1 medium banana
2 tablespoons light oil, such as canola or vegetable
2 eggs
1 3/4 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
3 tablespoons granulated sugar
1/2 teaspoon cinnamon
1 1/3 cup milk

Steps:

  • Preheat your waffle iron according to manufacturer's instructions.
  • In a medium mixing bowl, add the banana and use a fork to mash very well.
  • Add the oil and eggs, and beat to combine well.
  • Add the flour, baking powder, salt, sugar, and cinnamon to the bowl, and stir until just combined.
  • Add the milk and stir until just combined.
  • Make the waffles according to the directions that came with your waffle iron.
  • When one waffle is done, let it rest on a wire wrack, taking care not to stack the waffles (the steam they produce makes them soggy if you stack them on a plate).
  • Serve hot with your favorite toppings such a maple syrup, buttermilk syrup, sliced bananas, pecans, whipped cream, or even chocolate sauce, Nutella, or peanut butter on top.

2 cups all purpose flour
1 tablespoon baking powder
¼ teaspoon salt
¼ teaspoon ground cinnamon
1/4 teaspoon nutmeg
2 tablespoons sugar
1 egg, separated
2 overripe bananas, mashed
1 ½ cups milk
1 tablespoon vinegar

Steps:

  • Preheat waffle iron according to manufacturer's instructions.
  • Mix vinegar into milk and set aside.
  • In a medium bowl, beat egg yolk, bananas and sugar.
  • Add dry ingredients and continue to mix. Pour in milk, mix.
  • In a small bowl, beat the egg white to stiff peaks.
  • Fold in the egg whites.
  • Grease waffle iron according to manufacturer's instructions.
  • Scoop batter into waffle iron (approximately ¾ cup batter depending on your waffle iron).
  • Cook until the waffle iron stops steaming or the waffle reaches your desired color.
  • Serve with assorted nuts, chocolate chips, syrup, honey, and/or sliced bananas.

2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
¼ teaspoon fine salt
2 large eggs
1¾ cups buttermilk, at room temperature
1 very ripe banana, mashed, plus 1 banana, for serving (optional)
4 tablespoons unsalted butter, melted and cooled, plus more for the waffle iron
1 teaspoon pure vanilla extract
½ cup heavy cream, very cold
2 tablespoons confectioners' sugar
½ cup toasted walnuts, broken into small pieces
Maple syrup, for serving

Steps:

  • Whisk the flour, granulated sugar, baking powder and salt in a large bowl. Whisk the eggs in a medium bowl until frothy; add the buttermilk, mashed banana, 4 tablespoons of the butter and vanilla and stir to combine. Stir the wet mixture into the dry until just combined, taking care not to over mix. Cover with plastic wrap and let the mixture rest for 10 minutes.
  • Preheat a waffle iron to medium-high. Preheat the oven to 200°F. Brush the inside of the iron evenly with some of the remaining butter. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on the size of the iron. (Take into consideration that the batter will spread once the lid is closed.) Cook until the waffles are crisp and golden, 5 to 7 minutes. Repeat with the remaining butter and batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Whisk the cream and confectioner's sugar in a medium bowl until soft peaks form. Slice the remaining banana if using. Serve the waffles topped with the whipped cream, banana slices and walnuts and drizzled with maple syrup.

3 very ripe bananas, peeled and mashed
3 tablespoons virgin coconut oil, melted and cooled slightly, plus more for the waffle iron
1 1/2 teaspoons pure vanilla extract
6 tablespoons coconut flour
1 1/2 teaspoons baking powder
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Raspberries, raw honey and chopped toasted pecans, for serving

Steps:

  • Whisk the eggs, bananas, coconut oil and vanilla in a medium bowl until completely combined. Vigorously whisk in the coconut flour, baking powder, cinnamon and salt until no lumps of dry flour remain.
  • Prepare a waffle iron for medium-high heat and brush both sides with coconut oil. Fill each section of the iron about three-quarters of the way full (there should still be some waffle iron showing). Cook until the waffles are golden brown and slightly crisp, 6 to 10 minutes. Keep the waffles warm in a 200-degree F oven or covered with foil on a plate; repeat with the remaining batter. Serve with raspberries, a drizzle of honey and chopped pecans.

2 teaspoons baking powder
1 teaspoon apple pie spice
1/4 teaspoon fine salt
1 3/4 cups buttermilk, at room temperature

4 tablespoons unsalted butter, melted and cooled slightly, plus more for the waffle iron
1 teaspoon pure vanilla extract
1 very ripe banana, mashed
Warmed honey, sliced bananas and chopped peanuts, for serving

Steps:

  • Whisk together the flour, sugar, baking powder, apple pie spice and salt in a large bowl. Whisk together the buttermilk and eggs in a medium bowl until well blended and then whisk in the melted butter, vanilla and mashed banana. Pour the buttermilk mixture into the flour mixture and stir until just combined with a few lumps. Set aside for 10 minutes.
  • Preheat the oven to 200 degrees F. Preheat a waffle iron to medium-high. Lightly brush the top and bottom of the waffle iron with butter.
  • Fill each waffle indent about three-quarters full. Close the lid gently and cook until the waffle is golden brown and crisp, 5 to 7 minutes. Repeat with additional butter and the remaining batter, keeping the cooked waffles warm in the oven until ready to serve.
  • Serve the waffles topped with warmed honey, sliced banana and chopped peanuts.
