.

This recipe is one of my go-tos when I am short on time but want something that tastes spectacular.   • In a large skillet, cook beef, onion and garlic over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef into crumbles; drain. Stir in chutney, soy sauce and garam masala; heat through. Add salad mix (reserve packets); cook and stir until slightly wilted, about 5 minutes., Combine coconut milk and reserved dressing packet until smooth. 1/2 lb medium shrimp (cleaned, peeled, deveined)
1/2 cup frozen mango chunks
1 tbs Thai sweet chili sauce
1/2 tbs butter
4 butter lettuce leaves
4 sweet mini peppers
1/2 an avocado. diced
1/2 a mango (diced)
1/4 cup diced red onion
1/4 cup cilantro (chopped fine)
1 green onion (sliced into thin pieces)
1 tsp lime juice
a pinch of garlic seasoning
a pinch of cayenne pepper (optional)

Steps:

  • Clean shrimp and set aside.
  • In a medium skillet, melt butter, and add chunks of frozen mango. Saute for a minute or two.
  • Put mango and butter mixture in a blender and puree. Add in the tsp of Thai sweet chili sauce and mix together
  • Return to pan and add shrimp
  • Cook 3-4 minutes until shrimp are cooked through and pink.
  • Remove from heat and set aside.
  • Chop up the mini peppers, mango, cilantro, red and green onion and mix together in a bowl.
  • Add lime juice and seasonings, and stir
  • Add avocado and stir one more time to mix the salsa together
  • Wash butter lettuce leaves and assemble lettuce wraps by placing shrimp down (2-3 depending on lettuce leaf size), and topping with fresh salsa
  • Enjoy!

1 package (3 3/4 ounces) cellophane or bean-thread noodles
2 tablespoons vegetable oil
6 scallions, 3 sliced and 3 cut into thirds
1/4 cup fresh lime juice
1/4 cup chopped fresh, cilantro
1 garlic clove, minced
8 leaves Boston lettuce
1 ripe mango, peeled, pitted, and cut into strips

Steps:

  • Heat broiler, with rack 4 inches from heat. Place steak on a large rimmed baking sheet; season with salt and pepper. Broil until medium-rare, 10 to 12 minutes, turning halfway through. Let rest 10 minutes; thinly slice against the grain.
  • While steak rests, cook noodles according to package instructions; drain, and return to pot. Add 1 tablespoon oil and sliced scallions; season with salt and pepper.
  • In a small bowl, combine lime juice, cilantro, garlic, and 1 tablespoon oil; season sauce with salt and pepper. Fill lettuce leaves with beef, mango, and scallion lengths; drizzle with sauce. Serve with noodles.

2 garlic cloves, minced
1 medium onion, diced

Steps:

  • Cook the ground beef and onions until they're done.
  • Mix together soy, sweetener, garlic, red pepper, ginger then pour over the ground beef.
  • Add cabbage.
  • Cook until cabbage is nice and soft or if you omit the cabbage, cook until soy sauce has pretty much evaporated.
  • Let it cool a bit.

  • Brown ground turkey & it in a smig sesame oil & a little hot chili oil.
  • Added some light soy sauce, pepper, garlic, 1/2 pkg of stir fry seasoning & 2 tbs of teriayaki sauce.
  • After it browned about halfway I added 1 bunch chopped green onions & about a half a bag of coleslaw mix (just thin sliced cabbage& a little carrot not enough to worry about) and finished browning.
  • While it continued to cook wash a head of iceberg lettuce & carefully peel off the leaves leaving whole.
  • When turkey mixture is done & good & hot you just put some in the middle of the lettuce leaf wrap it up & enjoy.
  • The hot mixture with the crisp cold lettuce is a wonderful combination.

When oil is shimmering, add ginger and garlic and saute, stirring, until fragrant, about 30 seconds to 1 minute (being careful to not let it burn). Add in the beef and season to taste (I use about 1/4 teaspoon salt and 1/8 teaspoon pepper). Increase heat to high; cook and break up until browned on the outside (about 5 minutes). While the beef is cooking, whisk together the cornstarch and 1 tablespoon beef stock in a small bowl. Once smooth, add in the remaining 1/4 cup beef stock, soy sauce, oyster sauce, sesame oil and brown sugar. Whisk until smooth.
  • COOK CONT.: To the beef, add the carrot and white sections of the green onions. Stir for another 2-3 minutes or until tender. Drain off any fat (or dab it off with a paper towel) if needed. Add in the sauce and stir for about 1 to 1 and 1/2 minutes or until it thickens and coats the beef.
