A fantastic make-ahead snack or dessert for little ones. Whip it up in under 5 mins and then let the nutritious chia seeds work their magic.

1 Banana
125ml (½ cup) Canned Coconut Milk
2 tbsp Chia Seeds

Steps:

  • Mash the banana until smooth and creamy.
  • Add the mashed banana, coconut milk,and chia seeds to a small mixing bowl/jug and stir until well.
  • After around 5 mins give the pudding another good stir to make sure the chia seeds are not clumped together and are well dispersed.
  • Transfer the mixture to serving dishes/ jars and refrigerate for at least 1 hour to allow the chia seeds to absorb the liquid and thicken.

1 ½ cups vanilla-flavored flax milk
1 large banana, cut in chunks
7 tablespoons chia seeds
3 tablespoons honey
1 teaspoon vanilla extract
⅛ teaspoon sea salt

Steps:

  • Put milk, banana, chia seeds, honey, vanilla extract, and sea salt in respective order in the blender; blend until smooth. Pour mixture into a bowl and refrigerate until thickened, at least 2 hours. Spoon mixture into small bowls to serve.

  • Let set for about 30 minutes, and give a good stir, repeat one more time, stirring again after 30 minutes. This step is an important step, as the seeds need to be stirred once or twice before completely gelling up and setting. If not stirred, the mixture will be soupy. Cover and place in the refrigerator for at least 6 hours, or overnight.
  • Serve with sliced bananas, toasted coconut flakes and cacao nibs/shaved chocolate. Would also be great with a dollop of coconut whipped cream!
