3 bananas ((ripe))
1-2 tablespoons maple syrup
1 cup rolled oats
1/2 teaspoon cinnamon

Steps:

  • Mash the bananas in a large bowl using a fork (or a potato masher).
  • Add maple syrup, rolled oats, and cinnamon. Mix well and let it sit in the fridge for 10 minutes.
  • Scoop out 2 tablespoonfuls of the mixture and pour them in a parchment-lined baking sheet. Give it the shape of a cookie. Repeat the same for the remaining mixture.
  • Transfer it to your oven and bake it for 180 C (350 F) for 15 minutes. Your banana oat cookies are ready!

2 Ripe bananas (*NOTE 1)
165g 1 3/4 cup Oats (*NOTE 2 & 3)

Steps:

  • Pre heat oven to 180C / 350F / Gas Mark 4 and line a baking tray/sheet with baking/parchment paper
  • In a large mixing bowl mash the bananas really well, until smooth. Add the oats and mix until fully combined.
  • Add in any additions to suit taste *NOTE 4
  • Form tablespoon sized cookies and place on prepared baking tray. (make sure to form cookie shapes and not balls as these will not spread into shape like normal cookies)
  • Bake for approx 15 mins, or until cookies are golden and set.
  • Allow to cool before eating.

1 tablespoon chia seeds
2 tablespoon water
350g banana (approx 2.5 medium bananas)
1/2 tsp vanilla
1 1/4 cup oats
1/2 cup plain flour

Steps:

  • Pop the chia seeds into the water and leave to stand for 10-15 minutes (they should begin to gel in this time)
  • In a medium bowl mash the banana
  • Stir through the soaked chia seeds and vanilla
  • Add the oats, and flour, mix well. This should form a cookie dough with a quite a moist sticky texture.
  • Use a tablespoon to scoop the mixture, place dollops onto a baking paper lined tray. The mix will be quite sticky so forming perfect shapes will be tricky. I find damp hands is a good idea with this mix, (I get 20 tablespoons from this recipe), place the balls on a lined baking tray
  • Bake at 180 degrees Celsius (approx 360 F) for 25-30 mins, allow to cool
  • The cookies should have a soft texture
  • Store in an airtight container for 2-3 days, or freeze for up to 3 months and thaw as needed

1 cup (240g) ripe banana, about 2 medium banana
1/2 teaspoon cinnamon
1/4 cup smooth peanut butter, natural-style
1/2 cup (48g) grated carrots
1 tablespoons finely chopped walnuts
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Prepare a cookie sheet by either lining with parchment paper or lightly greasing it. Set aside.
  • Add 1/2 cup of rolled oats to a food processor or blender and blend into a flour. You can also use oat flour if you have it.
  • In a large bowl, combine all the ingredients.
  • Scoop the batter using a large spoon and transfer to prepared cookie sheet. They won't change shape during cooking so be sure to form into the shape you want them. You'll end up with 8-9 cookies.

She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these.
