EASY BANANA FRENCH TOAST
This is a simple and quick way to use those still good but aesthetically non-pleasing week-old bananas. I like to use a less dense, lighter bread with this recipe, like normal sandwich bread.

Steps:
- Mash the banana in a shallow bowl with a fork; mix it until most lumps disappear.
- Scramble both eggs into the bowl along with the spices and vanilla extract.
- Preheat a griddle or frying pan.
- Use cooking spray or butter.
- Dip slices of bread in mixture and transfer to pan.
- Cook both sides until done.

CHOCOLATE-DRIZZLED FRENCH TOAST
Steps:
- Make Perfect French Toast using 12 thick baguette slices.
- Preheat the oven to 350 degrees F. Whisk 4 eggs, 1 1/2 cups half-and-half or milk, 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract, 1 teaspoon sugar and a pinch of salt in a shallow bowl. Heat 1/2 tablespoon butter in a nonstick skillet over medium heat. Working in batches, dip 6 thick slices white bread, challah or brioche in the egg mixture and cook in the skillet until golden, 2 to 3 minutes per side, adding more butter as needed. Transfer to a baking sheet and bake until puffed, 8 to 10 minutes.
- Melt 3 ounces chopped bittersweet chocolate with 1/3 cup maple syrup in the microwave on 50 percent power, 1 minute; stir until smooth. Top the French toast with the chocolate syrup and confectioners' sugar.

- Slice the banana into a small bowl and mash using a fork. Add the chopped chocolate and mix to combine.
- Lay 2 slices of bread on the work surface. Divide the chocolate and banana mixture between them, spreading it almost to the edges. Top each with a second slice of bread and press together to make a sandwich.
- In a shallow dish, whisk together the eggs, double cream, maple syrup and vanilla extract. Melt the butter in a large frying pan over a medium heat. Lay one sandwich into the egg mixture to coat one side, then carefully flip it over so that both sides of the sandwich are soaked in the egg. Lower the sandwich into the hot frying pan and cook for about 1 min on each side, until golden brown and the chocolate has started to melt. Repeat with the second sandwich. Cut the sandwiches in half to serve and sprinkle with a little ground cinnamon and either icing sugar or extra maple syrup if you're feeling super-indulgent.

- Preheat oven to 400 degrees F.
- Whisk together eggs, cream, spices and orange zest.
- Slice bread in half horizontally without cutting all the way through the whole slice of bread.
- Stuff each pocket with half the mashed banana.
- Heat skillet over medium heat.
- Melt butter to cover bottom of pan.
- Dip bread slices into egg mixture, generously coating each piece.
- Place in the skillet and fry until browned.
- Flip over and brown other side.
- Remove from pan and place in oven for 10 minutes.
- Melt chocolate in a double boiler.
- Remove French toast from oven.
- Cut each piece of French toast on the diagonal and drizzle melted semisweet chocolate over them.
- Dust French toast with icing sugar and serve with orange slices as garnish or serve with a fresh fruit salad.

- In a large shallow bowl, whisk together milk, egg, sugar, cinnamon, and a pinch of salt.
- Dip bread, one slice at a time, into egg mixture, pressing down so bread absorbs liquid. In a large nonstick skillet, melt butter over medium heat. Place all 4 slices in skillet; cook 2 minutes per side or until golden brown.
- Meanwhile, cut banana crosswise into 1/4-inch-thick rounds. Divide bread between two plates; top with banana and syrup. Serve.
