MEXICAN BANANAS FOSTER

3/4 cup packed light brown sugar
3/4 cup Kahlua or other coffee flavored liquor
12 tablespoons (1 1/2 sticks) unsalted butter, cut into tablespoons
6 ripe bananas, peeled and cut into 1/2-inch thick rounds
Ground cinnamon, to taste
Vanilla ice cream

Steps:

  • Build a charcoal fire in an outdoor grill and let burn until the coals are covered with white ash. Let the fire burn down to medium-hot (you should be able to hold your hand at grate level for 3 seconds). In a gas grill, preheat to Medium.
  • Tear off six 12-inch squares of aluminum foil. Fold one foil square in half. On the bottom half, place 2 tablespoons brown sugar, 2 tablespoons Kahlua, 2 tablespoons butter, and 1 banana. Sprinkle with a pinch of cinnamon. Fold the foil over to form a packet, crimping the open edges to seal. Repeat with the remaining ingredients. The packets can be prepared up to 1 hour ahead and kept at room temperature.
  • Grill the packets until the sugar, Kahlua, and butter are boiling, 5 to 7 minutes. Open the packets, pour over bowls of ice cream and serve immediately.

1/4 cup brown sugar, packed
3 tablespoons spiced rum or 3 tablespoons apple juice
3 tablespoons butter, cut up
3 bananas, bias-sliced 1/2-inch thick (firm-ripe)
1/2 teaspoon ground cinnamon
2 cups frozen yogurt or 2 cups poundcake
whipped topping (optional)
pecans (optional) or almonds, toasted (optional)

Steps:

  • Preheat oven to 400º.
  • Sprinkle the bottom of a 1-qt. casserole dish with brown sugar.
  • Pour liqueur or apple juice over sugar.
  • Top with butter.
  • Add banana slices and sprinkle with cinnamon.
  • Bake, covered about 15 mins, or until juices around edges of casserole just begin to bubble.
  • Stir gently and spoon over ice cream/yogurt/pound cake.
  • Top with whipped topping and nuts if desired.

38 ounces creme de banana
38 ounces butterscotch liquor
38 ounces vanilla vodka (recommended: Stoli)
20 ounces creme de coca
52 ounces spiced dark rum (recommended: Captain Morgan)
3/4 gallon heavy cream
1/4 gallon sweet condensed milk
50 edible orchids, cut in 1/2
100 banana slices
Splash 151 to light on fire for flambe

Steps:

  • Mix all together in mixer until blended and pour into Gallon Pitchers. Place in cooler for transport. Line up 100 martini glasses, rim glasses with Banana Praline dust, if time allows, prior to service. Pour 3 1/2 ounces of drink into glasses, float 1/2-ounce of 151 on top and light with a torch. Add ice cube (frozen banana with orchid).

I don't eat bananas often, even though I love them. When I do have bananas, they have to be very special, and I promise you, these babies are very very special! Try serving them over vanilla frozen yogurt, or with an intensely chocolate ice cream.

3 bananas, quartered horizontally
1/2 teaspoon grated orange zest
1/4 teaspoon grated lime zest
1/2 cup fresh orange juice
1 teaspoon fresh lime juice
1/4 cup raisins or 1/4 cup currants
1/4 teaspoon vanilla extract
1/4 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 375°F.
  • In a shallow baking dish just large enough to hold them, arrange the bananas in a single layer.
  • In a small bowl, combine the zests, juices, raisins, vanilla, and cinnamon and whisk to blend.
  • Pour over the bananas and bake, uncovered, for about 20 minutes or until the bananas are lightly browned and bubbling.
  • Use a spatula to put 3 banana pieces in the center of each plate and spoon the sauce from the dish over them.
