SWEET AND SPICY GRILLED SALMON



Sweet and Spicy Grilled Salmon image

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

¼ cup lemon juice
cooking spray
¼ cup brown sugar
2 tablespoons chili powder
4 teaspoons lemon zest
1 tablespoon vegetable oil

1 teaspoon salt

Steps:

  • Place salmon in a resealable bag and add lemon juice; marinate in the refrigerator for at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil and spray foil with cooking spray.
  • Blend brown sugar, chili powder, lemon zest, oil, cumin, cinnamon, and salt together in a blender until brown sugar mixture is smooth.
  • Remove salmon from bag and discard bag and lemon juice. Spread brown sugar mixture over salmon and place in the prepared baking dish.
  • Bake in the preheated oven until fish flakes easily with a fork, 12 to 15 minutes.

1 cup grits
2/3 cup shredded Cheddar (about 4 ounces)
2 tablespoons butter, cut into cubes
1/2 cup heavy cream
4 strips cooked bacon
Salt
6 (6-ounce) salmon fillets
3 tablespoons your choice of barbecue sauce
3 tablespoons steak sauce (recommended: HP)
1 tablespoon minced fresh cilantro leaves
3 tablespoons minced fresh mint leaves

Steps:

  • Bring 2 1/2 cups water to a boil in a medium saucepot, slowly stir in grits, return to a simmer and let cook for 10 minutes. Remove from heat, stir in cheese, butter, heavy cream, crumbled bacon, and salt, to taste. Cover and let sit while you cook the fish.
  • Preheat oven to 375 degrees F. Heat grill or grill pan over medium-high heat.
  • Combine barbecue sauce, steak sauce, and cilantro, and set aside until needed. Season salmon with salt, and grill salmon. (Cook over indirect heat if using gas grill.) Leave undisturbed for the first 3 minutes to let the caramelization process begin to prevent the flesh from tearing. Flip the fillets and cook the other side the same way. Remove from heat, brush sauce over and finish for about 2 to 3 minutes in the oven.
  • Spoon some grits in center of plate, top with a piece of salmon and sprinkle with mint.

3 tablespoons red wine vinegar
1 cup dark amber maple syrup
1 tablespoon tomato paste

1/8 teaspoon liquid smoke flavoring
1 teaspoon coarse black pepper
Vegetable cooking spray
4 salmon fillets or salmon steaks, 6 to 8 ounces each
Coarse salt
1 small navel orange, zested and juiced
1 small lemon, zested and juiced
1 clove garlic, finely chopped
2 teaspoons Dijon mustard
2 tablespoons chopped fresh tarragon leaves
1 teaspoon salt
1/2 cup extra-virgin olive oil, eyeball it
2 large hearts romaine lettuce
3 scallions, chopped

Steps:

  • Prepare grill or preheat grill pan.
  • On your stove top or on your outdoor grill, place a small sauce pot over moderate heat and cook onion in oil for 3 minutes. Add vinegar and reduce by half. Add syrup, tomato paste, Worcestershire, curry, smoke flavoring and pepper. Bring to a bubble and simmer.
  • Spray salmon with cooking spray and season with salt. Grill for 3 minutes, turn and baste liberally with glaze. Turn again, glaze opposite side. If you care for salmon pink at center, remove after 6 minutes. For opaque salmon, grill 5 minutes on each side.
  • Whisk citrus with garlic, mustard, tarragon and salt. Stream in oil to combine.
  • Spray romaine hearts with cooking spray and place on grill 2 minutes, charring the outside leaves. Remove and cut each heart in half lengthwise, using tongs to help hold on to the charred lettuce. Cut away core at stem. Cut each half heart in half again lengthwise. Place 2 quarters of charred romaine on each dinner plate. Drizzle with dressing, working back and fourth, strapping the lettuce with dressing. Set salmon on top of the salad. Garnish with chopped scallions and serve.

1 teaspoon Worcestershire sauce
2 salmon fillets (1 pound each)

1/2 cup soaked wood chips (mesquite, hickory or alder), optional

2 lbs salmon fillets or 2 lbs salmon steaks
6 fluid ounces olive oil
2 -3 tablespoons mixed herbs (chef's choice, such as parsley, dill, chives)
1 tablespoon freshly squeezed lemon juice
lemon wedge (to garnish)

Steps:

  • Rinse and dry the salmon steaks or fillets.
  • Mix the oil, herbs and lemon juice.
  • Coat the outside of the salmon with the oil mixture.
