⅓ cup vegetable oil
½ cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas
1 ¾ cups whole wheat flour
½ teaspoon salt
1 teaspoon baking soda
¼ cup hot water
½ cup chopped walnuts

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.
  • In a large bowl, beat oil and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Blend in chopped nuts. Spread batter into prepared pan.
  • Bake until a toothpick inserted in the center of the loaf comes out clean, 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

3 bananas (ripe, mashed)

3 very ripe bananas, mashed (about 1 1/4 cup mashed banana)
2 eggs, at room temperature (very important to be at room temp)
1/3 cup pure maple syrup (do not use honey)
1/2 cup plain or vanilla greek yogurt (whole milk or 2% is best)
1 teaspoon vanilla extract
1 3/4 cup whole wheat pastry flour*
1 teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
1/3 cup butter, melted and cooled (you can also use olive oil or melted and cooled coconut oil but I prefer butter)
Optional add-ins:
1/2 cup chopped walnuts or pecans
1/2 cup chocolate chips, dairy free if desired
2 tablespoons chocolate chips, for sprinkling on top

Steps:

  • Preheat oven to 350 degrees F. Line a 8 1/2 x 4 1/2 inch pan with parchment paper and grease the inside of the pan to prevent sticking.
  • In a large bowl mix together the mashed banana, eggs, maple syrup, greek yogurt and vanilla extract to a bowl until well combined. (OR if you prefer, you can add all the wet ingredients to a blender to combine -- I prefer to mix in a bowl.)
  • In a large bowl, whisk together the dry ingredients: whole wheat pastry flour, baking soda, cinnamon and salt. Add dry ingredients to wet ingredients and mix until just combined. Do not overmix!
  • Next, mix in the melted and cooled butter (or coconut oil). At this point you can fold in an of the following: ½ cup chopped walnuts or ½ cup chocolate chips (or both!).
  • Add banana bread batter into prepared pan. Optional but not required: split a banana down the middle vertically then add on top of the batter or just add banana slices on top, side by side. Bake for 50-60 minutes or until a tester inserted into the middle comes out clean or with just a few crumbs attached. Allow bread to cool in the pan for 10 minutes, then remove and transfer to a wire rack to finish cooling.
  • Once bread is cool, cut into 12 slices. Serve with nut butter spread on top for a healthy snack or breakfast on the go.

Steps:

  • Preheat oven to 350 degrees F. Spray a 9x5-inch loaf pan with cooking spray. Lay a sheet of parchment paper across the bottom and up the sides of the pan (see photo in post above).
  • Melt the butter in a large glass bowl in the microwave (or melt butter in a pot on the stove and transfer to a large mixing bowl).

1 large egg
1/3 cup plain Greek yogurt (I used nonfat. OK to substitute vanilla, though the bread will be a bit sweeter.)

1/3 cup light brown sugar

Steps:

  • In a medium bowl, whisk together the all-purpose flour, whole wheat flour, flaxseed meal, baking powder, baking soda, and salt. Set aside.

3 large, overripe bananas (I've used up to 6 bananas; they make it extra moist)
2 large eggs
1/3 cup light olive oil
3 tablespoons plain yogurt
1 cup sugar
2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup walnuts or pecans

Steps:

  • This recipe is exceptionally moist with a lovely crunch on top from the walnuts. I made it using whole wheat flour for a nice healthy breakfast/brunch snack. You can absolutely make it with all purpose white flour. It will be lighter as the whole wheat flour makes it more dense. Whatever you choose to do, make it and enjoy with a nice hot cup of tea!
  • Preheat oven to 350 degrees. Grease two 3 x 7 inch bread pans.
  • Beat the bananas with sugar to mash up nicely.
  • Add the oil, vanilla extract and yogurt and beat well. Add one egg at a time until combined.
  • Place all of the dry ingredients except for the nuts in a bowl and whisk them together.
  • Incorporate the dry ingredients in three batches mixing well between each addition. Do not over mix.
  • Divide the batter evenly into prepared pans. Sprinkle the nuts over the top.
  • Place the loaf pans on a baking sheet and put in the oven.
  • Immediately reduce the temperature to 325 degrees and bake for 45 minutes to 1 hour, until the toothpick no longer has wet batter attached when checked.
  • Cool for 15 minutes.
  • Dust with some powdered sugar and enjoy!
  • This banana bread can be frozen after baked. Just remove from pan and wrap it nicely with plastic wrap.

1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup honey
1/2 cup unsweetened applesauce
2 eggs, beaten
3 ripe bananas, mashed

Steps:

  • Preheat the oven to 350 degrees F. Grease the bottom and sides of the loaf pan(s). In a large mixing bowl, combine the whole wheat flour, soda, and salt. In a smaller bowl, combine the honey and applesauce; stir to mix evenly. Add the eggs and mashed bananas to the applesauce mixture. Stir all together until evenly mixed. Add the applesauce/banana mixture into the flour and stir just until dry ingredients are moistened. Pour the batter into the loaf pan and place in the preheated oven. Bake for 60 to 65 minutes or until a toothpick poked in the center comes out clean. Cool in the pan for 10 minutes and then turn out onto a wire rack to cool. Note: If using smaller loaf pans be sure to reduce baking time. Watch for browning and then start checking with a toothpick. You may find that smaller loaf pans work better because in the large loaf pan the center seems to have a hard time getting done before the bottom is too done.

1/3 c. honey
2 eggs
2 very over-ripe bananas

Steps:

  • Preheat oven to 350 F.
  • Mix flour, baking soda, baking powder, salt in a bowl. In the bowl of your stand mixer, cream applesauce, yogurt, and honey together until smooth. Continue beating and add in flour mixture and bananas.
  • Mix well; on the lowest setting stir in nuts. Pour into a 9x5x3" loaf pan (you will either want to grease lightly or line with parchment paper).
  • Bake approx. 45 minutes until toothpick inserted comes out clean. Turn onto rack to cool. Enjoy!
