BANANA BREAD FRENCH TOAST WITH PEANUT BUTTER MOUSSE



Banana Bread French Toast with Peanut Butter Mousse image

1/4 cup heavy cream
1/4 cup milk
1/4 teaspoon grated nutmeg
4 eggs
1 loaf store-bought or homemade banana bread, recipe follows, sliced into 1-inch-thick slices
3 tablespoons butter
3 bananas
1 cup sugar
Peanut Butter Mousse, recipe follows
2 ounces dark chocolate, grated, for garnish
Cinnamon Maple Syrup, recipe follows
Nonstick cooking spray, for the pan
1 cup sugar
7 ounces (14 tablespoons) butter, at room temperature
2 eggs, at room temperature
1 cup mashed banana
1/2 cup buttermilk, at room temperature
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Pinch ground cloves
2 1/4 cups heavy cream
9 ounces cream cheese, at room temperature
8 ounces peanut butter
1/2 cup sugar
1/2 teaspoon salt
1/2 teaspoon vanilla
3 cinnamon sticks
2 cups maple syrup

Steps:

  • Preheat the oven to 200 degrees F.
  • Whisk together the cream, milk, nutmeg and eggs in a bowl. Working in batches, soak the banana bread slices in the mixture.
  • Heat a skillet or griddle over medium heat with a bit of the butter. Cook a batch of the banana bread slices until browned, 4 to 5 minutes per side. Transfer to the oven to keep warm. Cook the remaining slices, adding more butter as needed.
  • Cut the bananas into oblique slices, place on a baking sheet and coat with the sugar. Brulee them with a kitchen torch or under a broiler (or leave raw if you do not have a torch or broiler).
  • Arrange the French toast on plates, top with a quenelle (oval-shaped scoop) of the Peanut Butter Mousse, spread the bruleed bananas about, grate chocolate over the top of it all and serve with a side of the warm Cinnamon Maple Syrup.
  • Position an oven rack in the center of the oven and preheat to 350 degrees F. Spray an 8-by-4-inch loaf pan with nonstick spray and line the bottom of the pan with parchment paper.
  • In a stand mixer with the paddle attachment, cream the sugar and butter until light and fluffy, about 5 minutes. Add the eggs one at a time, scraping down the sides of the bowl between additions.
  • Combine the banana, buttermilk and vanilla in a bowl. Sift together the flour, baking soda, cinnamon, salt and cloves in a second bowl. Add half of the flour mixture to the butter mixture and paddle just to combine. Scrape down the sides and then add the buttermilk and banana mixture. Scrape down again, and add the remaining flour until just combined uniformly.
  • Pour the batter into the prepared loaf pan and bake on the center rack until a toothpick inserted in the loaf comes out clean, 50 minutes to an hour, depending on your oven. Let cool for about 10 minutes, then remove from the pan to cool completely.
  • Whisk the cream to medium peaks and set aside.
  • In a stand mixer with the paddle attachment, cream together the cream cheese, peanut butter, sugar, salt and vanilla, scraping down the sides of the bowl halfway, until the mixture is uniform, about 5 minutes. Fold the whipped cream into the peanut butter mixture, a third at a time. Refrigerate until ready to use.
  • Blacken the cinnamon a bit on a gas burner.
  • Put the maple syrup in a pan and heat until warm. Remove from the heat, add the blackened cinnamon sticks and let steep in the syrup for 20 minutes.

With a crackling, caramelized brown sugar topping, these custardy slices of French toast resemble crème brûlée. Start them soaking the night before, then pop them in the oven in the morning for one of the most decadent brunches imaginable. Even better, you can bake a pan of bacon at the same time. Just keep your eye on it; depending upon its thickness, the bacon might be done a few minutes sooner than the French toast. Then serve the French toast with more of the pan syrup spooned on top. But skip the maple syrup, which would be overkill.

5 large eggs plus 2 yolks (or 6 whole eggs)
2 1/4 cups whole milk
1/2 cup heavy cream (or use more milk)
3 tablespoons dark rum or orange juice
2 teaspoons vanilla extract
3/4 teaspoon grated nutmeg
1/4 teaspoon kosher salt
1 loaf challah bread, sliced 1 inch thick, preferably stale (about 1 pound)
1 cup packed light brown sugar
8 tablespoons unsalted butter, melted

Steps:

  • In a bowl, whisk together eggs, milk, cream, rum, vanilla, nutmeg and salt. Spread bread out in 1 layer on a large rimmed baking sheet (about 11 by 17 inches). Pour custard over bread, cover with plastic wrap, and let soak in the refrigerator for at least 4 hours or preferably overnight. Flip bread slices over once while they soak. This can be halfway through the soaking, or about an hour before baking, whichever is more convenient.
  • Heat oven to 375 degrees. In a medium bowl, whisk together brown sugar and butter. Pour mixture onto another large rimmed baking sheet, using a spatula if necessary to spread into an even layer.
  • Transfer soaked bread to sugared baking sheet, placing slices on top of the brown sugar mixture. Bake for about 25 minutes, or until tops are golden brown and sugar is bubbling.
  • Serve immediately while still hot, with the crunchy brown sugar side up, spooning more of pan syrup over the top.

½ cup unsalted butter
1 cup packed brown sugar
2 tablespoons corn syrup
6 (1-inch thick) slices French bread
5 eggs
1 ½ cups half-and-half cream
1 teaspoon vanilla extract
1 teaspoon brandy-based orange liqueur (such as Grand Marnier®)
¼ teaspoon salt

Steps:

  • Melt butter in a small saucepan over medium heat. Mix in brown sugar and corn syrup, stirring until sugar is dissolved. Pour into a 9x13 inch baking dish.
  • Remove crusts from bread, and arrange in the baking dish in a single layer. In a small bowl, whisk together eggs, half and half, vanilla extract, orange brandy, and salt. Pour over the bread. Cover, and chill at least 8 hours, or overnight.
  • Preheat oven to 350 degrees F (175 degrees C). Remove the dish from the refrigerator, and bring to room temperature.
  • Bake uncovered 35 to 40 minutes in the preheated oven, until puffed and lightly browned.

2 cups quick-cooking rolled oats
1/4 teaspoon salt
6 tablespoons brown sugar, divided
1 cup low-fat french vanilla yogurt
2 bananas, peeled and thinly sliced

Steps:

  • Combine milk, rolled oats, salt and 2 tablespoons of the brown sugar in a large saucepan and mix well.
  • Bring to a boil over medium heat.
  • Continue to cook, stirring constantly for 1 minute.
  • Spoon 1 cup of the oatmeal into each of oven-proof bowls spreading evenly.
  • Spread 1/4 cup of yogurt over each bowl.
  • Arrange sliced banana over yogurt, then sprinkle each remaining brown sugar.

1.5 lb. loaf brioche bread
1 stick butter
2 qts. heavy cream
1 cup. sugar
6 eggs
2 tsp. vanilla
6 ripe bananas
1/2-stick butter
2 Tbs. sugar
4 tsp. bourbon
18-oz. pure maple syrup
1 stick cinnamon
Maple Syrup

Steps:

  • In a bowl, whisk together eggs and sugar until incorporated. Add vanilla and cream. Slice bread to desired thickness. Dip bread in batter and cook over medium heat. Griddle soaked bread in a pat of butter. Diagonally cut French toast and stagger. Sprinkle powdered sugar on the toast and place a piece of mint on top. Garnish with berries, if desired.
  • Carmelized Bananas Preparation: On high heat, place butter and bananas in a large saute pan. Cook until brown. Add sugar and bourbon. A flame will be created, so watch your eyebrows! Cook one more minute.

1 tablespoon unsalted butter
3 bananas, peeled and coarsely chopped
6 tablespoons granulated white sugar
juice of 1/4 lemon
3 tablespoons Spanish Brandy
3 cups heavy cream
1 vanilla bean
8 egg yolks
12 teaspoons light brown sugar

Steps:

  • Preheat the oven to 300 degrees. Over medium heat, melt the butter in a saute pan. Add the bananas, and sprinkle with 1 tablespoon of white sugar. Stir well to blend the sugar and butter. Cook, stirring occasionally, for 5 minutes. The bananas should be lightly caramelized. Mash the bananas with the back of a wooden spoon. Add the lemon juice to the mixture, raise the heat to high, add the brandy, and boil for 1 minute. Remove from heat, divide among 6 wide, shallow creme brulee dishes, and let cool. Place the heavy cream in a saucepan. Split the vanilla bean lengthwise, and scrape the seeds into the cream with the tip of a knife. Add the scraped-out vanilla bean, and bring the cream just to a boil, then remove from heat. Reserve. Place the egg yolks and 5 tablespoons of white sugar in the top of a double boiler. Whisk them together, then stir over simmering water until the mixture becomes fairly thick (about 15 minutes). Strain the reserved cream into eggs, and stir the mixture over simmering water for 10 minutes. Remove from heat, and ladle over the cooled banana puree in the 6 dishes. Place the dishes in a roasting pan, and fill the pan with enough hot water to come halfway up the sides of the dishes. Bake in the oven for 40 minutes. Remove the dishes from the pan, and chill them for at least 3 hours.
  • When you are ready to serve, sprinkle 2 teaspoons of light brown sugar over each dish, distributing evenly. Place the dishes on a bed of cracked ice in a roasting pan, and position the pan under a broiler until the sugar caramelizes. Watch carefully, and move the dishes around so the sugar browns evenly but doesn't char. Remove and serve while the crust is still hot.

  • To make the bananas brulée, quarter the bananas lengthwise (peel on) and rub into sugar to coat thoroughly.
  • Remove peel and place on cooling rack over several layers of foil. (Don't try this on your dining room table.).
  • Don your safety goggles and fire up your torch. Hold the torch so that the very tip of the flame barely touches the banana, and move quickly back and forth until the sugar melts, turns brown, and bubbles. As soon as it looks like caramel, move on. You know you've got it down when a solid, glasslike sheet of gold (no graininess) has formed on the banana.

1 cup vanilla yogurt
2 bananas, peeled and thinly sliced

Steps:

  • Turn your oven broiler on high.
  • Lightly toast your bread - either in your toaster or under the broiler.
  • Arrange your four slices of bread on a cookie sheet.
  • Spread 1/4 cup of yogurt over each slice of bread.
