1 cup sour cream
½ cup butter, softened
2 eggs
1 ¾ cups mashed ripe bananas
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda

½ cup chopped walnuts
½ cup butter
4 cups confectioners' sugar
3 tablespoons milk
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 15x10-inch jelly roll pan.
  • Beat white sugar, sour cream, 1/2 cup softened butter, and eggs in a bowl with an electric mixer until creamy. Beat in bananas and 2 teaspoons vanilla extract. Add flour, baking soda, and salt; mix for 1 minute. Stir walnuts into batter until evenly incorporated. Spread batter in prepared pan.
  • Bake in the preheated oven until golden, about 27 minutes. Cool.
  • Melt 1/2 cup butter in a large saucepan over medium heat until bubbling and golden brown, 3 to 5 minutes. Remove from heat.
  • Whisk confectioners' sugar, milk, and vanilla extract into melted butter until a smooth frosting consistency is reached. Spread frosting over cooled banana bars.

1/2 cup butter (softened)
1 1/2 cups sugar
3 eggs
3 very ripe bananas
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
4 cups powdered sugar
1-1/2 teaspoon . vanilla extract
3 tablespoons milk

Steps:

  • Bars
  • Cream together butter and sugar using an electric mixer. Beat in eggs, bananas and vanilla.
  • Combine flour, baking soda and salt. Add to the banana mixture and mix well.
  • Pour into buttered 15 x 10 x 1 in baking pan
  • Bake at 350 degrees for 25 minutes or until lightly browned and springs back easily when touched.
  • Brown Butter Frosting
  • About 10 minutes before bars are done. Begin the frosting: Melt butter in a large saucepan over medium heat until boiling. Continue boiling for about 3-5 minutes until the butter becomes a light brown. Remove from heat.
  • Add powdered sugar, vanilla extract and milk. Whisk together until smooth. You will want this a bit thinner than frosting so it spread easily on the warm bars. Using a spatula, spread the brown butter frosting over the warm bars.

1 cup granulated sugar
1 cup mashed very ripe bananas (2 medium)
1/3 cup butter or margarine, softened
2 eggs
1 cup Gold Medal™ flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped cashews
1/2 cup butter (do not use margarine)
3 1/4 cups powdered sugar
1 teaspoon vanilla
1 to 3 tablespoons milk
24 cashew halves, if desired

Steps:

  • Heat oven to 350°F. Grease 13x9-inch pan with shortening or cooking spray. In large bowl, mix granulated sugar, bananas, 1/3 cup butter and the eggs until blended. Stir in flour, baking powder, baking soda and salt until combined. Stir in cashews; spread batter in pan. Bake 22 to 26 minutes or until toothpick inserted in center comes out clean. Cool completely, about 40 minutes.
  • In 2-quart saucepan, heat 1/2 cup butter over medium heat, stirring constantly, until golden brown; remove from heat. Using spoon, gradually beat in powdered sugar. Stir in vanilla and the milk, 1 tablespoon at a time, until frosting is smooth and desired spreading consistency. Immediately spread over cooled bars. Score into 6 rows by 4 rows, making shallow cuts in frosting. Top center of each bar with cashew half, pressing in lightly. Cut bars on scored lines.

Steps:

  • Heat oven to 350°F. Grease bottom and sides of jelly roll pan, 15 1/2x10 1/2x1 inch, with shortening, or line with aluminum foil. I got this great recipe from a site called CaramelPotatoes.com. So yummy. The sour cream helps to keep these light, like cake, but the bananas make it super moist. This is a great way to use up over-ripe bananas. I put them in the freezer and just thaw them when I'm ready to bake. Works great!

Steps:

  • Heat oven to 375 degrees. Grease and flour a 10×15 jelly roll pan. Beat first four ingredients until creamy. Blend in bananas and vanilla until incorporated. Add dry ingredients and blend one minute. Sitr in nuts and spread in pan. Bake 20 to 25 minutes -until light brown and center springs back to the touch (don't over bake). Cool and frost with Browned Butter Frosting.
  • For the frosting: 1/2 cup butter.
  • 2 cups powdered sugar.
  • 1 1/2 teaspoons vanilla.
  • 3 tablespoons milk.
  • Heat butter in saucepan over medium heat past the melting point until it boils and turns a delicate brown.Remove from the heat and immediately wisk in the remaining ingredients. This should make a thick glaze. Using a spatula smooth over the top of the Monkey Bars immediately. Work quickly, it hardens fast!

4 tablespoons salted butter (softened or even melted and cooled)
1/4 cup lightly packed brown sugar
1/2 cup granulated sugar
1/2 cup sour cream
1 large egg
1 teaspoon vanilla extract
2/3 - 1 cup mashed ripe bananas ((about 2 large bananas))
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
4 tablespoons butter
2 cups powdered sugar
1/2 teaspoon vanilla extract
1-2 tablespoons milk or cream (see note)

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 9X13-inch pan (see note) with cooking spray and set aside.
  • For the bars, in a large bowl, cream together the butter, brown and granulated sugars, sour cream, egg, and vanilla until well-mixed, 1-2 minutes.
  • Blend in the bananas and mix.
  • Stir in the flour, baking soda and salt and mix for just a minute or two until combined.
  • Pour the batter evenly into the prepared pan and bake for 15-20 minutes until a toothpick inserted in the center comes out clean and the top springs back to the touch.
  • While the bars are baking, make the frosting by melting the butter in a saucepan or stainless steel (not nonstick) skillet over medium heat (here's a quick tutorial on browning butter). Bring the butter to a gentle simmer, turning the heat down if needed, until the solids lightly brown and the butter smells caramelly and fragrant. Immediately remove from the heat and add the powdered sugar, vanilla and milk, whisking until smooth and creamy. Add more milk if needed to achieve a thick but spreadable consistency.
  • Let the bars cool for 5-10 minutes and then dollop the frosting over the warm bars and spread in an even layer.
  • Cool the bars to room temperature. Cut into squares and serve. These keep well-covered for 1-2 days at room temp or refrigerated.
