1 1/2 cups salsa
15 ounce can chili with beans
8 ounce tub of sour cream
1 cup freshly diced tomatoes
3/4 cup drained and sliced black olives
shredded lettuce
1 cup shredded cheddar cheese
1 packet taco seasoning

Steps:

  • Preheat oven to 350 F.
  • Spread crushed tortilla chips in the bottom of a 9x13 baking dish.
  • Brown ground beef and drain the fat off. Add taco seasoning then mix the salsa and chili beans in with the ground beef. Spread over tortilla chips. Bake for 15-20 minutes.
  • Top with sour cream, lettuce, tomatoes, cheese and olives. Serve immediately.

½ cup water
1 cup sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

1 chopped onion
1 package package taco seasoning mix (plus the water indicated on the package)
1 10 ounce can Rotel ( not drained)
1 2.25 ounce can sliced black olives
1 15 ounce can of corn (drained)
4 taco size flour tortillas
2 cups cheddar cheese (divided)

Steps:

  • Preheat oven to 350 degrees.
  • Place the ground beef in a skillet along with the onions and cook until beef is browned and onions are tender.
  • Stir in the package of taco seasoning along with the amount of water indicated on the package directions. Cook for 8-10 minutes.
  • Mix in the Rotel, olives and corn in with the beef. Cook for another 2-3 minutes.
  • Spray the bottom of a 9x13 dish with nonstick spray. Place tortillas on the bottom of the dish.
  • Spread half of the meat mixture evenly over the tortillas. Next, sprinkle one cup of cheese over the meat layer. Then add another layer of tortillas, the rest of the meat on top of the tortillas and the last cup of cheese on top of the meat.

1 small onion, minced
2 garlic cloves, minced
1 tablespoon chili powder

14 ounces pinto beans, drained
1 cup corn kernel
10 ounces tortilla chips
2 cups monterey jack cheese, shredded

Steps:

  • Brown meat, onion and garlic in large skillet until no pink remains and onion is clear. Drain grease.
  • Add spices, tomatoes, beans and corn and mix well.
  • Continue to cook over medium heat until some of the liquid has evaporated. You want a little liquid but not alot- like a sloppy joe mixture.
  • In an 8x8 greased pan crush a handful of chips and place on the bottom of the pan, adding more chips until you have a good layer. **** I like to get it as dry as possible here so that it holds together like a lasagna. PLEASE use your taste and judgment here and make it as dry or as liquid as you like. :)
  • Layer meat mixture on top of chips.
  • Crush some more chips and place on top of meat. Press down on chip layer to draw some moisture into the top layer of chips.
  • Top with cheese.
  • Bake at 350F for about 20 minutes or until cheese is thoroughly melted.

  • When ground beef is cooked drain the fat, lower to medium heat and then add the mashed pinto beans and the packet of taco seasoning (you could also use any one of zaars taco seasoning recipes as a substitution). You may need to add a few tablespoons of water to mix it all together smoothly.
  • If using the onion and/or green chillis add them at this time.
  • Let this heat through and then spoon evenly into the prepared baking dish.
  • Mix the cottage cheese and taco sauce together spread over the taco mixture.
  • Sprinkle with cheese of your choice and cover with foil.
  • Bake for about 30-40minutes til hot and bubbly remove cover and bake an additional 5 minutes if needed.
  • Let rest 15 minutes before serving.

I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion.
