SIMPLEST GRILLED PEACHES
Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Steps:
- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

Steps:
- Cut the peaches in half and remove the pit. Slice each half in half and toss them in a bowl with the vanilla extract, almond extract, and brown sugar. Turn and grill on the other 2 sides until you get nice grill marks, about 1 minute on each side.
- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
PEACH BBQ SAUCE
Our daughter brought us yellow peaches she cooked in simple syrup, peeled, and jarred. I used them to make this homemade BBQ sauce. It's great for basting, topping, and dipping chicken, pork, beef, etc. I used mine to baste and top chicken drumsticks cooked in an air fryer. It reheats nicely on the stovetop or in the microwave.

- Wrap 4 peaches in aluminum foil and place on the less side of the grill for about 30-45 minutes. You want the peaches to be completely soft.
- Once the peaches are fully cooked remove the foil and let cool slightly. Remove the pits and place in your small food-processor. Add salt, pepper, mustard, lemon and honey and butter. Blend. Taste. Keep the sauce in a mason jar with a lid and keep in a warm place until you are ready to eat.

- Sterilize jars in water bath canning pot for 10 minutes. Let them sit in hot water until ready to use.
- Heat bands and lids in simmering water. Do not boil. Let them sit in hot water until ready to use.
- Combine all ingredients in large pan. Bring to boil. Reduce heat and slow boil, stirring frequently, until it has thickened, about 2 hours (sometimes I will even go 3 hours). Use an immersion blender to make the sauce creamy. If you don’t have an immersion blender, transfer to a stand blender. If you think it could still be a little thicker, you can continue to cook until desired thickness, just make sure you turn the heat down and stir often.
