EASY BEAN DIP
A rich cream bean dip full of flavor! Loads of cheese and a handful of jalapenos take this dip to the next level!

Steps:
- Preheat oven to 375°F.
- Slice green onions dividing the white and green portions. Set the green part aside.
- Combine cream cheese, refried beans, taco seasoning and sour cream with a hand mixer on until fluffy.
- Add the whites of the onions, jalapenos, chiles and 2 cups of cheddar cheese.
- Spread into a 2qt (or 8x8) baking dish.
- Top with remaining cheese and bake 20-25 minutes or hot and cheese is melted.
- Serve with tortilla chips.

CHAMPIONSHIP BEAN DIP
My friends and neighbors expect me to bring this irresistible dip to every gathering. When I arrive, they ask, "You brought your bean dip, didn't you?" - In a large bowl, combine the first 8 ingredients; transfer to a 1-1/2-qt. slow cooker. Cover and cook on high for 2 hours or until heated through, stirring once or twice. Serve with tortilla chips and salsa.

REFRIED BEAN BURRITOS
These are quick and fairly healthy if made with low fat ingredients, add some rice if you want to stretch them farther or just go with basic bean and cheese.

Steps:
- Place beans in microwave safe dish.
- Stir in next 5 ingredients.
- Heat on medium power for about 3 minutes or until hot, stirring once halfway through.
- Alternatively, heat over low heat on stovetop until warmed through.
- If mixture becomes too thick, add water.
- Mix in rice, if using.
- Meanwhile, heat the tortillas.
- Use the method you like best.
- I usually just heat them one at a time in a dry skillet over medium heat, about 20-30 secs per side, or just until pliable.
- Place about 1/3 cup bean mixture in each tortilla, add cheese, salsa and toppings, and roll.
- You can bake them in a 350 degree oven for 10-15 minutes if you want them firmer/crisper.
- I like to skip this step.
- That's it!
- These refrigerate well for a few days.
- I can't speak for the freezer.
- I end up with 5 medium sized burritos; if you use the rice or more veggies, you will get more.
- Since I usually reheat one or two at a time, I add sour cream after reheating.
- No one would call these authentic Mexican food; they taste more like a fresher and better version of Taco Bell, but they are very good.

- Preheat oven to 375°. In a large bowl, combine beans, salsa, rice and 1 cup cheese. Spoon about 1/3 cup off-center on each tortilla. Fold the sides and ends over filling and roll up. , Arrange burritos in a greased 13x9-in. baking dish. Sprinkle with remaining 1 cup cheese. Cover and bake until heated through, 20-25 minutes. CHEESY BURRITO GAME DAY DIP
A quick and easy recipe that has become our favorite for football game day. It is so tasty and is filling too. Low fat cheese works well in this also. Serve with tortilla or corn chips and side of guacamole.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir ground beef, refried beans, 3 cups Colby-Monterey Jack cheese, sour cream, cream cheese, and taco seasoning mix together in a bowl until well mixed. Spread mixture into the prepared baking dish.
- Bake in the preheated oven for 20 minutes; sprinkle with remaining 1 cup Colby-Monterey Jack cheese. Continue baking until cheese is melted, about 5 more minutes.

BLACK BEAN DIP

- Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.
MISSION-STYLE WILD RICE AND BEAN BURRITO

- For the rice: Bring the water to a boil over high heat in a medium saucepan with a tight fitting lid. Stir in the wild rice and 1 teaspoon of the salt. Adjust the heat so the rice simmers gently, cover, and cook until tender but not mushy, 30 to 35 minutes. Remove rice from heat and let stand, covered 10 minutes. Drain remaining liquid and fluff with a fork.
- Meanwhile, mix all the salsa ingredients in a bowl. Set aside, while making the beans so the flavors come together and the sauce gets juicy.
- Heat the olive oil in a medium skillet, over medium heat. Add the onion, garlic, and season with the remaining 1/2 teaspoon salt. Cook until the onion is translucent, about 5 minutes. Add the beans and mash them until the mixture is almost smooth but still dotted with bits of bean, adding water as needed to loosen the mash up a bit. Set aside.
- When ready to serve the burritos, wrap all the tortillas in a slightly damp towel and microwave until piping hot and pliable, 1 to 2 minutes. (Alternatively, heat a large skillet over high heat until very hot. Cook a tortilla, turning once, until slightly charred and puffy, about 15 seconds per side. Wrap in foil and repeat with the remaining tortillas.) Keep covered while assembling each burrito.
- To form the burritos, spoon about a quarter of both the rice and beans and 3/4 cup of the salsa in the center of a tortilla. Top with some of the watercress, if using. Fold the closest edge of the tortilla over the filling, fold in the sides, and then roll the tortilla away from you to form a package. Repeat with the remaining tortillas and filling.
- Serve burritos with extra salsa, a dollop of sour cream, and lime, if desired.
BEAN BURRITO DIP
Easy and delicious...this dip is always the 1st to go at parties. If you have any leftover just add chicken or steak (maybe a little salsa) with a flour tortilla and you have a great tasting burrito!

- Mix refried beans, pinto beans, Rotel tomato's, cheese (I leave a little cheese to add to the top before I bake) and place in an 8x8 baking dish.
- Bake at 350 for 20-30 minutes ot until heated thru.
- After cooling slightly, put a layer of sour cream (depending on taste, I like a little thicker layer myself) followed by the chopped onion and if you choose, the jalapeno's (I put the jalapeno's on top so people can eat around them if they want).
- Serve with dip size Fritos or Tortilla chips.
- (I have used this same recipe with flour tortillas for simple bean burritos at a childs birthday party. I just used mild Rotel and nixed the jalapeno's).
