Here's a recipe that will bring back memories of your childhood. Banana flip snack cakes taste just like the banana flips we used to eat when we were kids. -Berta Hagen, Int'l Falls, Minnesota

1 package yellow cake mix (regular size)
1 package (3.4 ounces) instant banana or vanilla pudding mix
1-1/2 cups 2% milk
4 large eggs, room temperature
FROSTING:
1/3 cup all-purpose flour
1 cup 2% milk
1/2 cup butter, softened
1/2 cup shortening
1 cup sugar
1-1/2 teaspoons vanilla extract
2 tablespoons confectioners' sugar
Whipped topping, sliced bananas, optional

Steps:

  • Line two greased 15x10x1-in. baking pans with waxed paper and grease the paper. Set aside., In a large bowl, combine the cake mix, pudding mix, milk and eggs. Beat on low speed for 30 seconds; beat on medium for 2 minutes., Spread batter into prepared pans. Bake at 350° until a toothpick inserted in the centers come out clean, 12-15 minutes. Cool for 5 minutes before inverting onto wire racks to cool completely. Gently peel off waxed paper., Meanwhile, in a small saucepan, whisk flour and milk until smooth. Bring to a boil; cook and stir until thickened, about 2 minutes. Remove from the heat; cover and cool to room temperature., In the bowl of a heavy-duty stand mixer, cream the butter, shortening and sugar until light and fluffy. Beat in vanilla. Add milk mixture; beat on high until fluffy, 10-15 minutes., Place one cake on a large cutting board; spread top with frosting. Top with remaining cake; sprinkle with confectioners' sugar. Cut into squares. If desired, top with whipped topping and sliced bananas. Refrigerate leftovers.

This banana cake is delectably moist, perfectly sweet and easy to make. Dark brown sugar and sour cream add depth to the batter, and we added melted butter instead of vegetable oil for a flavor boost. Fluffy cream cheese frosting and swirls of dulce de leche will make you go back for seconds. We also upped the ante by using bananas in two ways -- fresh bananas are mixed into the cake while maple-candied banana chips create a crunchy topping.

Nonstick cooking spray
6 very ripe bananas
2 1/2 cups packed dark brown sugar
2 sticks (1 cup) unsalted butter, melted
1 cup sour cream
4 large eggs
1 tablespoon pure vanilla extract
4 cups all-purpose flour (see Cook's Note)
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
6 ounces cream cheese, at room temperature
1/4 teaspoon kosher salt
2 cups confectioners' sugar
1 teaspoon pure vanilla extract
1 1/2 tablespoons dulce de leche
1 1/2 tablespoons maple syrup
1 cup banana chips

Steps:

  • Preheat the oven to 350 degrees F and line a 9-by-13-inch baking pan (see Cook's Note) with aluminum foil, leaving a 2-inch overhang on the two longer sides. Lightly spray the foil with nonstick cooking spray.
  • For the cake, mash the bananas in a large bowl with a fork or potato masher until very smooth. Whisk in the dark brown sugar, melted butter, sour cream, eggs and vanilla until smooth and combined. In a separate large bowl, whisk together the flour, cinnamon, baking soda and salt.
  • Fold the dry ingredients into the banana mixture in thirds until just combined. Pour into the prepared baking pan and smooth the top. Bake until golden brown and a toothpick inserted into the center comes out clean, about 1 hour. Leave the cake in the pan to cool slightly, about 30 minutes. Use the foil overhang to remove the cake from the pan, then transfer to a wire rack to cool completely.
  • Meanwhile, beat the butter, cream cheese and salt in a large bowl with an electric mixer on medium speed until smooth. Reduce to low speed, then add the powdered sugar a cup at a time until smooth. Increase the speed to medium-high and beat until fluffy, 1 to 2 minutes. Beat in the vanilla extract.
  • Transfer 1/2 cup of the frosting to a small bowl and stir in the dulce de leche until smooth. Cover both frostings with plastic wrap and keep at room temperature until ready to assemble the cake.
  • For the candied banana chips, warm the maple syrup in a medium nonstick skillet over medium heat until it just starts bubbling. Add the banana chips and cook, tossing and stirring frequently with a rubber spatula, until the chips have absorbed almost all the maple syrup and are browned in spots, 3 to 4 minutes. Immediately transfer the banana chips to a baking sheet, spread in an even layer and cool completely. Once cool, roughly chop.
  • Transfer the cake to a serving platter. Spread about 3/4 cup plain cream cheese frosting all over the top of the cake.
  • Dollop the dulce de leche frosting and remaining plain frosting on top, then use a small offset spatula to swirl both frostings together in a swooping design, making sure the frosting goes all the way to the edges of the cake. Top with the chopped candied banana chips.

CAKE:
18 oz pkg. "betty's" yellow cake mix
3 oz pkg. instant banana pudding mix
4 large eggs
1 1/2 c milk
FILLING:
1 1/2 c granulated sugar
1/4 c all purpose flour
3/4 c butter, room temperature
3/4 c butter flavored shortening
3/4 c milk
2 tsp banana extract
powdered sugar ,optional

Steps:

  • 1. Preheat oven to 350^. Grease 2 jellyroll pans, then line with parchment paper and grease that too. Set aside. --- In a large bowl, stir together cake mix and dry pudding mix. Beat in eggs and milk.
  • 2. Divide the batter evenly between the 2 pans. Bake about 14 minutes or until wooden toothpick tests clean.
  • 3. Filling: Sift sugar and flour together in medium bowl and set aside. In a medium bowl cream together the butter and shortening until well combined, then add sugar mixture.
  • 4. Beat in the milk and banana extract until smooth using an electric mixer. When cake is cooled, invert one layer onto serving tray or piece of heavy cardboard. Spread filling over the top and cover with remaining cake layer. Garnish with powdered sugar. Chill until serving and set. --- Note: These can be made using whoopie pans instead of cake layers- which will probably be easier- I don't have any.- so I do them this way.

This recipe comes from my sister, she got it from a co-worker. It says to use two 10 1/2x15 1/2 inch jelly roll pans,but I baked it in what ever I had then sliced into. It worked just as well.Enjoy!!!!!!!!!!!!!!!!!!!!!!!!

1 box yellow cake mix, plain-not pudding
1 box banana instant pudding mix [3oz]
4 large eggs
11/2 c milk
1 c sugar
1/2 c milk
1/2 c butter
3 Tbsp all purpose flour
3 Tbsp banana extract
1/2 c crisco, i use butter flavor

Steps:

  • 1. Preheat oven to 350 degrees.Combine the cake mix, pudding mix, eggs, and 1 1/2 cups milk and mix throughly. Grease and flour TWO 10 1/2 x 15 1/2 inch jelly roll pans. Pour half the batter into each pan and bake for 15 minutes or less. Cool well.
  • 2. Mix 1/2 cup milk, sugar, butter, flour, banana extract, and crisco. Beat for five minutes. Spread this mixture on one of the cakes, and place the other cake on top. Slice into bars before serving.

1/2 cup light brown sugar, lightly packed
1/2 cup vegetable oil
2 extra-large eggs, at room temperature

1 teaspoon pure vanilla extract
Grated zest of 1 orange
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 cup coarsely chopped walnuts (optional)
Cream Cheese Frosting, recipe follows
Walnut halves, for decorating (optional)
6 ounces cream cheese, at room temperature
6 tablespoons (3/4 stick) unsalted butter, at room temperature
1 teaspoon pure vanilla extract
2 1/2 cups sifted confectioners' sugar (1/2 pound)

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 by 2-inch round cake pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the bananas, granulated sugar, and brown sugar on low speed until combined. With the mixer still on low, add the oil, eggs, sour cream, vanilla, and orange zest. Mix until smooth.
  • In a separate bowl, sift together the flour, baking soda, and salt. With the mixer on low, add the dry ingredients and mix just until combined. Stir in the chopped walnuts, if using. Pour the batter into the prepared pan and bake for 45 to 50 minutes, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, turn out onto a cooling rack, and cool completely.
  • Spread the frosting thickly on the top of the cake and decorate with walnut halves, if using.
  • Mix the cream cheese, butter, and vanilla in the bowl of an electric mixer fitted with the paddle attachment on low speed until just combined. Don't whip! Add the sugar and mix until smooth.

I don't know if anyone else remembers these;or if they are even still made, a snack cake shaped like a taco, with this fluffy banana flavored stuff inside? Well I experimented and this cake tastes like them! Enjoy!

2 box(es) small-instant banana pudding mix
1 package(s) 8 oz.. cream cheese
1 - small tub cool-whip whipped topping
1 cup(s) milk
1 teaspoon(s) vanilla extact

Steps:

  • Preheat oven to 350* spray a 9x13 inch pan, set aside.
  • Mix cake mix according to directions on package, when mixed well add in one (1) box of the instant pudding mix, and blend till smooth.
  • Bake according to box instructions; while the cake is baking, put cream cheese, vanilla, and 1/2 c. milk in bowl. blend with mixer on low until smooth, this might take a while if the cream cheese is cold... add the last box of pudding mix and rest of the milk, blending well... lastly blend in the whole tub of cool-whip topping...
  • When the cake is cool... spread on the frosting, it will seem like a lot and will be a thick layer, but that is what makes this cake so good, and it won't be too sweet either! cover and refrigerate overnight befor eating if you can wait that long; to let the flavor settle and make the moistest cake ever! Enjoy!
