This recipe calls for only 7 minutes of cooking time and recommends that the heart be served medium rare - I like mine just the slightest shade of pink so cook it a total of 12 minutes, but do not overcook

1 (1 lb) veal heart, trimmed of external fat and connective tissue,split in half,veins removed,washed and dried
1 tablespoon olive oil or 1 tablespoon peanut oil
1 teaspoon vinegar
1 tablespoon soy sauce
pepper

Steps:

  • Mix all the ingredients, except heart& marinate the heart for apprx 1 hour BBQ or broil the heart cut side up, 3-4" from heat source.
  • Cook 3 minutes, baste& turn, cook 3 minutes, turn& baste, cook 1 minute more.

1 boneless veal shoulder (about 5 pounds)
2 bunches green onions, trimmed, some tops included, cut in half
1 large yellow onion, cut into chunks
1 green bell pepper, cut into chunks
8 sprigs parsley, roughly chopped
3 large cloves garlic, peeled
1/2 cup peanut oil
1/2 cup canned tomato sauce
1/2 cup red-wine vinegar or sherry vinegar
1/4 cup Worcestershire sauce
1/4 cup honey
1 tablespoon capers, drained
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon Tabasco sauce

Steps:

  • Unroll the veal shoulder. Place it in a deep baking dish. Set aside.
  • Place the onions, green pepper, parsley and garlic in a food processor and pulse until mixture is cut to medium-size bits.
  • Heat the oil over medium heat in a skillet and add the contents of the food processor. Simmer for 5 minutes and stir in remaining ingredients. Simmer for 20 minutes. Taste for seasoning and cool.
  • Completely cover the veal with the mixture. Cover and refrigerate at least 5 hours, or overnight, turning the meat once or twice.
  • About an hour before cooking, remove the meat from the refrigerator. Prepare coals for a barbecue or heat a gas grill. Preheat the oven to 375 degrees. When the grill is ready, remove the meat from the marinade and grill each side 15 minutes, turning frequently to keep the meat from burning.
  • Meanwhile, heat the marinade. Place the meat in a deep casserole, pour the sauce around it and cover. Bake for 1 hour. If still tough, bake up to 30 minutes longer. Spoon sauce over each serving and serve the rest on the side.

1/4 cup olive oil
2 tablespoons finely chopped fresh rosemary
3 cloves garlic finely chopped
1 teaspoon finely chopped lemon zest
4 veal chops, each 3/4 pounds and 1-inch thick
1 pound fresh shiitake mushrooms, stems removed
1 yellow onion, cut crosswise into 1/2-inch thick slices
3 tablespoons olive oil
Salt and freshly ground pepper
2 plum tomatoes, seeded and cut into 1/2-inch dice
2 yellow tomatoes, seeded and cut into 1/2-inch dice
1 tablespoon chopped fresh thyme
2 tablespoons sherry vinegar
2 tablespoons extra-virgin olive oil
1/2 cup olive oil
1/4 cup white wine vinegar
1/2 cup dry white wine
4 cloves garlic, thinly sliced
8 artichokes, quartered and choke removed and placed in large bowl acidulated water
2 tablespoons fresh parsley
Salt and pepper

Steps:

  • Veal Chops: Combine oil, rosemary, garlic and zest in a large shallow baking dish. Add the veal chops and turn to coat. Cover and marinate in the refrigerator at least 4 hours or up to 8 hours. Preheat grill. Remove chops from marinade and season with salt and pepper to taste. Grill chops, turning once until the centers are slightly pink, (registers 150 internal temperature), about 15 to 17 minutes.
  • Mushrooms: Brush mushrooms and onions with olive oil and season with salt and pepper to taste. Grill each for 10 to 15 minutes, turning occasionally until just cooked through. Remove from the grill and cut into 1/2-inch pieces. Place in a bowl with the tomatoes, thyme. Drizzle in the vinegar and oil, mix well and season with salt and pepper to taste.
  • Braised and Grilled Artichokes: Place the olive oil, vinegar, wine, and garlic in a large saute pan and place on the side burner of the grill and bring to a simmer. Drain the artichokes and add, cut side down in a single layer in the pan. Bring the mixture to a boil, reduce the heat and cover the pan. Cook until barely tender, about 12 minutes. Remove the artichokes from the pan, season with salt and pepper and grill for 4 to 5 minutes until lightly golden brown on both sides.

Am posting this recipe in memory of my dad who passed away Oct. 14, 2009. He made this every year when we butchered a beef and we always looked forward to him making this. This is time consuming, but makes a huge amount and freezes well. We seldom froze any though, as we usually ate it until it was gone!

1 beef heart
12 -16 cups water
2 large onions, roughly chopped
8 potatoes, peeled and cubed
6 carrots, peeled and sliced
1 (26 ounce) can cream of mushroom soup
1 (10 ounce) can sliced mushrooms, drained
2 bay leaves
1 (11 ounce) box quick-cooking barley

Steps:

  • Place beef heart in large kettle and cover with 12 cups water. I use a large stockpot for this. Bring to a boil over medium heat and simmer for 4-5 hours or until heart is tender. May need to add more water while cooking to keep meat covered. I usually add at least 4 more cups of water while it is cooking.
  • Once heart is tender, remove heart from broth and let cool. Cube meat into 1-2 inch pieces and return to broth.
  • Add in onions, potatoes, carrots and bay leaves. Cook on medium low heat for at least 4 hours.
  • Stir in mushrooms, mushroom soup and barley. Simmer at least another hour or until barley is tender.
  • Remove bay leaves before serving.
  • The longer this cooks, the better it is. I have made this by cooking the heart one day, letting the heart and the broth cool over night and then putting it on the stove and finishing it the next day.
  • Can also make this by cooking the heart on the stove, let cool and cube the meat, then put all remaining ingredients into a large roaster and cover and put in the oven and bake at 300 for 6 hours.
