This cookie recipe from my 91-year-old grandmother was my grandfather's favorite. She still makes them and sends us home with the dough so that we can make more whenever we want, I love to make a fresh batch when company drops in. -Chris Paulsen, Glendale, Arizona

Number Of Ingredients 9

1/2 cup butter, softened
1 cup packed brown sugar
1 large egg, beaten
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1/2 teaspoon salt
1 cup chopped walnuts, optional

Steps:

  • In a bowl, cream the butter and brown sugar. Add egg and vanilla; beat well. Combine dry ingredients; add to creamed mixture. Stir in nuts if desire. , On a lightly floured surface, shape the dough into three 10-in. x 1-in. rolls. Tightly wrap each roll in waxed paper. Freeze for at least 12 hours. , Cut into 3/8-in. slices and place on greased baking sheets. Bake at 350° for 6-8 minutes. Remove to a wire rack to cool.

This is my adopted recipe as of Feb 2005. I made these today and found very good. A very delicate cookie. I didn't leave enough room between the cookies in the first batch and they ran into each other when baking. They still taste good. The original poster describes below where she got the recipe. The Lemon Lovers Cookbook The Chicago Sun-Times Peg Bailey has a passion for lemons. The recipes are never overly complicated, and most are ideal for weekday cooking. Exotic fare such as Aegean shrimp and caviar mousse exist peacefully with all-American staples such as carrot cake and lemon bars. Easy Refrigerator Lemon Cookies These cookies are great in the summer with a bowl of fresh fruit. Plan ahead, though, as you have to leave the dough in the refrigerator for several hours before baking.

1 large lemon, zest of
1 cup granulated sugar
1 cup butter, chilled and cut into pieces (2 sticks)
2 1/3 cups cake flour, sifted
1/2 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • Process the lemon zest and sugar in a food processor until the zest is as fine as the sugar.
  • Add the butter.
  • Process until fluffy.
  • Scrape down the bowl.
  • Add the flour, baking soda and salt. Process briefly until mixed.
  • Form dough into two 1-1/2-inch-round logs and wrap each in wax paper.
  • Refrigerate until firm.
  • Preheat the oven to 350°.
  • Slice each log into 1/4-inch thick cookies and place on an ungreased baking sheet. Bake for 8 to 10 minutes, until golden around the edges.
  • Do not overbake.

5 cups all-purpose flour
1 teaspoon baking soda
1 tablespoon ground cinnamon
1 pound margarine
1 cup white sugar
1 cup light brown sugar
3 eggs
1 cup chopped nuts

Steps:

  • In a bowl, whisk the flour, baking soda, and cinnamon together until evenly blended; set aside. Beat the margarine, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. Add the eggs one at a time, allowing each egg to blend into the margarine mixture before adding the next. Mix in the flour mixture until just incorporated. Fold in the chopped nuts; mixing just enough to evenly combine.
  • Scrape the dough onto a sheet of waxed paper, and form into a log. Roll tightly in the waxed paper, and refrigerate until firm, about 4 hours.
  • Preheat an oven to 350 degrees F (175 degrees C). Spray baking sheets with cooking spray.
  • Unwrap the dough, and cut into 1/4-inch slices. Place the cookies onto baking sheets, spaced 1-inch apart. Bake in the preheated oven until the edges are golden, 8 to 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

I found this recipe on a website for diabetics, but don't tell anyone and they'll love it when they try it. It is my favorite cookie recipe with sugar or without. At first the nutritionals seemed way off but discovered there were some errors in the quantities. I'm correcting those so the nutritional info should be correct.

1/2 cup butter or 1/2 cup margarine
1 large egg
2 teaspoons vanilla
1 teaspoon baking powder
1 dash salt
1 cup flour
1/4 cup dates, unsugared, chopped
1/4 cup coconut, shredded
1/4 cup pecans or 1/4 walnuts

Steps:

  • Cream butter, egg and vanilla until mixed and fluffy.
  • Beat in dry ingredients gradually mixing well after each addition.
  • Mix in dates, coconut and 1/2 cup of the nuts.
  • Form dough into two 1-1/2 inch logs.
  • roll logs into remaining nuts (1/4 cup each).
  • Wrap in waxed paper and chill (or freeze) until firm enough to slice.
  • Preheat oven to 350°.
  • Slice cookies 1/4-inch thick and place on a nonstick cookie sheet.
  • bake 10-12 minutes until light golden brown.
  • cool on wire racks.
  • 2 cookies = 1 fat, 1/2 fruit, 1/4 bread, 95 calories.

1 cup shortening
1 cup white sugar
2 eggs
1 ½ teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon salt
½ teaspoon baking soda
⅓ cup colored sugar for decoration

Steps:

  • Mix shortening, sugar, eggs, and vanilla together in large bowl. Stir flour, salt, and baking soda together in a separate bowl. Blend dry ingredients in with the shortening mixture. Mix thoroughly with hands.
  • Divide dough into 3 parts; shape into cylinders, 1 1/2 inches in diameter and about 7 inches long. Roll in colored sugar (or use finely chopped nuts instead). Chill for several hours or overnight.
  • Heat oven to 400 degrees F (205 degrees C). Cut into 1/4 inch slices, and place on greased cookie sheets. Bake for 8 to 10 minutes. Cool.
