SIMPLEST GRILLED PEACHES

Simplest Grilled Peaches image

Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Provided by Sam Sifton

Categories     barbecues, dessert

Time 10m

Yield 4 to 6 servings

Number Of Ingredients 2

4 to 6 peaches
Olive oil

Steps:

  • Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
  • Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
  • Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

PEACH BBQ SAUCE

Peach BBQ Sauce image

Our daughter brought us yellow peaches she cooked in simple syrup, peeled, and jarred. I used them to make this homemade BBQ sauce. It's great for basting, topping, and dipping chicken, pork, beef, etc. I used mine to baste and top chicken drumsticks cooked in an air fryer. It reheats nicely on the stovetop or in the microwave.

Time 15m

Yield 16

Number Of Ingredients 11

5 jarred peaches in simple syrup, drained
1 (6 ounce) can tomato paste
½ cup red wine vinegar
¼ cup Grade A maple syrup
1 (2 inch) piece ginger, peeled and sliced

½ teaspoon ground white pepper
10 pinches Himalayan pink salt

Steps:

  • Add peaches, tomato paste, vinegar, maple syrup, ginger, mustard, garlic, oregano, smoked paprika, pepper, and 10 grinds salt to a food processor. Blend until well combined into a thick sauce, about 1 minute. It's okay if some some flecks of ginger remain.

  • Use right away or cool on the countertop, pour into a container, label, and refrigerate.

  • Heat bands and lids in simmering water. Do not boil. Let them sit in hot water until ready to use.
  • Combine all ingredients in large pan. Bring to boil. Reduce heat and slow boil, stirring frequently, until it has thickened, about 2 hours (sometimes I will even go 3 hours). Use an immersion blender to make the sauce creamy. If you don’t have an immersion blender, transfer to a stand blender. If you think it could still be a little thicker, you can continue to cook until desired thickness, just make sure you turn the heat down and stir often.
