3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
  • Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.

3 cups all-purpose flour (sometimes we use 1/2 whole wheat)
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups sugar (we use brown sugar)
1 cup vegetable oil (we usually use extra virgin olive oil)
3 large eggs
1 tablespoon vanilla extract
4 bananas (ripe to over-ripe is better for mashing)
granola cereal

Steps:

  • Preheat oven to 325 degrees F.
  • Mix first 7 ingredients in a bowl.
  • In another large bowl, mix the rest of the ingredients, besides the bananas.
  • Mash the bananas (its sometimes easier to mash them in their skins a bit first) then add them to the bowl with the wet ingredients and mix them together.
  • Add the dry ingredients to the wet ingredients in 3 installments, make sure not to over-mix.
  • Either grease muffin tin with a paper towel dipped in olive oil or line the muffin tin with paper liners.
  • Fill the muffin cups about 3/4 the way up.
  • Crumble granola and add to the top of each muffin, adding as much or as little as you want.
  • Bake for about 20-25 minutes or untill a toothpick comes out clean.

2 cups self-rising flour
3/4 cup sugar
1 egg
1 cup (8 ounces) plain yogurt
1/2 cup vegetable oil
1-1/3 cups mashed ripe banana (2 to 3 medium)
1 cup chopped pecans or walnuts
TOPPING:
1/2 cup all-purpose flour
1/2 cup sugar
3 tablespoons butter, melted
1/2 teaspoon vanilla extract

Steps:

  • In a bowl, combine flour and sugar. In another bowl, beat the egg, yogurt and oil. Stir into dry ingredients just until combined. Fold in bananas and nuts. Fill greased or paper-lined muffin cups two-thirds full. , Combine topping ingredients; sprinkle over batter. Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 egg

1/2 cup brown sugar
1/4 cup oats
2 tablespoons unsalted butter (melted)

Steps:

  • Heat oven to 350 degrees.
  • Prepare a 12 cup muffin pan with paper muffin cups.
  • In a bowl combine the brown sugar, 1/4 cup of the flour, oats, melted butter, and 1/2 tsp of the cinnamon, mix and press together with a fork until it looks crumbly, and set aside.
  • In another mixing bowl, combine the remaining 1 1/2 c flour, baking powder, baking soda, 1/4 tsp cinnamon, and 1/8 tsp salt. Set aside.
  • In another bowl combine the egg, mashed bananas, sugar, and oil, mix well then add to the flour mixture. Stir until just moistened, fold in the walnuts.
  • Spoon batter into each muffin cup, about 2/3 full each. Top each batter filled cup with the streusel topping, enough to cover so you cant see the batter. Bake at 350 degrees 20-25 min, or until toothpick test comes out clean.
