This is a recipe I tore out of a magazine. i made it this week, and it was so delicious! It disappeared very quickly, and I have been asked to make another. My kids loved it and took slices in their lunch boxes. Even my eldest, who is kinda fussy and never eats cake..just LOVED it!

2 cups self raising flour
1 teaspoon bicarbonate of soda
1/2 teaspoon ground nutmeg
1 cup pitted dates, finely chopped
2/3 cup brown sugar, firmly packed
3/4 cup orange juice
1 large egg
60 g butter, melted
1 cup ripe mashed banana

Steps:

  • Grease a 14cmx21cm loaf pan, line base and long sides.
  • Combine flour, bicarb, and nutmeg in a large bowl. Stir in dates and brown sugar. Make a well in the centre, add juice, butter, egg, and bananas. Mix with a wooden spoon until smooth. Pour mixture into prepared pan.
  • Cook at 180C for about 1 hour.
  • Stand cake in pan for 5 minutes before turning out on a rack.
  • Serve warm or cold, with a little butter.

1 cup margarine
2 cups sugar
2 large eggs
4 large very ripe bananas, mashed
1 cup milk
3 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1/2 cup margarine
1 cup brown sugar, well packed
1/4 cup hot milk
3 1/4 cups powdered sugar

Steps:

  • Cream margarine, sugar and eggs until fluffy.
  • Stir in mashed bananas and milk.
  • Combine flour, soda and salt.
  • Add dry ingredients to banana mixture and blend thoroughly.
  • Pour batter into greased and lightly floured 9X13 pan.
  • Bake at 350 degrees for 45 min or until done.
  • Cool and top with Penuche Caramel Frosting.

  • Boil butter, brown sugar and milk over medium heat for 2 minutes.
  • Cool.
  • Beat in powdered sugar until you obtain the desired consistency.
  • Pour over cake and spread.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
  • Whisk flour, baking powder, and 1/2 teaspoon salt together in a bowl.
  • Beat 1/2 cup butter and 1 cup brown sugar together in a bowl using an electric mixer until light and fluffy. Add eggs, 1 at a time, beating just until combined. Beat bananas and 1 tablespoon vanilla extract into butter mixture. Gradually add flour mixture, beating on low speed, just until incorporated. Pour batter into prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 55 minutes. Cool in the pan for 20 minutes. Run knife around edges of bread and transfer to a wire rack.
  • Heat 1/4 cup brown sugar and 2 tablespoons butter in a saucepan over medium heat; bring to a boil. Cook, stirring constantly with a whisk, until sugar is dissolved, about 1 minute. Stir cream into brown sugar mixture and remove saucepan from heat. Stir 1/3 cup confectioners' sugar and 1/4 teaspoon salt into cream mixture until glaze is smooth. Drizzle glaze over loaf.

1 stick (8 tablespoons) unsalted butter
1 3/4 cups all-purpose flour (see Cook's Note)
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
1/2 cup lightly packed light brown sugar
1/4 cup sour cream
1 teaspoon pure vanilla extract
2 large eggs, lightly beaten
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)
1/2 cup toasted pecans, chopped
1 cup granulated sugar
3/4 cup heavy cream
1 tablespoon unsalted butter
2 ripe medium bananas, thinly sliced
3 cups butter pecan ice cream
3/4 cup toasted pecans, chopped

Steps:

  • For the brown butter banana bread: Preheat the oven to 350 degrees F. Lightly spray the bottom and sides of a 9-by-5-inch loaf pan with nonstick cooking spray.
  • Melt the butter in a small saucepan over medium heat; cook, swirling the pan occasionally, until the butter browns, 6 to 9 minutes. Immediately transfer to a medium bowl and let cool slightly.
  • Whisk together the flour, granulated sugar, baking soda, cinnamon, salt and nutmeg in a large bowl. Whisk the brown sugar, sour cream, vanilla and eggs into the bowl with the browned butter until combined, then stir in the mashed bananas. Fold the flour mixture into the banana mixture with a rubber spatula until just combined (some small lumps are ok).
  • Pour the batter into the prepared loaf pan and lightly tap the pan on the counter to evenly distribute the batter. Top with the pecans. Bake until the loaf is browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely. Wash and dry the loaf pan, then reserve for assembly.
  • For the banana caramel sauce: Meanwhile, combine the granulated sugar and 1/4 cup water in a medium saucepan over medium heat. Bring to a simmer and cook, swirling the pan occasionally, until the sugar turns a dark amber, 10 to 12 minutes. Working carefully (as the mixture will bubble up at this point), slowly whisk in the heavy cream until smooth. Stir in the butter and sliced bananas until thoroughly combined. Transfer to a large bowl, then let cool to room temperature, about 1 hour.
  • For the assembly: To assemble, line the reserved loaf pan with plastic wrap, leaving about a 4-inch overhang on the 2 longer sides. Carefully slice the cooled banana bread with a serrated knife horizontally into 3 even slices. Place the bottom slice into the bottom of the lined loaf pan, then cover with an even layer of 1 1/2 cups of the butter pecan ice cream. Spoon about 1/3 cup of the banana caramel sauce over the ice cream, then sprinkle with half of the pecans. Layer the middle slice of banana bread over the pecans, then cover with the remaining butter pecan ice cream, followed by another 1/3 cup banana caramel sauce and remaining pecans. Finish by placing the top layer of banana bread on top, then press down gently so all the layers adhere. Fold over the plastic wrap, then use another sheet of plastic wrap to cover the loaf pan completely. Freeze until completely firm, at least 6 hours and up to overnight. Refrigerate the remaining banana caramel sauce and reserve for serving.
  • To serve, use the plastic overhang to lift the cake out of the pan. (Run the underside of the loaf pan under warm water if the cake sticks to the pan and is hard to remove.) Microwave the reserved banana caramel sauce in 20-second intervals, stirring after each, until just warm, about 1 minute. Cut the ice cream loaf into 1-inch-thick slices, then drizzle with the warm banana caramel sauce.

1 large egg white

Steps:

  • Position a rack in the center of the oven and preheat to 325°F Grease a 5-by-9-inch loaf pan. Trim both ends off each of 3 bananas to fit crosswise in the pan; reserve the ends. Halve the long banana pieces lengthwise; peel and transfer to a plate.
  • In a large, heavy skillet, bring 1/4 cup sugar and 2 tablespoon water to a boil, without stirring. Cook until the water has evaporated and the mixture starts turning amber. Remove from the heat and swirl in the butter with a fork. Add the long banana pieces cut side down and cook over low heat for 1 minute; transfer to the prepared loaf pan, arranging them crosswise, cut side down. Drizzle the remaining caramel on top.
  • In a medium bowl, mash the banana end pieces to equal 1 cup (add more banana if necessary). Mash in the remaining 1/2 cup sugar. Beat in the whole egg, egg white and vanilla.
  • In a large bowl, whisk the flour with the baking powder, cinnamon and salt. Add the banana mixture and oil, whisk until blended. Scrape the batter over the bananas in the pan and bake until a toothpick inserted in the center comes out dry, 50 to 55 minutes. Let cool on a rack for 10 minutes; invert the cake onto a platter and let cool completely.

2 cups self-raising flour
1/2 teaspoon bicarbonate of soda
1 cup brown sugar, firmly packed
3/4 cup buttermilk
2 eggs
1 teaspoon vanilla extract
2 bananas, large & ripe & mashed (you need 1 cup)
1/2 cup firmly packed brown sugar
50 g butter, chopped
2 tablespoons milk
1/2 cup powdered sugar icing

Steps:

  • Preheat the oven to 170C/150C fan-forced.
  • Lightly grease a 6cm-deep, 10cm x 20cm (base) loaf pan. Line the base and sides with baking paper, allowing a 2cm overhang at long ends.
  • Sift flour and bicarbonate of soda into a bowl, add sugar and stir to combine. Place milk, eggs and vanilla in a jug and whisk to combine.
  • Fold milk mixture and banana into flour mixture and pour into a prepared pan.
  • Bake for 1 hour to 1 hour 15 minutes or until a skewer inserted in the centre of the cake comes out clean.
  • Stand cake in pan for 10 minutes.
  • Turn out on to a wire rack to cool.
  • To make the icing: Place the brown sugar, butter and milk in a saucepan over low heat. Cook, stirring, for 2 minutes (don't boil) or until sugar dissolves. Increase the heat to medium. and bring to boil.
  • Reduce heat to low. and cook for 2 to 3 minutes or until slightly thickened.
  • Remove from heat. Stir in icing sugar until smooth.
  • Cool for 10 minutes the spread loaf with icing.
