BANANA DATE BREAD
A great banana bread that uses the least amount of oil I've seen compared to some other banana bread recipes. Tastes great all by itself or add a little butter or cream cheese to make it even better. Leave the dates and/or nuts out if that's not your thing.

Steps:
- Preheat oven to 350 degrees. Grease a 9 x 5 x 3 loaf pan. (Can be lined with parchment if it is aluminum.)
- Place the dates in the bowl of an electric mixer fitted with the paddle attachment. Add the hot water and allow the dates to soften for at least 10 minutes. (I usually get the rest of my ingredients ready while the dates are softening.)
- Turn the mixer on low speed and blend until the water has incorporated with the dates. Turn the mixer to medium low speed and beat the dates until a smooth puree forms.
- Add the butter or coconut oil and beat until well blended. Add the eggs, one at a time, beating well after each addition. Add the vanilla extract and mix.
- In a medium bowl, combine the flour, baking soda, baking powder and salt. Add to the butter-date mixture and mix until just combined.
- Fold in the mashed bananas and walnuts.
- Pour the mixture into the prepared pan and bake for 50-60 minutes (I made it in many different ovens with this range of time), or until a toothpick inserted in the center comes out barely clean. Cool in the pan for 10 minutes. Remove from the pan and cool on a rack.

DATE BREAD
This simple quick bread includes tons of juicy Medjool dates, making it an option for breaking the daily sunrise-to-sunset fast during the holy month of Ramadan, a tradition that Muslims observe in Tanzania and across the world. The tradition is rooted in the teachings of the prophet Muhammad, who is said to have called for observers to break their fasts with dates. Many Muslims include dates on their iftar tables (iftar is the evening meal eaten at sunset during Ramadan). This bread can, of course, be enjoyed by any and all, year-round. It's wonderful on its own with hot cups of coffee like Buna (Eritrean Coffee) or tea like Shaah Cadays (Somali Spiced Tea with Milk) or topped with a soft cheese like goat cheese, ricotta, or cream cheese. It's also wonderful served in slices on a cheeseboard. If you can't find Medjool dates, use whichever are the plumpest, least-dry dates you can find or substitute your favorite dried fruit such as dried apricots or dried cherries (you need about 1 cup of your favorite dried fruit).

Yield One 9-by-5-inch loaf
Number Of Ingredients 9
Steps:
- Preheat the oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick spray.
- Place the dates in a small bowl and sprinkle with the salt and baking soda. Pour the boiling water over the mixture and allow it to sit until it cools.
- Meanwhile, in the bowl of a mixer fitted with the whisk attachment or in a large bowl using a handheld mixer (or a whisk and a lot of elbow grease), beat the sugar and butter until creamy. Add the egg and vanilla and beat until well combined, about 1 minute. Using a rubber spatula, stir in the date mixture (water and all) and then fold in the flour. The batter will be very stiff.
- Transfer the batter to the prepared loaf pan and, using a rubber spatula, smooth out the top so the loaf is even. Bake until the loaf is dark golden brown, a toothpick tests clean when inserted into the center of the loaf, and the bread is firm to the touch, about 40 minutes. Let the bread cool completely on a wire rack before turning it out of the pan and slicing it. Leftovers can be stored in a plastic bag at room temperature for up to 3 days (if the slices get a bit dry, you can revive them in a toaster oven or regular oven set at 300 degrees F for a few minutes before serving).

- Banana Date Bread. The addition of chopped dates gives this awesome banana bread even more sweet, earthy flavor and a unique, chewier texture. Dates work great as a substitute to nuts if you have an allergy, or a complement to them if you want to toss in some chopped walnuts or pecans, as well.
- Banana Nut Bread. This moist, flavorful banana bread comes in as a fan favorite, with tons of five-star reviews. And once you try it, you'll understand why.
- Moist Banana Bread With Coconut Oil. Turn your breakfast bread into dessert or treat yourself to some sweetness with the addition of chocolate chips. They give your classic banana bread just enough flare for a special breakfast or brunch, or a delicious after-work snack.
- Double Chocolate Banana Bread. For a totally new twist on banana bread, add unsweetened cocoa powder for a dose of rich, chocolatey flavor, then sprinkle mini chocolate chips on top before baking for a pretty presentation and even more melted chocolate goodness.
- Healthy Banana Bread. A few smart swaps make this banana bread a little healthier than your standard, without sacrificing flavor. Yogurt adds moisture without extra oil, a blend of whole-wheat and all-purpose flours add extra fiber, and flaxseed pumps up both while contributing to leavening.
- Instant Pot Banana Bread. Yes, you can bake in your Instant Pot! This banana bread recipe comes out moist and flavorful. Just wrap the pan tightly in foil before baking so the steam doesn't get into the bread, making it mushy.
- Bread Machine Banana Bread. Use your bread machine to make an easy, moist, and delicious banana bread without a lot of work. Most quick breads will bake in a standard bread machine in two hours, since the longer cycle usually results in heavier breads, like whole wheat.
- Bourbon Banana Bread. This kicky banana bread recipe makes a fun twist on Nigella Lawson's classic banana bread, but with a luscious bourbon glaze and some extra booze in the batter to give it a wonderful moist texture.
- Vegan Banana Bread. Make your banana bread vegan and low-fat by omitting the oil and eggs and adding just 1/3 cup vegan margarine. It makes an excellent introductory recipe for new vegan bakers, since it doesn't require any egg substitutes.
- Banana Bread with Orange Zest. The addition of orange zest gives this banana bread a little extra citrus note that complements the banana perfectly. If you can, give it a day after baking to let the flavors mellow and meld.
