MASHED WHITE BEANS

Number Of Ingredients 5

1 tablespoon olive oil
2 cloves garlic, minced
2 cans (19 ounces each) cannellini beans, drained and rinsed
1 tablespoon chopped fresh sage, (or 1 teaspoon dried)
Coarse salt and ground pepper

Steps:

  • In a large skillet, heat oil over medium heat. Cook garlic, stirring often, until golden, about 1 minute.
  • Add beans, sage, and 1 1/4 cups water. Cook, stirring often, until beans are hot and liquid thickens, about 4 minutes.
  • Mash beans, leaving some whole. Season with salt and pepper.

MASHED BLACK BEANS

Got this easy recipe from Cuisine at Home June '03. Tastes fabulous and takes only 15 minutes! Very easy to halve or double to.

Number Of Ingredients 6

1/4 cup vegetable oil
1 large white onion, chopped
6 garlic cloves, minced
2 (15 ounce) cans black beans, drained and rinsed
1/2 cup water, may need up to 1 cup
1/2 teaspoon kosher salt

Steps:

  • Heat oil in a nonstick skillet over medium heat.
  • Add onion and cook until golden, stirring often, about 7 minutes.
  • Stir in garlic and cook 1 minute.
  • Add beans and mash coarsely with a potato masher, mashing in onion and and garlic at the same time.
  • Thin beans with enough water to give them a soft consistency that barely holds it shape in a spoon.
  • Season with salt.
  • Cover and keep warm until serving.

Bean Mash image

Vegan Bean Mash with onion and garlic, a simple and delicious side dish that is packed with protein and fibre. It is also a great alternative to the regular mashed potatoes, or can be served as a healthy party dip or on toast, crostini or bruschetta. Bonus point, it's gluten free, low calorie, high protein.

2 tins butter beans ((2x 400 g, 13 oz))
3 garlic cloves
1 onion
1/2 tsp salt
1/4 tsp pepper
1/2 tsp paprika
2 tbsp olive oil
1/4 cup boiled water
rosemary sprigs to garnish

Steps:

  • Drain the beans and rinse under cold water.
  • In a pan, add the olive oil and heat it up on a low to medium heat.
  • Peel and chop the onion, and fry it until golden.
  • Add the peeled and chopped garlic, and fry for a further 30 seconds, then add the beans, salt, pepper, paprika and water.
  • Leave to simmer for 1 minute, then add everything to a blender.
  • Blitz everything in a food processor until you get a smooth paste.
  • Transfer to a bowl and decorate with rosemary.
  • Serve warm or cold.

1 tablespoon extra virgin olive oil
1 large onion, finely chopped
3 garlic cloves, minced
19 ounces red kidney beans, rinsed and drained
1/2 cup vegetable broth
1/4 teaspoon salt
3 tablespoons fresh cilantro or 3 tablespoons fresh parsley, chopped
1 pinch fresh ground black pepper
2 tablespoons extra virgin olive oil (Cake ingedient only) (optional)

Steps:

  • Mash recipe :.
  • In medium saucepan, heat oil over medium heat. Add onion and garlic; cook, stirring, until fragant, about 7 minutes. Add beans, broth, and salt; bring to a simmer and cook for 5 minutes. Remove from pan and stir in cilantro and mash with a potato masher to a coarse puree. Add pepper to taste. Serve warm.

3 tbsp olive oil
4 pork & herb sausages
8 spring onions , finely sliced
2 x 400g cans butter beans , drained and rinsed
1 fat garlic clove , finely grated
1 large lemon , zested and juiced
wilted greens , to serve

Steps:

  • Heat grill to high. Brush 1 tbsp oil over the sausages, and grill on a tray for 20 mins, turning regularly.
  • Meanwhile, heat the rest of the oil in a saucepan over a low heat. Add most of the spring onion and cook for 5 mins until softened. Add the beans, garlic, and lemon zest and juice, cook for a few mins more, then gently mash with a potato masher to get a thick, creamy consistency. Season and cook for 5 mins more until warmed through. Scatter over the remaining spring onion and serve with the sausages and wilted greens.

2 small bunches cherry tomatoes , on the vine
1 tbsp olive oil
chunks skinless cod or other white fish fillet
zest 1 lemon , plus juice of 0.5
240g pack frozen soya beans
1 garlic clove
bunch basil , leaves and stalks separated
100ml low-sodium chicken or vegetable stock

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the tomatoes onto a baking tray, rub with a little oil and some seasoning, then roast for 5 mins until the skins are starting to split. Add the fish to the tray, top with most of the lemon zest and some more seasoning, then drizzle with a little more oil. Roast for 8-10 mins until the fish flakes easily.
  • Meanwhile, cook the beans in a pan of boiling water for 3 mins until just tender. Drain, then tip into a food processor with the rest of the oil, garlic, basil stalks, lemon juice and stock, then pulse to a thick, slightly rough purée. Season to taste.
  • Divide the tomatoes and mash between two plates, top with the cod, then scatter with basil leaves and the remaining lemon zest to serve.

2 tbsp olive oil
1 shallot or 1⁄2 a small onion, finely chopped
2 garlic cloves , chopped
2 x 400g cans cannellini beans , drained
50ml stock or water
large handful flat-leaf parsley

Steps:

  • Heat the olive oil in a saucepan and tip in the shallots (or onion). Cook gently for 5 mins, then add the garlic cloves and cook for another 2 mins until soft.
  • Tip the cannellini beans into the pan and mash roughly, adding a little stock or water to loosen. Stir in the parsley with plenty of seasoning. Great with roast white fish, spicy chorizo and griddled scallops

1 tbsp olive oil
1 small onion or shallot , chopped
1 garlic clove , crushed
half a 410g can haricot beans in water, rinsed and drained
125ml vegetable stock
1 tbsp chopped coriander

Steps:

  • Grill the pork for 12-15 mins, turning once until browned and cooked through. Heat the oil in a small pan, add the onion or shallot and fry for 3 mins until softened. Add the garlic, fry for 1 min more, then tip in the beans and stock and simmer for 5 mins. Roughly mash with a potato masher or fork, then stir in the coriander. Serve with the pork.
