Monkeys young and old will love this mash-up of banana split, ice cream cake and sundae. Make sure to cook the butter in the cake to a deep brown-it should smell very toasty when it's done, and it will give the cake a rich, nutty flavor. You can make the chocolate sauce a few hours ahead of time and hold it at room temperature.

1 stick (8 tablespoons) unsalted butter, plus more for the pan
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon fine sea salt
1/2 cup mashed very ripe bananas (from 1 or 2 bananas)
1 large egg
1/4 cup firmly-packed dark brown sugar
1/2 cup granulated sugar
1 teaspoon vanilla extract
1/2 gallon (8 cups) vanilla ice cream, softened
4 ounces semisweet chocolate, broken into large chunks
3/4 cup heavy cream
1/4 cup corn syrup
3 tablespoons unsalted butter
1/8 teaspoon kosher salt
2 tablespoons unsalted butter
3 ripe bananas, peeled, halved lengthwise and then halved crosswise
Sundae toppings: whipped cream, chopped salted peanuts, pretzels, dried banana chips, chocolate chips, peanut butter chips, toasted coconut flakes and maraschino cherries

Steps:

  • For the banana ice cream cake: Preheat the oven to 350 degrees F. Butter a 9-by-13-inch baking pan.
  • Melt the butter in a medium skillet over medium heat until nutty brown. Immediately remove from the heat and reserve.
  • Whisk the flour with the baking soda and salt in a medium bowl. Vigorously whisk the bananas with the browned butter in a large bowl until very well combined and creamy. Whisk the egg, brown sugar, granulated sugar and vanilla into the banana mixture until smooth.
  • Fold the flour mixture into the banana mixture with a rubber spatula until well combined. Pour the batter into the prepared pan and spread to cover completely; the layer will be thin. Bake until a toothpick inserted in the center comes out clean, about 18 minutes. Cool completely on a rack, about 1 hour.
  • Spread the ice cream evenly over the banana cake with a rubber spatula. Cover with plastic wrap and freeze until firm, at least 4 hours or overnight.
  • For the chocolate sauce: Combine the chocolate, cream, corn syrup, butter and salt in a medium saucepan over medium heat. Whisk periodically as the mixture comes to a gentle simmer. Simmer for 5 minutes, stirring occasionally. If the sauce starts to boil, turn down the heat. Cool 15 minutes before serving. Transfer to a bowl or small pitcher. (Yield: 1 2/3 cups.)
  • For the caramelized bananas: Remove the cake from the freezer and let stand at room temperature. Heat a large skillet over medium heat. Add the butter and swirl the pan. When the butter is completely melted, place the banana pieces cut-sides down in one layer in the pan. When they are nicely browned, after 4 to 5 minutes, flip the bananas. Cook until the other sides are browned and the bananas have softened, 2 to 3 minutes. Transfer to a bowl.
  • To serve, place desired toppings in bowls. Cut squares of the banana cake and divide among serving bowls. Let each person build a sundae with the chocolate sauce, caramelized bananas, and additional toppings.

Once the weather heats up, the first thing I crave is a homemade banana split: ice cream, strawberry topping and whipped cream, surrounded by bananas covered in hot fudge. A classic for sure. Turning that classic summertime dessert into a cake was a brilliant suggestion from a good friend who shares the same passion for those amazing flavors as I do! Once the cake is fully assembled, it should be eaten right away. Leftovers are not an issue, as it is so good people always want more.

1 banana
1/2 cup chopped semisweet chocolate
1 tablespoon shortening
Butter, for the pan
1 3/4 cups all-purpose flour, plus more for the pan
2 cups granulated sugar
3/4 cup unsweetened cocoa
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1 teaspoon pure vanilla extract
1 cup boiling water
1 cup (1/2 pint) heavy or whipping cream
2 teaspoons pure vanilla paste or extract
2 tablespoons confectioners' sugar
Canned strawberry pie filling, for layering
Rainbow sprinkles, for topping

Steps:

  • For the frozen banana bites: Peel and slice the banana into 1-inch pieces. Heat up the chocolate and shortening for 30 seconds in the microwave in a bowl. Remove and stir. If any lumps remain, heat in 10-second increments until fully melted.
  • Place the banana pieces on a cookie sheet lined with parchment paper. Using two forks, place a banana piece on one fork and dip it into the chocolate. Make sure the banana piece is covered completely. Remove the banana piece from the chocolate and, using the other fork, gently move the banana piece onto the cookie sheet. When completed, place the chocolate-covered banana pieces in the freezer for at least 1 hour, preferably overnight.
  • For the chocolate cake: Preheat the oven to 350 degrees F. Prepare a 9-by-13-inch cake pan by rubbing with butter, sprinkling with flour and tapping out the extra.
  • In a large bowl, combine the flour, granulated sugar, cocoa, baking soda, baking powder and salt. Mix together with a wooden spoon, then set aside.
  • In a small bowl, combine the eggs, milk, oil and vanilla. Beat well with a hand mixer. Slowly add the boiling water and mix. Add the wet ingredients to the flour mixture, and fold and stir until smooth. Pour the batter into the prepared pan.
  • Bake until a cake tester inserted in the center of the cake comes out clean, 20 to 25 minutes. Remove the cake from the pan and cool on a rack.
  • For the whipped cream: Beat the cream and vanilla in a chilled nonreactive bowl with a whisk or an electric mixer just until the mixture holds a loose peak. (Lift the beater from the cream and look at the shape of the peak at the end of the whisk; it should hold a lazy curve.) Sift the confectioners' sugar over the cream and continue to beat just until it holds a soft peak. Take care not to overbeat the cream or it will be curdy. Refrigerate, covered, for up to 4 hours.
  • To assemble: When the cake is cool, cut in half with a long serrated knife. Place one half of the chocolate cake on a serving platter or cake stand. Cover the cake with strawberry pie filling (about 1 cup; you will have some left over, which can be refrigerated). Set the other half of the cake on top. Try to match up the ends that have been cut when stacking.
  • With a pastry bag fitted with a large open star decorating tip, pipe whipped cream mounds on top of the cake. Add sprinkles. Cut the frozen banana bites in half and set on top of the whipped cream. Serve immediately.

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
1/2 cup Strawberry Syrup, plus more for garnishing, recipe follows
2 eggs
Vegetable oil, for frying
Powdered sugar, for dusting.
4 cups vanilla ice cream
2 cups strawberries, sliced
4 bananas, sliced 1/4-inch thick
Chocolate sauce, for drizzling
1 cup heavy cream, whipped and sweetened with 1 tablespoon powdered sugar
1/2 cup chopped pecans, optional
8 maraschino cherries, with stems
2 cups fresh strawberries, chopped
1/2 cup sugar
1/2 teaspoon lemon zest

Steps:

  • Whisk together the flour, baking powder and salt in a large bowl. Whisk together the milk, Strawberry Syrup and eggs in a medium bowl. Make a well in the flour mixture, and then pour in the egg mixture and whisk until well combined. Let the mixture rest for 10 minutes. Preheat the oven to 250 degrees F. Heat 1 inch of oil in a medium straight-sided skillet to 375 degrees F. Spoon 3/4 cup of the batter into a funnel with a 1/2-inch tip, keeping the opening at the bottom closed with your finger. Place the funnel over the skillet, release your finger and pour the batter through the funnel, moving to create a round, lacy funnel cake no bigger than 7 inches in diameter (or as big or small as you want!), creating thick, even strands so the cake cooks evenly. Fry the cake until beginning to brown and crisp, 2 minutes, and then flip and cook until done, another 1 to 2 minutes. Transfer to a wire rack set over a baking sheet and keep in the warm oven as you finish making the funnel cakes in batches. To serve, place 1 funnel cake on each plate and dust with powdered sugar. Top each with 2 scoops of ice cream, some strawberries and bananas and drizzle with chocolate sauce and leftover Strawberry Syrup. Finish with the sweetened whipped cream, pecans, if using, and a maraschino cherry.
  • Combine the strawberries, sugar, lemon zest and 1/2 cup water in a medium saucepan. Bring to a boil and cook until thick and syrupy, about 10 minutes. Puree in a food processor, strain and let cool before using. Yield: 1 cup.

These fun little guys will totally satisfy a banana split craving - even without the ice cream. They're super simple to make and perfect for a kids' party!

4 ounces bittersweet chocolate, chopped
3 small bananas
1/3 cup walnuts, finely chopped
1/3 cup heavy cream
2 teaspoons pineapple preserves
12 maraschino cherries, halved
Multicolored tiny nonpareil sprinkles, for decorating

Steps:

  • Line a baking sheet with parchment. Put the chocolate in a small microwave-safe bowl, and microwave in 30-second increments, stirring after each, until smooth. Transfer the melted chocolate to a mug.
  • Put the walnuts in another small bowl. Peel the bananas, trim the ends and cut each into six 2-inch pieces. Dip each piece halfway into the chocolate, and let any excess drip off. Roll the chocolate-dipped ends in walnuts, then set them on the prepared baking sheet. Refrigerate to set the chocolate. (The bananas can be refrigerated up to 2 hours.)
  • Whip the cream in a small bowl until soft peaks form. Add the preserves, and stir to incorporate. Transfer the mixture to a pastry bag fitted with a large star tip. Pipe a star-shaped dollop on top of each banana. Garnish with a piece of cherry and sprinkles.

CARAMELIZED BANANA SPLIT SUNDAE

1 cup heavy cream
5 1/2 ounces semisweet chocolate, chopped
1/2 cup cocoa powder
3 tablespoons sugar
2 tablespoons light corn syrup
1/8 teaspoon salt
4 bananas, peeled and sliced lengthwise
2 tablespoons butter
1/4 cup honey roasted peanuts, chopped
1 quart ice cream

Steps:

  • In a medium saucepan set over low heat, cook the cream until just simmering, 2 to 3 minutes. Add the chocolate, and let it sit for 30 seconds. Remove from the heat, then whisk until the chocolate and cream are fully mixed. Whisk in the cocoa powder, 2 tablespoons of the sugar, the corn syrup and salt. Mix well.
  • Sprinkle the cut side of the bananas with the remaining 1 tablespoon sugar. In a nonstick skillet, melt the butter and then add the bananas cut-side down. Cook until golden brown, about 2 minutes, then flip and brown the other side and remove from the pan.
  • Pour 1/2 cup of the chocolate sauce on each serving plate. Top each with two of the cooked banana slices, then sprinkle each plate with some of the chopped peanuts. Place 2 scoops of ice cream on top of the banana slices and sprinkle with a few more nuts to serve.

6 cups strawberry or cherry ice cream, softened if necessary
Optional toppings: whipped cream, maraschino cherries, chopped walnuts, banana slices and colored sprinkles

Steps:

  • In a bowl, mix wafer crumbs, melted butter and sugar; press onto bottom of a 13x9-in. dish. Freeze 15 minutes., Spread chocolate chip ice cream over crust. 1 (3 ounce) package strawberry Jell-O gelatin dessert
water
1 env dream whipped topping
1 (3 1/2 ounce) box chocolate instant pudding
1 1/2 cups cold milk

Steps:

  • Preheat oven to 350.
  • Dissolve jello in 3/4 cup boiling water, then add 1/2 cup cold water and set aside.
  • Mix and bake cake as directed on package for a 13x9 pan.
  • Cool cake 20-25 minutes.
  • Poke deep holes through top of warm cake with a meat fork or skewer about 1 inch apart.
  • Slowly pour jello over the cake.
  • Refrigerate while making topping.

This is no fuss refreshing dessert that looks as delicious as it tastes. It can be made ahead of time and keeps in the freezer for up to 2 months. I hate heating up my kitchen in the summer with oven baking and this recipe is no bake, loved and always requested for gatherings.

24 neapolitan ice cream sandwiches
3 medium bananas, sliced
11 3/4 ounces strawberry sauce (Smuckers)
11 3/4 ounces pineapple ice cream, sauce (Smuckers)
11 3/4 ounces hot fudge (Smuckers)
11 3/4 butterscotch sundae sauce (Smuckers)
11 3/4 caramel sauce (Smuckers)
16 ounces Cool Whip, thawed
10 ounces car maraschino cherries (no stems)
1/2 cup cocktail peanuts, chopped, for topping

Steps:

  • In a 13x9 dish, starting with short side, place 12 ice cream sandwiches inside dish to cover bottom of dish, cutting sandwiches to fit.
  • Add banana slices to cover sandwiches.
  • Add both strawberry and pineapple sauce to cover banana layer; spread with spatula to combine and cover.
  • Butterscotch, hot fudge and caramel sauces: warm if needed to thin out for drizzling. Drizzle each sauce on top of dessert (keep in mind, you should have half of each jar left when you finish this dessert -- perfect for another dessert later!).
  • Add half of your cool whip; spread to cover.
  • Place remaining 12 ice cream sandwiches next, again cutting sandwiches to fit.
  • Add the rest of cool whip; spread to cover.
  • Finish off by topping with the drizzle of more hot fudge, butterscotch, caramel sauce; cherries and chopped peanuts.
  • Cover with pan lid or aluminum foil; freeze for at least 4 hours prior to serving.
  • When serving, remove from freezer and let sit 20 minutes at room temp before cutting into serving squares.
