BBQ BEEF AND BEANS

Steps:
- Add the oil and minced garlic to a large skillet. Sauté the garlic for one minute over medium heat. Add the ground beef and continue to sauté until cooked through. If using a higher fat content beef, drain the excess fat before moving on to the next step.
- Rinse the two cans of beans, then drain them well. Add the beans to the skillet with the ground beef.
- Add the ingredients for the Homemade BBQ Sauce to the skillet (tomato sauce, tomato paste, apple cider vinegar, brown sugar, molasses, Dijon, Worcestershire sauce, smoked paprika, garlic powder, onion powder, cayenne, and some freshly cracked pepper).
- Stir and cook the mixture until the sauce ingredients have combined and created a thick sauce. Allow the sauce to come up to a simmer and then simmer the beef and beans in the sauce for 5 minutes, stirring often. Taste the sauce and add salt to taste (I added 1/2 tsp).
- To serve the BBQ Beef and Beans, place 1 cup cooked rice in each bowl, top with 1 cup of the BBQ Beef and Beans, then top with about 1/4 cup shredded cheddar and a sprinkle of sliced green onion.

- I use lean ground beef for this recipe so I don't pour off any liquid or fat from it after it's cooked as I think you lose some flavor that way. If you have ground beef with a high fat content you may prefer to cook the ground beef on it's own first and then drain the fat, it's up to you.
- Cook the lean ground beef, bacon pieces, and chopped onion in a dutch oven until the beef and bacon are cooked, about 7- 10 minutes.
- Add remaining ingredients and stir well.
- cover and bake at 350 degrees for 1 hour, serve hot.

- Set oven to 350°F.
- Grease a 3-quart baking dish.
- In a Dutch oven brown the beef with onion, garlic and chili flakes, stirring with a wooden spoon to crumble the beef.
- Cook beef until no longer pink; drain fat.
- Stir in bacon and all remaining ingredients; heat until simmering, adjusting seasoning to taste.
- Transfer into prepared baking dish.
- At this point you can chill for a minimum of 8 hours and then bake later.
- Bake for about 1 hour, stirring occasionally.
GRANNY'S BBQ BEANS
Steps:
- Heat a smoker for cooking at 225 degrees F.
- Add pork and beans, black beans, kidney beans and butter beans to a foil pan and set aside.
- Brown the beef in a large skillet, then drain the grease and add the beef to the beans. Cook the bacon in the same skillet, then add the bacon to the beans. Add the ketchup, brown sugar, vinegar, onion, jalapeños, salt and pepper to the beans.
- Place the foil pan in the smoker and let smoke until there is a nice bark covering the top of the beans, 4 to 5 hours.

- Cut roast in half. Place in a 5-qt. slow cooker. - Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2 1/2-quart baking dish.

- Cook and stir the ground beef in a large skillet over medium-high heat until evenly browned; drain. Combine the onion and garlic in the skillet with the beef, and cook until the onion becomes transparent, 3 to 4 minutes. Stir the salt , pepper, garlic powder, onion powder, and parsley into the beef mixture; cook 1 to 2 minutes.
- Stir the canned beans into the beef mixture. Add the mustard, brown sugar, Worcestershire sauce, and barbecue sauce and stir until blended. Taste and season with additional salt and pepper, if desired. Lower heat to medium-low and simmer mixture for 30 minutes to thoroughly combine flavors.

No Southern BBQ is complete without baked beans! Beef, peppers, onions, and a dose of Sweet BBQ Pit Sauce provide a terrific complement for smoked meats.

- Sweet BBQ Pit Sauce: In a saucepan, combine the dry ingredients and mix well to break up any lumps. Add ketchup, melted butter, water, vinegar, and Worcestershire sauce. Bring sauce to a simmer over low heat. Continue to simmer, stirring the entire time until the sauce has reduced and thickened, about 15 minutes. (Keeping the heat low helps prevent the butter from separating and the sugar from burning.)
- Sauce is done when it thinly coats a spoon and has reduced by about ⅓. Cool to room temperature, stirring occasionally so it doesn't stick to the bottom. Store in a covered container in the refrigerator. (It will keep for months, thanks to the vinegar.) Makes about 3 cups of Sweet BBQ Pit Sauce.
- Prepare the vegetables and beef: Trim onion and pepper, then cut into chunks. Dice using a vegetable chopper, or use a knife to small dice (¼-inch pieces). Heat oil in a medium-sized skillet over medium heat. Sauté onion and pepper until softened, 6-8 minutes. Add ground beef, stir to break up meat, and continue cooking until meat is no longer pink, 6-8 minutes. Drain fat from skillet and set ground beef mixture aside.
- Preheat oven to 375 F. In a large bowl, add ground beef mixture and Sweet BBQ Pit Sauce to the drained beans; stir to combine. Place in a 13x9-inch baking dish and cover with foil. Bake until brown and bubbly, 20-30 minutes. (Alternatively, a thermometer placed into the center of the beans should register 160 F.)
- Remove dish from oven and remove foil. Stir and serve. Note: This is a great dish to make ahead of time. Vegetable-beef mixture can be cooked and refrigerated up to two days in advance. On the day of serving, simply mix bean ingredients (Pitmaster Jones calls this a "bean set") and bake as directed. Since you're reheating meat, use a digital thermometer to make sure the beans reach 160-165 F for safe consumption.

- In 3 1/2- to 4-quart slow cooker, mix onion and bacon. Top with beef. Pour barbecue sauce over beef.
