1 Tbsp olive oil
1 clove garlic, minced
2 cups fresh or frozen corn kernels
2 chicken breasts, cooked and shredded (about 2 lbs)
2 1/2 cups chicken stock
1 cup barbecue sauce
1 tsp ground cumin
1/2 tsp salt
1/4 tsp freshly ground black pepper
1-2 tsp chopped fresh cilantro, to taste
Shredded cheddar cheese
Crushed tortilla chips
Chopped fresh cilantro

Steps:

  • Heat olive oil over medium heat in a large Dutch oven or stock pot.
  • Add garlic and saute for 30 seconds. Stir in corn, shredded chicken breast, chicken stock, barbecue sauce, cumin, salt, and pepper.
  • Bring to a boil, stirring occasionally. Reduce heat to simmer and let cook 10 minutes.
  • Stir in the cilantro just before serving. Serve warm with shredded cheese, crushed tortilla chips, and extra chopped cilantro, or your choice of toppings.

2 pounds boneless, skinless chicken thighs and/or breasts
4 cloves garlic (minced)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Freshly ground black pepper (to taste)
8 cups low-sodium chicken broth or stock
1 1/2 cups barbecue sauce
2 cups frozen corn (thawed)
1 (15-ounce) can Navy beans (rinsed & drained)
1/2 cup cilantro leaves (chopped, plus additional for garnish)
Shredded mozzarella cheese
Red onion (finely sliced or diced)
Tortilla chips (crushed)

Steps:

  • Arrange chicken pieces in the bottom of a large soup pot. Add garlic, garlic powder, onion powder, and pepper. Carefully pour the chicken broth and BBQ sauce over the top. Bring to a boil and then reduce to a simmer. Cook, covered, for 10 to 15 minutes or until the chicken is cooked through.
  • Remove the chicken pieces from the broth. Add the corn, Navy beans, and cilantro and bring to a gentle simmer. In the meantime, shred or cut the chicken into chunks, discarding any fat.
  • Return the chicken meat to the pot and adjust the seasonings with salt and pepper, to taste. Serve hot, sprinkled with mozzarella cheese, red onion, additional cilantro, and crushed tortilla chips, as desired.

3 barbecued grilled chicken breasts, shredded
6 -8 cups chicken stock
1 tablespoon vegetable oil
1 large onion, chopped
1 1/2 teaspoons barbecue of the americas seasoning
3 large potatoes, peeled and chopped
1 (28 ounce) can diced tomatoes
1/2 teaspoon garlic powder
2 teaspoons parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Bring chicken stock to a boil.
  • Add the shredded chicken and simmer for 30 minutes.
  • Saute onion and barbecue seasoning in oil until tender.
  • Add onions, potatoes, tomatoes, and remaining seasonings to the soup.
  • Cook until potatoes are tender.

3 boneless, skinless whole chicken breasts
1 teaspoon chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
One 28-ounce can whole or diced tomatoes, with juice
3 cups low-sodium chicken broth (more if you like the soup more liquid)
One 15-ounce can black beans, drained and rinsed
One 10-ounce can diced tomatoes with green chiles, such as Ro*tel
4 ounces tomato paste
1 medium onion, chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 canned chipotle pepper in adobo (you may add 2 to 3 if you like)
1/2 lime, juiced
Fixings: avocado, sour cream, grated cheese, crushed tortilla chips and fresh cilantro leaves

Steps:

  • Put the chicken in a slow cooker. Sprinkle on the chili powder, cumin and some salt and pepper. Add the tomatoes, chicken broth, black beans, tomatoes with chiles, tomato paste, onion, chipotle pepper and red and yellow peppers. Stir, place the lid on the slow cooker and cook for 5 hours on high or 8 hours on low.
  • Stir in the lime juice. Remove the chicken to a plate and use 2 forks to break it into chunks (or shred it finely). Return the chicken to the pot, taste and add more seasoning if necessary.
  • Serve piping hot in a bowl with avocado, sour cream, grated cheese, crushed tortilla chips and cilantro leaves on top!

GRILLED CHICKEN VEGETABLE SOUP

Extra-virgin olive oil
12 to 14 ounces boneless, skinless chicken breast
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/4 cup pearl barley
4 cups reduced-sodium chicken broth
1 bay leaf
1 carrot, finely chopped
1 rib celery, finely chopped
1 small zucchini, finely chopped

Steps:

  • Heat a grill pan over high heat for 5 minutes.
  • Rub a little olive oil all over the chicken breast and sprinkle all over with salt and pepper. Reduce the heat to medium-high and grill the chicken until cooked through, turning once, about 12 minutes. Set aside and keep warm.
  • Fill a small saucepan with 1/2 cup water, bring to a boil, add some salt, and cook the barley according to package instructions, until tender. Drain and rinse.
  • Bring the chicken broth and bay leaf to a simmer in a medium saucepan. Add the carrot, celery and zucchini. Cook until just tender, about 5 minutes. Discard the bay leaf.
  • Place the chicken breast on a cutting board and slice crosswise into thin slices. Spoon the vegetables and barley into serving bowls, then add the hot broth. Lay several slices of chicken over the surface of each bowl.

½ medium onion (85 g, diced)
1 medium carrot (55 g, diced)
1 bell pepper (85 g, diced (any color))
3 cloves garlic (minced)
½ teaspoon salt
¼ teaspoon pepper
¼ teaspoon red pepper flakes
4 cups low-sodium chicken stock
12 ounces cooked chicken (see note)
1 cup frozen corn
½ cup barbecue sauce

Steps:

  • Heat oil in a large pot over medium heat. Add the onions, carrots, and bell peppers. Cook until soft, 3-4 minutes. Add the garlic, salt, pepper and red pepper flakes and cook 30 seconds.
  • Add the chicken stock and cover. Bring to a boil and let cook for 5 minutes.
  • Add chicken and corn, bring the soup back to a boil, then stir in barbecue sauce and cook until hot. Add additional salt and pepper to taste. Serve immediately.
  • Serving suggestion: Top with cilantro, diced green onions, and tortilla strips.
  • Store leftovers in the refrigerator for up to 3 days.

Use up leftover chicken in this rustic soup with garlic yogurt. Best served with cheese scones

1 tbsp olive oil
2 onions, chopped
3 medium carrots, chopped
1 tbsp thyme leaves, roughly chopped
1.4l chicken stock
300g leftover roast chicken, shredded and skin removed
200g frozen peas
3 tbsp Greek yogurt
1 garlic clove, crushed
squeeze of lemon juice
cheese scone, to serve (see tips below)

Steps:

  • Heat the olive oil in a large heavy-based pan. Add the onions, carrots and thyme leaves, then gently fry for 15 mins.
  • Stir in 1.4l chicken stock, bring to a boil, cover, then simmer for 10 mins.
  • Add the leftover roast chicken, remove half the mixture, then purée with a stick blender. Tip back into the pan with the rest of the soup, the peas and seasoning, then simmer for 5 mins until hot through.
  • Mix the Greek yogurt, garlic and lemon juice together. Ladle the soup into bowls, swirl in the garlic yogurt, then serve.
  • If you want to use a slow cooker, gently fry the onions, carrots and thyme leaves for 15 mins, then tip them into the slow cooker with 1 litre stock. If you're using a chicken carcass, add it now. Cover and cook for 2-3 hours on High until the veg is tender. If you used a carcass, remove it now, shredding any remaining chicken from the bones. Stir back into the soup, or add the leftover roast chicken and frozen peas. Cook for 30 mins more. Remove half the mixture and purée with a stick blender, then serve as above.

1/3 cup diced onion

1 can (15.25 oz) Southwestern style corn (corn with peppers)
1 can (15.5 oz) white beans, drained, rinsed
5 cups Progresso™ chicken broth (from two 32-oz cartons)
1 cup barbecue sauce
1 teaspoon salt
1/2 teaspoon pepper
Shredded Cheddar cheese, if desired

Steps:

  • In 6-quart slow cooker, add chicken breast, onion, garlic, corn and white beans.
  • In large bowl, mix broth, barbecue sauce salt and pepper. Pour into slow cooker. Cover; cook on Low heat setting 6 hours.
  • Remove chicken breast from slow cooker, and shred using two forks. Place back into slow cooker. Cover; cook 30 minutes.
  • Serve soup topped with shredded cheese.
