CHEESY BARBECUE CASSEROLE

Steps:
- Heat oven to 350°F. Spray 2-quart casserole with cooking spray. Cook and drain pasta as directed on package.
- Meanwhile, in 12-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain.
- Stir pasta, 3 tablespoons of the parsley, the milk, barbecue sauce, mozzarella cheese and 1 cup of the Cheddar cheese into beef in skillet. Spoon mixture into casserole. Sprinkle with remaining 1/2 cup Cheddar cheese.
- Bake uncovered 30 to 40 minutes or until hot and bubbly. Sprinkle with remaining 1 tablespoon parsley.

- Preheat the oven to 400 degrees F (200 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.
- Prepare the cornbread batter mixes according to package directions. Spread the batter over the top of the beef mixture.
- Bake for 20 to 25 minutes in the preheated oven, until the top is golden brown, and a knife inserted into the center of the cornbread layer comes out clean.

- Cook bacon in large skillet over medium-high heat until crisp, 8-10 minutes. Remove bacon and drain on paper towels, reserving 2 tablespoons drippings. Crumble bacon and set aside.
- Stir together reserved bacon drippings, potatoes, next 5 ingredients, and 2 cups cheddar cheese in a large microwave safe bowl. MIcrowave on HIGH 4 minutes. Stir in sour cream and chiles until well blended.
- Spoon potato mixture into a lightly greased 13X9" baking dish. Sprinkle evenly with bacon and remaining 1 cup cheddar cheese. Arrange pork evenly over cheese. Drizzle barbecue sauce evenly over pork.
- Bake at 350 degrees for 45 minutes., Let stand 10 minutes before serving. Garnish with chopped parsley.

- STIR all of the sauce ingredients together in a heavy-bottomed saucepan over medium high heat. Stir frequently until the mixture reaches a boil. Boil for one minute, remove from the heat and set aside.
- PREHEAT the oven to 325°F.
- STACK the two pounds of bacon and cut across the slices making ½-inch wide strips. In a large skillet, fry the bacon, stirring frequently, until crisp and brown. Use a slotted spoon to transfer the bacon to a paper towel lined plate. Drain the bacon grease from the pan.
- PLACE the pan back over medium high heat and break up the ground beef into it. If using the onion, add it at this point. Continue breaking it up with a spoon as you cook it until the beef is browned. If necessary, drain any excess fat away from the meat. In a large mixing bowl, stir together the sauce, beef, bacon, and beans until well combined.
- DIVIDE the mixture between a 9-inch by 13-inch by 2-inch pan and an 8-inch by 8-inch by 2-inch square pan. Bake (uncovered) for 1 hour or until very bubbly and hot all the way through.
- To Make in the Slow-Cooker:
- SPRAY the bowl of a slow-cooker crock insert with non-stick cooking spray.
- POUR the mixture into the insert, cover, and cook on LOW for 4 to 6 hours or until very bubbly and hot all the way through.
- STORE leftovers tightly covered in the refrigerator or divide into individual meal sized portions and freeze in an airtight container for up to 6 months. Reheat with a dash of water in a covered saucepan or in the microwave.

Steps:
- Heat oil in non-stick skillet.
- Add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
- Add ground beef and cook, stirring occasionally until cooked through.
- Add tomatoes and season with salt and pepper.
- Add barbecue sauce and cook until all is well-coated. Remove from heat.
- Preheat oven to 350ºF.
- Spray a large baking pan with cooking spray.
- Arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese).
- Cover with foil and bake 40 minutes.
- Uncover and top with remaining cheese.
- Bake, uncovered, until potatoes are cooked through, about 15 minutes more.
- Serve immediately.

- Put the oil in a large, heatproof casserole dish over a medium heat and add the onion, cooking for 5 mins until starting to soften. Tip in the garlic, celery and peppers, and give everything a good stir. Cook for 5 mins more.
- Turn the heat to high and add the sausages. Cook for a few mins until browned all over, then reduce the heat to medium, sprinkle in the spices and season well. Pour over the tomatoes and bring to a simmer. Cover and continue simmering gently for 40 mins, stirring every now and then.
- Heat the grill to high and uncover the casserole. Add the beans and spinach, and stir to warm through. Scatter over the breadcrumbs and grill for 2-3 mins until golden and crisp.
