Time 30m

Number Of Ingredients 21

1 Tbsp cooking oil ($0.04)
2 cloves garlic, minced ($0.16)
1/2 lb. ground beef ($2.65)
1 15oz. can kidney beans ($0.89)
1 15oz. can black beans ($0.89)
8 oz. tomato sauce ($0.25)
2 Tbsp tomato paste ($0.10)
2 Tbsp apple cider vinegar ($0.12)
2 Tbsp brown sugar ($0.08)
2 Tbsp molasses ($0.35)
1/2 Tbsp Dijon mustard ($0.05)
1 tsp Worcestershire sauce ($0.02)
1 tsp smoked paprika ($0.10)
1/4 tsp garlic powder ($0.02)
1/4 tsp onion powder ($0.02)
1/8 tsp cayenne pepper ($0.01)
freshly cracked pepper ($0.02)
salt to taste ($0.02)
4 cups cooked rice ($0.80)
4 oz. shredded cheddar ($0.85)
2 green onions, sliced ($0.22)

Steps:

  • Add the oil and minced garlic to a large skillet. Sauté the garlic for one minute over medium heat. Add the ground beef and continue to sauté until cooked through. If using a higher fat content beef, drain the excess fat before moving on to the next step.
  • Rinse the two cans of beans, then drain them well. Add the beans to the skillet with the ground beef.
  • Add the ingredients for the Homemade BBQ Sauce to the skillet (tomato sauce, tomato paste, apple cider vinegar, brown sugar, molasses, Dijon, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cayenne, and some freshly cracked pepper).
  • Stir and cook the mixture until the sauce ingredients have combined and created a thick sauce. Allow the sauce to come up to a simmer and then simmer the beef and beans in the sauce for 5 minutes, stirring often. Taste the sauce and add salt to taste (I added 1/2 tsp).
  • To serve the BBQ Beef and Beans, place 1 cup cooked rice in each bowl, top with 1 cup of the BBQ Beef and Beans, then top with about 1/4 cup shredded cheddar and a sprinkle of sliced green onion.

COWBOY BAKED BEANS

Cowboy baked beans image

My Best BBQ Baked Beans with Beef is one of my families favorite recipes this year, it's been a huge hit!

Provided by Noshtastic

Categories     Side Dish

Time 1h20m

Number Of Ingredients 12

1 lb lean ground beef (453g)
4 slices bacon (chopped)
1 small onion (chopped)
1 tablespoon gluten free Worcestershire sauce
1/4 cup brown sugar
1/4 cup molasses
1 tbsp yellow mustard
1/2 ccup gluten free barbecue sauce
1/4 tsp ancho chili powder
1 16 oz can kidney beans (drained)
1 16 oz can cannellini beans (drained)
1 16 oz can great northern beans (drained)

Steps:

  • I use lean ground beef for this recipe so I don't pour off any liquid or fat from it after it's cooked as I think you lose some flavor that way. If you have ground beef with a high fat content you may prefer to cook the ground beef on it's own first and then drain the fat, it's up to you.
  • Cook the lean ground beef, bacon pieces, and chopped onion in a dutch oven until the beef and bacon are cooked, about 7- 10 minutes.
  • Add remaining ingredients and stir well.
  • cover and bake at 350 degrees for 1 hour, serve hot.
  • Please watch the recipe video first! it's right below the directions.

BBQ BAKED BEANS

BBQ Baked Beans image

No Southern BBQ is complete without baked beans! Beef, peppers, onions, and a dose of Sweet BBQ Pit Sauce provide a terrific complement for smoked meats.

Provided by Sam Jones

Categories     side-dish

Time 1h30m

Yield 15 servings

Number Of Ingredients 19

2 teaspoons kosher salt
1 2/3 cups sugar
1 teaspoon chili powder
1 tablespoon paprika
1 teaspoon freshly ground black pepper
3/4 teaspoon garlic salt
1 teaspoon onion powder
1 1/2 cups light brown sugar
2 3/4 cups ketchup
1 stick unsalted butter, melted, 4 oz
1 1/4 cups Water
1 1/2 cups apple cider vinegar
1 teaspoon Worcestershire sauce
1/2 large red onion
1/2 green bell pepper
1 tablespoon vegetable oil
2/3 pound ground beef, preferably 80% lean
48 ounces canned, unseasoned "pork and beans," drained, pinto beans with pork
2 cups Sweet BBQ Pit Sauce, from Step 1

Steps:

  • Sweet BBQ Pit Sauce: In a saucepan, combine the dry ingredients and mix well to break up any lumps. Add ketchup, melted butter, water, vinegar, and Worcestershire sauce. Bring sauce to a simmer over low heat. Continue to simmer, stirring the entire time until the sauce has reduced and thickened, about 15 minutes. (Keeping the heat low helps prevent the butter from separating and the sugar from burning.)
  • Sauce is done when it thinly coats a spoon and has reduced by about ⅓. Cool to room temperature, stirring occasionally so it doesn't stick to the bottom. Store in a covered container in the refrigerator. (It will keep for months, thanks to the vinegar.) Makes about 3 cups of Sweet BBQ Pit Sauce.
  • Prepare the vegetables and beef: Trim onion and pepper, then cut into chunks. Dice using a vegetable chopper, or use a knife to small dice (¼-inch pieces). Heat oil in a medium-sized skillet over medium heat. Sauté onion and pepper until softened, 6-8 minutes. Add ground beef, stir to break up meat, and continue cooking until meat is no longer pink, 6-8 minutes. Drain fat from skillet and set ground beef mixture aside.
  • Preheat oven to 375 F. In a large bowl, add ground beef mixture and Sweet BBQ Pit Sauce to the drained beans; stir to combine. Place in a 13x9-inch baking dish and cover with foil. Bake until brown and bubbly, 20-30 minutes. (Alternatively, a thermometer placed into the center of the beans should register 160 F.)
  • Remove dish from oven and remove foil. Stir and serve. Note: This is a great dish to make ahead of time. Vegetable-beef mixture can be cooked and refrigerated up to two days in advance. On the day of serving, simply mix bean ingredients (Pitmaster Jones calls this a "bean set") and bake as directed. Since you're reheating meat, use a digital thermometer to make sure the beans reach 160-165 F for safe consumption.
