BASIL GRILLED CHICKEN SANDWICHES WITH RED PEPPER RELISH
Basil lovers unite!!! This one is for you! Great tasty sandwich, lower in calories and high in protein ans quick. Equally as good hot or cold also. From a fitness website. Note cooking time doesnt include chicken marinading time, and the relish can be done ahead.

Steps:
- Mix the (first 4 ingredients) yogurt, lemon juice and zest, garlic and basil together in a large mixing bowl.
- Add the chicken and coat it evenly with the yogurt mixture.
- Cover and refrigerate for at least 1 hour or overnight.
- Meanwhile, prepare the red pepper relish. Heat the olive oil in a small skillet over medium heat.
- Add the raw red pepper, onion and garlic and season with salt and pepper.
- Cook until the vegetables soften, about 5 minutes.
- Add the roasted red peppers and balsamic vinegar and cook for 5 more minutes.
- Remove from heat, cool and stir in the basil.
- This can be stored in the refrigerator for up to 1 week.
- For the chicken preheat the grill to high heat.
- Remove the chicken from the marinade and discard the marinade.
- Season the chicken with salt and pepper.
- Grill the chicken on both sides until it is cooked through, about 6 to 8 minutes per side.
- Let the chicken cool slightly and slice it on the bias.
- For the sandwiches spread 4 halves of the focaccia with some of the red pepper relish, then top with sliced chicken and arugula.
- Finish the sandwiches with a dollop of relish and the other half of the focaccia.

SALAMI, MOZZARELLA AND ROASTED RED PEPPER SANDWICH
Steps:
- Use a serrated knife to cut the Italian sub roll in half. Place sub roll on butcher or wax paper and drizzle both sides with a really nice olive oil.
- Add mozzarella to one-half and sprinkle with salt. Next, add roasted red peppers, genoa salami, and a handful of fresh washed basil.
- Close the sandwich and tightly wrap the butcher or wax paper around it. Roll and cut down the middle. Serve immediately or wrap it up for later. The sandwich is good for 24 hours if refrigerated properly.

- Process Country Crock® Spread, basil and garlic in food processor or blender until almost smooth.
- Spread 2 slices bread with basil butter. Top with spinach, roasted pepper, mozzarella, and remaining bread slices.
- To cook in panini press: Preheat the press. Add sandwich and cook according to the manufacturer's instructions until golden and crisp, 3 to 5 minutes. Repeat with remaining sandwich.
- To cook in skillet: Melt 1 tablespoon Country Crock® Spread over medium heat in skillet and add sandwiches to skillet. Place a heatproof plate on top of sandwiches and weigh down with heavy heat-proof object. Cook sandwiches 3 to 4 minutes or until golden. Turn sandwiches over and weigh down with plate. Cook 3 minutes or until golden and cheese is melted.

- How to roast red peppers: Preheat oven to 475 degrees F. Cut peppers in half, remove stems and seeds, place baking sheet lined with a Silpat or parchment paper cut side down. Roast on middle rack for 40 minutes, rotating baking sheet 180 degrees after 20 minutes. Peppers are ready when blackened and blistered. Using tongs place hot peppers in a bowl and cover with a large plate, let steam for 30 minutes. Once cooled, peel skin away from bottom to top. Discard peels. Peppers are now ready to be used. - Bread: Just before assembling your sandwiches, get your bread ready, if toasting go ahead and do so.
- Assemble: Spread hummus on one slice of bread. Take the back of a fork and mash 1/2 avocado in its skin. Spread avocado on the other slice. Layer with the leafy greens, tomato, cucumber, red bell pepper, onion, basil and a sprinkle of mineral salt & fresh cracked pepper.
