Steps:
- To make the marinade, start by mincing the ginger and garlic and dicing the green onions.
- In a small pan, toast the sesame seeds for a couple of minutes over medium heat. Make sure to keep the seeds moving while they're in the pan, so they toast evenly and don't burn. The seeds are done when they've browned a little and have a nice toasted smell to them.
- In a small bowl combine the soy sauce, ginger, garlic, brown sugar, sesame seeds, and green onions, along with a pinch of black pepper.
- Let the marinade sit for 15 minutes or so before pouring it over the chicken wings. Make sure to mix the wings and marinade up, so it's evenly distributed. Let the wings marinate for at least an hour before cooking them. The longer they marinate, the more flavor they'll absorb.
- Place the wings on a broiler pan with the skin side up in a 350ºF oven for 30 minutes. The wings are done when they turn a nice deep golden brown and are cooked all the way through.

Steps:
- First, I always wash my chicken. Then I put down a piece of foil, and place a paper towel on top of it to dry my chicken.
- Always rememeber to bleach down your countertops and sink, you don't want any contamination from the chicken.
- Now, I'm going season my chicken. I like to use salt, pepper, and since I'm Southern, I also use Texas Pete Hot Sauce.
- After you finish seasoning your wings, you will want to put oil in your pot. *Do Not Flour Your Chicken*
- Add your chicken wings to the hot oil, in order to begin frying them.
- When your wings begin to bubble to the top, remove them from the pot.
- You will want to butter a pan and then add your wings.
- Add your choice of barbecue sauce and more hot sauce if desired. Place them in the oven on 350 degrees for about 5 minutes. Your wings are already done, so don't leave them in any longer. They're placed in the oven, in order to get a nice sear on them.
- When your wings are done, carefully take them out of the oven and allow them to cool.
BBQ CHICKEN WINGS
This yummy honey barbeque sauce is great on chicken wings, pork, or short ribs. The soy sauce and oyster sauce hint at an Asian inspiration, while the gin gives it an undeterminable edge.

Steps:
- Soak 12 wooden skewers in water for at least 10 mins. To make the sauce, pour the vinegar and soy into a jug. Heat the sugar and 1 tbsp water in a small pan until the sugar has dissolved, then simmer until it turns a deep caramel colour. Standing well back as it will spit, pour in the vinegar and soy. Reduce the heat and let it bubble for a few mins, then add the remaining sauce ingredients, stir well and cook for 5 mins until smooth and thickened. Set aside.
- Light the barbecue (or set your oven grill to medium). Once the coals have died down, spread out to an even layer. Cut the tips from the chicken wings, then stretch them out as straight as you can and push a skewer through the length of each wing. Brush the skin with the oil and season. Cook the wings on the barbecue or under the grill for 10 mins each side, until the chicken is cooked through and the skin is golden brown and crisp.
- Remove the skewers to a large plate. Pour two-thirds of the sauce into a bowl, reserving the rest in the pan. Using a brush, coat each skewer well with the sauce from the bowl, then return them to the barbecue or grill and cook for a further 2-3 mins each side until the sauce has caramelised.
- Transfer the skewers to a serving platter. Reheat the reserved sauce, adding a splash of water to loosen if needed, then drizzle over the skewers. Top with the sesame seeds and spring onions.
