SIMPLEST GRILLED PEACHES
Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

Steps:
- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

GRILLED PEACHES
Choose fruit with a fragrant aroma and flesh that yields a bit when pressed gently. If a peach has cuts or tan spots, or if it's rock-hard or mushy, don't buy it. Color has more to do with variety than ripeness.

- Divide the peaches among 4 bowls and serve with the frozen yogurt and toasted almonds, if desired.
BARBECUED HAM AND PEACHES
The combination of the tart sauce and the sweetness of the peaches make this recipe one we enjoy often. I use the shank end of the ham since it has less connective tissue, less fat, is easier to carve, and makes a more attractive presentation than the rump end of a ham.

Steps:
- Preheat oven to 325 degrees F. Place ham into a large baking dish and bake for 1 1/4 hours.
- Meanwhile, in 2-quart saucepan over medium heat, heat the sugar, chili sauce, lemon juice, worcestershire, chili powder and water to a boil, stirring occasionally. Remove sauce from heat; add peaches and gently stir to coat well.
- Spoon peaches into baking dish and pour the sauce over the ham. Bake ham and peaches about 20 minutes more, basting occasionally with sauce, until thermometer reaches 140 degrees when inserted into the thickest part of the ham. Place ham on a warm platter and arrange peaches around it. As each slice is served, place a peach half over it and spoon some sauce on top.

GRILLED PEACHES WITH BLACK PEPPER AND BASIL-LIME SYRUP
The black pepper adds a surprising aromatic and spicy flavor to the sweet grilled peaches. The recipe here makes more syrup than you'll likely need but it will keep in the refrigerator for at least 1 week and is great in a cocktail or with sparkling water.

Steps:
- In a saucepan over medium heat, combine the 1/2 cup brown sugar with the water and stir until dissolved. Turn off the heat and add the lime juice and basil leaves. Let stand for at least 15 minutes or up to 1 hour, then discard the basil leaves.
- Light a grill or preheat a grill pan over medium heat; lightly oil the grates.
- Lightly sprinkle the peaches with brown sugar and grill cut side down until dark brown grill marks form, about 2 minutes per cut side. Transfer the peaches to bowls and season with a little black pepper. Spoon some of the syrup on top, sprinkle with basil leaves and serve.
BARBECUED HAM 'N' PEACHES
Wrap up Barbecued Ham 'n' Peaches in individual foil packets for a main dish that's both sweet and savory in every bite. "You can substitute canned ham or slices of lean Canadian bacon, if you wish," notes Cornelia Whiteway of Chilliwack, British Columbia.

GRILLED PEACHES
Steps:
- Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.
