1 1/2 lb. Ground Beef
3/4 c. Oats
1 c. Milk
3 tbsp. Very Finely Minced Onion
1 1/2 tsp. Salt
Plenty Of Ground Black Pepper, to taste

FOR COOKING MEATBALLS
1 c. All-Purpose Flour (coating For Frozen Meatballs)
Canola Oil

FOR SAUCE
1 c. Ketchup
2 tbsp. Sugar
3 tbsp. Vinegar
2 tbsp. Worcestershire
4 tbsp. (to 6 Tablespoons) Onion
1 dash Tabasco

Steps:

  • Preheat oven to 350 degrees.Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes.After 5 minutes, remove meatballs from freezer and immediately dredge in unseasoned flour. Brown meatballs in canola oil until just brown. Place into a baking dish.Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes. Serve with egg noodles, mashed potatoes, or crusty French bread.

PORK BARBECUE MEATBALL SANDWICHES

Season pork meatballs with Chinese five-spice powder, and slather them with a barbecue sauce mixed with cherry preserves and mustard.

Four 7-inch-long soft hero rolls
1/2 cup milk
1 1/4 pounds ground pork
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
3 teaspoons Dijon mustard
1/2 teaspoon Chinese five-spice powder
Kosher salt and freshly ground black pepper
1/2 cup barbecue sauce
1/3 cup cherry preserves
1 to 2 tablespoons chopped pickled jalapeños plus1 to 2 tablespoons pickled jalapeño brine
2 cups baby arugula

Steps:

  • Adjust an oven rack to the top position and preheat the oven to 375 degrees F. Line a rimmed baking sheet with foil.
  • Trim the ends of the hero rolls by about 1-inch. Pulse the ends in a food processor to make soft bread crumbs. Soak 3/4 cup of the bread crumbs in the milk in a large bowl (save any extra crumbs for another use), about 5 minutes. Gently mix the pork with the soaked bread crumbs, parsley, 2 teaspoons mustard, five-spice, 1 teaspoon salt and a few grinds of pepper. Form into 16 meatballs, each about 1 1/2--inches in diameter.
  • Arrange the meatballs at least 1-inch apart on the prepared baking sheet. Bake until fully cooked through, about 20 minutes. Turn the oven to broil and cook until the meatballs are nicely browned, 3 to 5 minutes.
  • Combine the barbecue sauce, cherry preserves, jalapeños, jalapeño brine, the remaining 1 teaspoon mustard and 1/2 cup water in a large skillet over medium heat. Simmer until slightly thickened, about 10 minutes. Add the cooked meatballs to the sauce and toss to coat.
  • Split the hero rolls. Put some meatballs in each, drizzle with extra sauce, and top with baby arugula.

VIETNAMESE BBQ PORK MEATBALLS (NEM NUONG)



Vietnamese BBQ Pork Meatballs (Nem Nuong) image

1 1/2 pounds lean pork meat, such as loin, trimmed of any gristle or membranes and cut into small dice
1/2 cup finely chopped shallots
3 tablespoons minced garlic
4 teaspoons sugar
2 1/2 tablespoons Vietnamese fish sauce (Nuoc Nam)
1 1/4 teaspoons freshly ground black pepper
5 tablespoons short-grain glutinous rice, such as sushi rice
4 ounces pork fat, cubed
Vegetable oil

Steps:

  • In a small bowl combine the pork, shallots, garlic, sugar, fish sauce and pepper. Stir to combine well, cover, and refrigerate for at least 1 hour and up to overnight. Transfer to the freezer for 30 minutes, or until the mixture is partially frozen.
  • Place the rice in a small skillet and heat over medium-high heat, stirring constantly, until rice is toasted, golden brown and fragrant. Transfer to a plate to cool. When cool, place rice in a coffee grinder and process to a fine powder. Measure 3 tablespoons of the powder and set aside. Save any remaining powder for another purpose or discard.
  • Transfer the partially frozen meat mixture to a food processor and process to a completely smooth but stiff paste. Add the pork fat to the processor and process until smooth or finely chopped. Add the roasted rice powder and pulse several times to combine the mixture. Do not over process or the mixture will become sticky.
  • Preheat a grill to medium-low.
  • Transfer the meat mixture to a small bowl. Lightly oil your hands. Divide meat mixture into heaping 1 1/2 tablespoonfuls and roll each into a smooth ball. Recoat your hands with oil, as necessary. Thread the meatballs onto the bamboo skewers, fitting as many as you can on each skewer.
  • Coat the grill lightly with oil and grill the skewered meatballs, turning occasionally, until cooked through, 20 to 30 minutes. Serve warm or at room temperature.

KOREAN BARBECUE-STYLE MEATBALLS



Korean Barbecue-Style Meatballs image

These meatballs, inspired by traditional Korean barbecue, bring the savory-sweet flavors of caramelized meat without the need for a grill. As the meatballs bake, the soy sauce marries the garlic and scallions to create a glaze. This meatball mixture can be made ahead and left to marinate in the fridge for 3 hours or even overnight. Use ground beef that is 85 percent lean meat, 15 percent fat, or 80 percent lean and 20 percent fat for juicier meatballs. The Ritz crackers here make for a more tender meatball, but feel free to substitute plain dry bread crumbs. The meatballs are tasty on their own, but for a simple dipping sauce, combine 2 tablespoons soy sauce and 1 tablespoon distilled white vinegar. Serve over steamed rice with kimchi, or as a sandwich with mayonnaise or marinara sauce.

When a prominent bourbon company called and asked if we would develop a meatball for them, we were all over it-we had wanted to run a BBQ meatball on the menu since the Shop opened. All that was needed was a Lower East Side (L.E.S.) barbecue sauce, which, when mixed with some sautéed onions and freshly ground pork, became the official recipe for the Shop's BBQ balls. So the next time you want some quick 'cue, instead of slaving over the grill, you can prepare these balls ahead and spend some QT with your guests.

Yield Makes about 2 dozen 1 1/2-inch meatballs

Number Of Ingredients 7

3 tablespoons olive oil
1 small onion, finely diced
2 pounds ground pork
1 cup L.E.S. Barbecue Sauce (page 61)
2 large eggs
3/4 cup bread crumbs
1 teaspoon salt

Steps:

  • Preheat the oven to 450°F. Drizzle 2 tablespoons of the olive oil into a 9 × 13-inch baking dish and use your hand to evenly coat the entire surface. Set aside.
  • Heat the remaining 1 tablespoon olive oil in a medium frying pan over medium-high heat. Add the onions and cook, stirring frequently, until they are soft and well browned, 8 to 10 minutes. Transfer to a plate and let cool in the refrigerator.
  • When the onions have cooled, combine them with the ground pork, barbecue sauce, eggs, bread crumbs, and salt in a large mixing bowl and mix by hand until thoroughly incorporated.
  • Roll the mixture into round, golf ball-size meatballs (about 1 1/2 inches), making sure to pack the meat firmly. Place the balls in the prepared baking dish, being careful to line them up snugly and in even rows vertically and horizontally to form a grid. The meatballs should be touching one another.
  • Roast for 20 minutes, or until the meatballs are firm and cooked through. A meat thermometer inserted into the center of a meatball should read 165°F.
  • Allow the meatballs to cool for 5 minutes in the baking dish before serving.
