VEGETARIAN FIVE BEAN SOUP MIX



Vegetarian Five Bean Soup Mix image

This Vegetarian Five Bean Soup Mix makes for a great holiday gift.

1 pound pinto beans
1 pound split green peas (or green lentils)
1 pound great northern beans
1 pound black beans
1 pound kidney beans
1 tablespoon black pepper
1 tablespoon paprika
1 tablespoon dry mustard
2 tablespoons dehydrated onions (found in the spice aisle)
2 tablespoons sea salt
2 tablespoons garlic powder
2 tablespoons dried oregano
1 teaspoon dried rosemary
8 bay leaves
4 vegetable bouillon cubes
4 clear quart Mason jars plus lids and rings
Parchment paper
Tape or stickers
Labels
Fabric and ribbon to cover top

Steps:

  • In each of the four Mason jars, layer 2/3 cup of pinto beans-shaking the jar gently to level the beans. Then repeat with 2/3 cup of green peas and so on ending with the kidney beans. Set jars aside.
  • In a small bowl, combine all remaining spices except bay leaves and bouillon cubes.
  • On a 10" x 10" piece of parchment paper, spoon 3 tablespoons of the spice mixture in the middle. Place two bay leaves and one bouillon cube on top. Fold parchment around spices to make a small spice packet. Seal with tape or stickers. Repeat three more times to create four total packets. Squish the packets into the top space of each of the four bean jars. You can also package the spices into plastic zip-top baggies if you prefer.
  • Place lids on jars, cover in fabric and ribbon and label as desired.

1/3 cup canned chickpeas (drained and rinsed)
1/4 cup zucchini (finely diced)
1/4 cup Roma tomatoes (seeded and finely diced)
1/4 cup grated beets
2 tbsp parsley (chopped)
1 vegetable boullion cube
1 1/2 cups boiled water
Juice of 1 lemon wedge
3/4 tsp za'atar
Salt and pepper (to taste)
2 tbsp pumpkin seeds

Steps:

  • Add all ingredients to a mason jar.
  • Add boiling water and enjoy!

1 lb of dry beans (any variety, I buy a mixed variety at the bulk food store)
4 vegetable bouillon cubes
1 bay leaf
1 garlic clove, minced
1 cup celery, diced
1 cup carrot, diced
1 cup onion, diced
1 (16 ounce) can stewed tomatoes
1 -3 teaspoon thyme
salt and pepper

Steps:

  • Place the beans in a large canning jar (mixed or layered in colours).
  • Add 4 vegetable bouillon cubes and 1 bay leaf on top.
  • Close and label the jar.
  • Attach a card with the directions for use to the jar.
  • Directions for use: Rince beans and discard any debris. In a large saucepot, cover beans with water. Bring to a boil for 2 minutes. Cover and let stand for 1 hour. Drain beans and add 6 cups fresh water. Add vegetable bouillon cubes, minced garlic, bay leaf, celery, carrots, onions and can of tomatoes. Flavour with thyme. Cover and cook for 3 to 4 hours until beans are tender. Remove bay leaf and season with salt and pepper to taste.

This soup mix is full of beans! Be warned it looks prettier in the jar than in the bowl - but it's a tasty, hearty soup that will fill you up.

1/4 cup each red lentils, white eyed peas, black beans, green lentils, red beans, pinto beans, green split peas
1 tsp dried basil
1 Tbsp dried parsley
1 Tbsp dried onion flakes
1/2 tsp garlic powder
2 Tbsp beef or vegetable bouillon
1 bay leaf

Steps:

  • In pint size (500 ml) jar, layer beans and peas in order listed above or as you prefer.
  • In small bowl, mix remainder of ingredients. Place in a small plastic bag or wrap well in plastic wrap to keep separate from beans and peas.
  • Place spice pack on top of beans and peas. Seal jar.
  • Decorate, label and include Cooking Directions.
  • Cooking Instructions
  • Also Needed:14 oz can diced tomatoes
  • Remove spice pack.
  • Rinse remainder of ingredients well, then drain.
  • Place bean mix in pot and add 6 cups water and bring to boil. Boil for 10 minutes to remove any toxins from beans.
  • Remove from heat and let stand for 1 hour. Drain, rinse, drain.
  • Return to pot, add 7 cups water, 1 can (14 oz/398 ml) diced tomatoes, spice mix and bay leaf.
  • Bring to boil. Reduce heat and simmer for 1 to 11/2 hours.
  • Adjust seasoning to taste, remove bay leaf and garnish with fresh parsley.
  • Makes 9 cups.

  • Use 2 (1 pint) clamp top jars. In each jar, layer 1/4 cup of each type bean.
  • Seal lid and attach cooking instructions.
  • INSTRUCTIONS:.
  • Rinse beans, place in large bowl, add one to 2 tsp of salt and cover with water.
  • Let stand overnight.
  • Drain beans, place in a large kettle, add 2 quarts of water, one cup chopped ham and one chopped onion.
  • Simmer for 1 1/2 to 2 hours; add one chopped green pepper and 3 tbls lemon juice or one tsp lemon pepper.
  • Makes 4 servings.

This is a hearty soup loaded with healthy goodies. Could be a vegetarian soup--just leave out the meat. Plenty of protein and plenty of veggies. It is a one-dish meal along with some homemade bread and a salad.

2 1/2 quarts water
1 lb mixed beans (usually around 14 different beans in the bag)
2 teaspoons salt
2 (10 ounce) cans chicken broth (I use College Inn)
1 cup chopped celery, diced
4 medium carrots, diced
2 large onions, chopped
1 (20 ounce) can tomatoes, chopped
1/2 teaspoon basil
1 tablespoon lemon juice
2 teaspoons parsley
5 chicken bouillon cubes
2 (6 ounce) cans V8 vegetable juice
1/2 cup raw rice
1 slice deli ham or 1 slice deli turkey, 1 1/2 inch thick slice,cubed

Steps:

  • Wash and sort beans.
  • Place first 7 ingredients in a large pot.
  • Bring to a boil, cover and remove from heat.
  • Allow to stand for 1 hour; return to heat and bring to a boil.
  • Reduce heat and simmer till veggies are tender adding water if necessary (if you add too much water you will need to add another bouillon cube--but be careful, they are salty).
  • Add the rest of the ingredients and simmer about 30 minutes.
  • Serve with bread and a green salad.

3/4 cup dried great northern beans
3/4 cup dried split peas
3/4 cup lentils (Brown lentils are fine, but red lentils or yellow split peas make a real rainbow of colors in the ja)
3/4 cup dried black beans
2 tablespoons dried onion flakes
2 tablespoons beef bouillon granules (sold in soup section)
2 tablespoons dried parsley flakes
2 teaspoons dried basil
2 teaspoons sweetened lemonade drink mix
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon pepper
1 teaspoon dried oregano
canned ham (a five-ounce can, if you choose this option, you will need to change the written instructions to rea)

Steps:

  • Use a quart jar that has a wide mouth, but if you can't find one any quart jar will work.
  • Place each type of bean in jar in the order listed above.
  • Top with seasoning bag, gently flattened so it can be seen from all sides.
  • Place lid, decorate jar and attach recipe.
  • Put an expiration date: one year from time of assembly.
  • DIRECTIONS TO MAKE RAINBOW BEAN SOUP:.
  • Remove seasoning packet from the jar and set to the side. Rinse beans and place beans in large microwave-safe dish. Cover with water 1" to 2" over top of beans. Cover dish loosely with plastic wrap. Microwave on high for 15 minutes, rotating after 7 minutes. Drain and rinse beans very well; place in a large pot. Add 8 cups water, one 15 ounce can crushed tomatoes and seasonings from packet. Cover, bring to boil. Lower heat, cover pan and simmer 1 1/2 hours or until beans are tender. Stir occasionally.
