EASY BASIC MEATBALLS

This is originally from the Betty Crocker cookbook. My 3rd and 4th grade daughters are learning to cook and this is simple enough for them, but turns out well enough to serve to guests. (When they use this recipe, they usually sub 1/4-1/2 tsp onion powder for the chopped onion.) It's also a very versatile recipe: sometimes we also add other spices -- oregano, basil, thyme for Italian food or cinnamon and mint for Greek food.) We always oven-bake these, though there are also pan-fry and microwave options in the cookbook that we've not tried. Also good to cook ahead and freeze for later use.

1 lb ground beef (we also use ground turkey)
1/2-2/3 cup dry breadcrumbs (can also use seasoned crumbs)
1/4 cup milk
1/4-3/4 teaspoon salt (optional)
1/2 teaspoon Worcestershire sauce
1 small onion, chopped (approx 1/4 c)
1 egg

Steps:

  • Combine all ingredients and shape into 20-24 meatballs (1 to 1-1/2 inches each).
  • To oven bake: preheat oven to 375 degrees F. Place in ungreased 9x13 pan (you may want to line it with foil for easier clean-up).
  • Bake 20-25 min or until light brown and cooked through; turn meatballs halfway through, if desired, to help maintain a round shape.
  • To pan fry: Cook in skillet on medium heat, turning as needed, until brown (approx 20 min).
  • To microwave: Place in micro-proof 12x7 pan and cover loosely.
  • Micro on high for 3 minutes; rearrange meatballs.
  • Cover again loosely and micro until brown inside, approx 5-7 min more.
  • Let stand covered for 3 minutes.

  • Preheat oven to 350 degrees.
  • In large bowl combine egg, water, bread crumbs, onion, salt and pepper and combine. Add ground beef, broken into chunks, and mush with your hands to combine.
  • Form into meatballs about 1" in diameter and place on a broiler pan.
  • Bake at 350 degrees for 25-30 minutes until meatballs are no longer pink in center.
  • Cool and use or freeze.

1 1/2 cups plain breadcrumbs
1/2 cup milk
1/4 cup heavy cream
1/4 cup chopped fresh flat-leaf parsley
2 tablespoons grainy mustard
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
4 large eggs
2 tablespoons olive oil

Steps:

  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer.

2 garlic cloves, minced
1 large egg
1 pound ground beef chuck
1/4 cup plain dried breadcrumbs

1 can (28 ounces) crushed tomatoes in puree
3/4 pound spaghetti

Steps:

  • Set a large pot of salted water to boil. In a bowl, combine Parmesan, parsley, garlic, egg, 1 teaspoon salt, and 1 teaspoon pepper. Add beef and breadcrumbs; mix gently. Form into 16 balls.
  • In a 5-quart Dutch oven or heavy pot, heat oil over medium. Add meatballs, and cook, turning occasionally, until browned, 8 to 10 minutes. Add tomatoes; bring to a boil. Reduce to a simmer; cover partially, and cook, stirring occasionally, until meatballs are cooked through, 10 to 12 minutes.

1 medium free-range egg
2 tbsp fresh or dried breadcrumbs
1 tsp dried mixed herbs
1 garlic clove

1 tsp caster sugar

150g/5½oz spaghetti

Steps:

  • Put the beef, egg, breadcrumbs and herbs into a large bowl. Peel and finely grate the garlic then add to the bowl. Work the mixture together with your hands until thoroughly mixed. Season with salt and pepper. Roll the mixture into 10 equal-sized balls.
  • Heat the oil in a large frying pan over a medium-high heat. Fry the meatballs in batches for 8 minutes until golden-brown all over. Return all of the meatballs to the pan then pour over the chopped tomatoes, mixed herbs and sugar. Peel and grate the garlic, add to then pan then cook over a medium heat for 8-10 minutes.
  • While the meatballs are cooking, bring a large pan of salted water to the boil. Add the spaghetti and cook for 10-12 minutes or according to the packet instructions. Just before the spaghetti is ready, add a ladleful of the pasta water to the tomato sauce to thin it down, if necessary.
  • Drain the spaghetti and add to the pan with the meatballs. Toss to combine then divide between two serving bowls.

2 slices good-quality white bread, crusts removed, cut in small pieces
1/4 cup milk
1/2 pound ground veal
1/2 pound ground pork
1/2 medium onion, finely chopped
3 small cloves garlic, minced
Zest of 1/2 lemon
8 sprigs fresh flat-leaf parsley, chopped
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
1 tablespoon olive oil

Steps:

  • Place bread in a bowl; pour milk over it. In another bowl, mix veal and pork. Add onion, garlic, zest, and parsley. Add salt and pepper. Mash bread mixture to form paste; add to meat mixture. Mix; add egg. Combine well. Cover with plastic wrap; chill 1 hour.
  • Preheat oven to 350 degrees. Form mixture into twelve to sixteen 1 1/2-inch balls. Heat 1/2 tablespoon oil in a skillet over medium heat. Saute half the meatballs until brown, a few minutes on each side. Transfer to a pan big enough to hold all the meatballs. Repeat with remaining oil and meatballs. Repeat with remaining oil and meatballs. Place in oven to finish cooking, about 20 minutes. Serve.

1/2 medium onion, grated
3 large garlic cloves, grated
1 large egg
1/4 cup panko breadcrumbs
1 tsp kosher salt

Steps:

  • Preheat oven to 400 degrees. Line a large rimmed baking sheet with parchment paper.
  • Cut the chicken into 1-inch pieces. Palce in the food processor. Pulse until the chicken is starting to grind. Leave the mixer on and let the meat grind. It should take about 1-2 minutes.
  • Once the meat is ground, remove the blade. Add in the grated onion, grated garlic, egg, panko, and salt. Use hands to gently combine everything together. Do not overmix.
  • Use a small cookie or ice cream scoop to form the chicken mixture into 25 meatballs. Place on the parchment-lined baking sheet. Damp hands with cold water. Roll into uniform meatballs. Place in the oven and bake until golden brown and cooked through, about 12-15 minutes.
  • Serve right away or cool completely and store in an airtight containter. Freeze for up to two months.

300g good-quality pork sausage (about 4 large or 8 chipolatas)
1 small onion
1 carrot
1 tbsp dried oregano
500g lean beef mince
50g parmesan , finely grated, plus extra to serve
75g dried breadcrumb
1 medium egg
1 tbsp olive oil
1 carrot (finely grated)
2 sticks of celery (grated)
1 courgette (coarsely grated)
3 garlic cloves (finely grated)
2 red peppers
1 tbsp olive oil
1 tbsp tomato purée
pinch golden caster sugar
splash red wine vinegar
3 x 400g tins chopped tomatoes
cooked spaghetti , to serve
handful basil leaves , snipped

Steps:

  • KIDS the writing in bold is for you. GROWN-UPS the rest is for you. Squeeze some sausages. Get your child to squeeze all the sausagemeat out of the skins into a large bowl. They can hold the sausages or do it by squashing them on a board.
  • Get grating. Get your child to coarsely grate the onion and finely grate the carrot. If the onion starts to hurt their eyes, get them to wear goggles, which is good fun. Grating can take a bit of strength, so you may need to help. Tip these vegetables in with the sausages. While you have the grater out, grate the Parmesan, other vegetables and garlic for the sauce, and set aside.
  • Make a marvellous mix. Next, get your child to add all the other meatball ingredients one by one, except the olive oil, into the bowl and season with black pepper.
  • Squish everything together. Get the child to squish everything together through their hands until completely mixed. Keep an eye on younger children to make sure that they don't taste any of the raw mix.
  • Roll meatballs. Children as young as three can now roll the meatball mix into walnut-sized balls, then place them on a board or tray. This mix should make 40 balls - counting these is great way to help teach older children basic division. Cover the meatballs with cling film and have a little tidy up.
  • Prepare the red peppers. Firstly, peel the peppers with a vegetable peeler, cut off the tops and bottoms and remove the seeds. Cut the peppers in half and children from the age of four can cut the peppers into strips.
  • Make the sauce. A grown-up will need to help here. Heat the oil in a large saucepan. Add the vegetables and garlic and cook for 5 mins. Stir in the tomato purée, sugar and vinegar, leave for 1 min then tip in the tomatoes and simmer for 5 mins. Get the child to help blitz the sauce with a hand blender. Gently simmer the sauce while you cook the meatballs.
  • Cook the meatballs. Brown the meatballs in the olive oil on all sides then pop them into the sauce, working in batches if necessary. Simmer the meatballs in the sauce for 15 mins, gently stirring until they are cooked through. It's ready to eat now or cool and freeze in suitable batches for up to 6 months. Serve with spaghetti, some basil and extra Parmesan, if you like.

  • Preheat oven to 400*.
  • Mix all ingredients well.
  • (Just use your hands*S*).
  • Shape into balls, makes about 15- 20.
  • (Depending on preference of size).

  • (You will know when they are done by color of juices. When fully cooked, juice will go from pink to clear.).

Homemade meatballs are fun and quick to make. This is a simple and delicious recipe that uses ground beef and onion and bakes them in the oven.

Extra-virgin olive oil
1 large onion, 1/4-inch dice
Salt
2 cloves garlic, smashed and chopped
Pinch crushed red pepper
1/2 pound ground beef
1/2 pound ground veal
1/2 pound ground pork
2 large eggs
1 cup grated Parmigiano
1/4 cup finely chopped fresh Italian parsley leaves
1 cup breadcrumbs
1/2 cup water
Marinara Sauce, recipe follows
1/4 cup extra-virgin olive oil
1/4 pound diced pancetta
2 large Spanish onions, cut into 1/4-inch dice
Kosher salt
4 large garlic cloves, smashed and chopped
4 (28-ounce) cans Italian plum San Marzano tomatoes

Steps:

  • Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Season the onions generously with salt and cook for about 5 to 7 minutes. The onions should be very soft and aromatic but have no color. Add the garlic and the crushed red pepper and saute for another 1 to 2 minutes. Turn off heat and allow to cool.
  • In a large bowl combine the meats, eggs, Parmigiano, parsley and bread crumbs. It works well to squish the mixture with your hands. Add the onion mixture and season generously with salt and squish some more. Add the water and do 1 final really good squish. The mixture should be quite wet. Test the seasoning of the mix by making a mini hamburger size patty and cooking it. The mixture should taste really good! If it doesn't it is probably missing salt. Add more. Add more anyway.
  • Preheat the oven to 350 degrees F.
  • Shape the meat into desired size. Some people like 'em big some people like 'em small. I prefer meatballs slightly larger than a golf ball. Coat a large saute pan with olive oil and bring to a medium-high heat. Brown the meatballs on all sides. Place them on a cookie sheet and bake them in the preheated oven for about 15 minutes or until the meatballs are cooked all the way through. If using right away, add them to your big pot of marinara sauce. If not using right away, they can be frozen for later use. Serve with pasta and sauce or just eat them straight out of the pot! YUM!
  • Coat a large saucepot with olive oil and add the pancetta. Bring the pot to a medium-high heat and cook the pancetta for 4 to 5 minutes. Add the onions, season generously with salt and stir to coat with olive oil. Cook the onions for 6 to 7 minutes stirring frequently. The onions should become very soft and aromatic but have no color. Add the garlic and cook for another 2 to 3 minutes stirring frequently.
  • Pass the tomatoes through the food mill. Be sure to pass all of the pulp through the holes leaving only the stems and the seeds, and be sure to scrape the pulp off of the bottom of the food mill. That's all of the big money stuff! Add the tomatoes to the pot and rinse out 1 of the empty tomato cans with water and add that water to the pot (about 2 to 3 cups). Season generously with salt and TASTE IT!!!! Tomatoes take a lot of salt. Season in baby steps and taste every step of the way. Cook the sauce for 2 to 3 hours, stirring occasionally and tasting frequently.
  • Use the sauce right away on pasta or for any other tomato sauce need. This sauce can also be cooled and stored in the refrigerator for a few days and freezes really well.
  • Yield: 2 quarts
