1/4 cup light olive oil
1/4 cup lemon juice
3 tablespoons chopped fresh parsley
1/4 cup minced garlic
ground black pepper
1/4 teaspoon crushed red pepper flakes
1 1/2 lbs shrimp

Steps:

  • In a medium, non-reactive bowl, combine the olive oil, lemon juice, parsley, garlic, black pepper and crushed red pepper.
  • Set aside.
  • Thread thawed shrimp onto skewers and cover with marinade for 30 minutes.
  • Preheat grill for high heat.
  • Grill, brushing occasionally with extra marinade, for about 2 to 3 minutes on each side, or until done.

12 jumbo shrimp, peeled and deveined
1/2 cup canola oil
10 cloves garlic
1/4 teaspoon crushed red pepper flakes
1 teaspoon ground fennel seed
Salt and freshly ground black pepper
1 stick unsalted butter
1 large lemon, zested and juiced
1 tablespoon chopped tarragon leaves
2 teaspoons chopped fresh thyme leaves, plus sprigs for garnish
1/4 cup chopped fresh Italian parsley leaves, plus extra for garnish

Steps:

  • Put the shrimp in a large baking dish.
  • Combine the canola oil, garlic, red pepper flakes and fennel seed in a small food processor and process until the garlic is somewhat paste-like. Pour this mixture over the shrimp and let them marinate for 30 minutes.
  • Light a grill to high heat.
  • Strain the shrimp from the marinade and season them with salt and black pepper, to taste. Grill the shrimp on both sides until they are slightly charred and just cooked through, about 2 minutes per side (see Cook's Note). Transfer the shrimp to a plate.
  • Melt the butter in a large saute pan set over the grates of the grill. Add the lemon zest, lemon juice, tarragon and thyme leaves and cook for 30 seconds. Add the shrimp and cook, tossing once, about 1 minute. Finish with the parsley and adjust the seasonings, if necessary. Transfer the shrimp to a serving platter and garnish with thyme and parsley.

2 tablespoons lemon juice
3 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds uncooked jumbo shrimp, peeled and deveined
Hot cooked jasmine rice
Minced fresh parsley

Steps:

  • In a large bowl, whisk the first five ingredients. Add shrimp; toss to coat. Refrigerate, covered, 30 minutes., Thread shrimp onto six metal or soaked wooden skewers. Grill, covered, over medium heat or broil 4 in. from heat 6-8 minutes or until shrimp turn pink, turning once. Serve with rice; sprinkle with parsley.

1 tablespoon grapeseed oil
1 medium onion, minced
2 cloves garlic, lightly crushed with the side of a knife blade and minced.
1 cup ketchup
1 tablespoon mesquite seasoning
1/2 teaspoon cayenne pepper
1 tablespoon grapeseed oil
2 cloves garlic, lightly crushed with the side of a knife blade and minced
2 stalks celery, diced small
1 large red bell pepper, stem and seeds removed and diced medium
1 large green bell pepper, stem and seeds removed and diced small
1 tablespoon minced fresh thyme leaves
1 pound (16/20-count) shrimp, deveined and shells and tail removed
1 tablespoon minced fresh flat-leaf parsley leaves

Steps:

  • Heat the grapeseed oil in a small saucepot over medium heat and saute onion until translucent. Add garlic and saute for 2 more minutes. Stir in ketchup, mesquite seasoning and cayenne pepper. Reduce heat to low, cover and let simmer for 15 minutes.
  • For the shrimp scampi:
  • Heat grapeseed oil over medium heat in a skillet and add garlic, celery, red bell pepper, green bell pepper, thyme and parsley. Cook for about 5 to 10 minutes until vegetables soften and flavors are integrated. Stir in shrimp and cook until they are just pink and opaque. Do not overcook shrimp. Remove to a platter. Spoon sauce over and sprinkle with parsley.

Steps:

  • Split each shrimp on underside down to tail, try to avoid cutting meat (use sharp knife or scissors).
  • Put shrimp in bowl with remaining ingredients.
  • Stir well to coat.
  • Cover and refrigerate at least 2 hours.
  • Push onto skewers and grill shrimp 6 inches from heat over a low charcoal fire.

4 garlic cloves, minced, adjust to taste
1 teaspoon cayenne, adjust to taste
1/4 cup butter, real butter tastes best
salt and pepper
fresh parsley, chopped (optional)

Steps:

  • If using cleaned and deveined shrimp please skip to step 4 --
  • Cut shrimp shell with scissors starting at the seperation between the head and body.
  • Use knife to cut a shallow slice down back of shrimp and devein.
  • Make a 'boat' with several layers of foil to hold shrimp and juices.
  • Place shrimp in boat and season with salt, pepper garlic and cayenne making as hot as you want.
  • Cut butter into pieces and place on top of shrimp.
  • Place boat on grill and cook just until shrimp curls.
  • Garnish if desired.
  • You can skewer these too but they are more moist done this way.

6 -8 garlic cloves, minced
1/2 cup low sodium chicken broth
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup minced fresh parsley, plus
1 tablespoon minced fresh parsley
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
4 lemon slices

Steps:

  • In a large nonstick skillet, heat the oil. Sauté the shrimp until just pink, 2-3 minutes.
  • Add the garlic and cook stirring constantly, about 30 seconds.
  • With a slotted spoon transfer the shrimp to a platter, keep hot.
  • In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; bring to a boil.
  • Boil, uncovered, until the sauce is reduced by half; spoon over the shrimp.
  • Serve garnished with the lemon slices and sprinkled with the remaining tablespoon of parsley.
  • Note: I have also added scallops to this with great results!

12 jumbo shrimp, peeled and deveined
1/3 cup finely chopped yellow onion
2 tablespoons minced garlic
1/4 cup white wine
1 grated lemon, juice and zest of
1/3 cup diced and seeded tomatoes
2 tablespoons finely chopped flat leaf parsley
kosher salt fresh black pepper
1/4 cup molasses barbecue sauce

Steps:

  • Melt 2 tbsp butter in a medium saute pan over medium heat. Add the shrimp, onion, and garlic and saute 3-4 minutes. The shrimp will start to plump up a bit.
  • Add the wine, lemon zest and juice, and 4 tbsp more butter. Reduce heat and gently saute the shrimp until the sauce thickens. If sauce is too thin add 1-2 tablespoons more butter.
  • Add the tomatoes and parsley and season with salt and pepper to taste.
  • Add the barbecue sauce and toss well. To serve, remove shrimp from the pan and place on plates. Drizzle sauce over shrimp.
