Best banana bread recipe with overripe bananas, walnuts and brown sugar. This recipe is so easy and can be made by hands, without a mixer.

1 1/4 cups (150 g) walnuts, coarsely chopped
2 cups (240 g) all-purpose flour
1 cup (200 g) brown sugar
3/4 teaspoon baking soda
1/2 teaspoon salt
3 (1 1/2 cups or 450 g) large overripe bananas, mashed
1/4 cup (4 tablespoons) plain whole fat yogurt
2 large eggs, beaten lightly
6 tablespoons unsalted butter, melted, plus more for greasing
1 teaspoon vanilla extract
2 tablespoons rum, optional (Captain Morgan brand)

Steps:

  • Preheat the oven to 350°F (175°C). Grease a loaf pan (9x5 inch loaf pan).
  • Add the walnuts on a rimmed baking sheet, slide in the oven and toast until fragrant, 5 to 10 minutes. Let cool.
  • In a large bowl, combine the flour, walnuts, brown sugar, baking soda and salt. In a medium bowl, stir the mashed bananas, yogurt, eggs, butter and vanilla with a spoon. Add rum, if using. Lightly fold the banana mixture into the dry ingredients with a rubber spatula, mixing just until combined. The batter should be thick and chunky. Scrape the batter into the loaf pan.
  • Bake the banana bread until the surface appears golden brown and a cake tester inserted in the center comes out clean, about 55 minutes. Let cool the banana bread in the pan for 5 minutes. Remove from the loaf pan, slice and serve warm.

1 cup (2 sticks) unsalted butter, melted
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 teaspoon baking soda
4 ripe bananas, mashed (about 1-1/2 cups)
3 tablespoons unsalted butter, melted
3 tablespoons granulated sugar
3 tablespoons dark brown sugar
2 tablespoons ground cinnamon
6 thin slices of banana, for garnishing

Steps:

  • Preheat oven to 350°F. Lightly grease and flour a 9×5-inch loaf pan and set aside.
  • In a large bowl, melt the butter and let cool slightly. Whisk in the sugar then the eggs and vanilla. Stir in the flour and baking soda. Fold in the mashed bananas until just combined.
  • In a small bowl, use a fork to stir together the cinnamon sugar swirl ingredients until thick and well combined. If your swirl is too thick to swirl, add an additional tablespoon of melted butter until it is thin enough to swirl. Note: if it's too thin, it will just spread and not hold its swirl as the loaf bakes.
  • Spread 1/4 of the batter evenly into the bottom of the prepared pan. Dollop 1/4 of the cinnamon sugar mixture over the batter in the pan and then make a nice thick swirl through the batter with a table knife or bottom of a wooden spoon. Place 1/3 of the remaining batter evenly over the first layer and swirl with 1/3 of the remaining cinnamon sugar mixture. Place 1/2 of the remaining batter evenly over the second layer and swirl with 1/2 of the remaining cinnamon sugar mixture. Spread the remaining batter evenly over the top and dollop with the remaining cinnamon sugar mixture. Make large swirls throughout the entire loaf. Place six thin banana slices down the middle of the batter.
  • Place loaf pan on a baking sheet and bake for 60-70 minutes or until golden brown and a toothpick inserted in the center comes out clean. Let the bread cool in the pan for at least 30 minutes before removing to a wire rack to cool completely.

½ cup (100g) sugar
¼ cup (60 ml) vegetable oil, neutral in taste**
¼ cup (60 ml) almond milk
½ cup (50g) almond flour
1 ¼ cup (150g) all-purpose flour
¾ teaspoon baking powder
¾ teaspoon baking soda
1 pinch salt
½ teaspoon cinnamon (optional)
1/3 cup (40g) walnuts, roughly chopped

Steps:

  • Preheat the oven to 350°F (180°C) and grease the bottom and the sides of a 9×5-inch (23×13 cm) loaf pan with vegetable oil. Set aside.
  • In a large bowl, mix the mashed bananas with sugar, vegetable oil, almond milk and almond flour. Set aside.
  • In a smaller bowl, combine all-purpose flour, baking powder, baking soda, salt and cinnamon.
  • Add the dry ingredients to the wet ingredients, mix until just combined (do not overmix), and stir in the walnuts.
  • Pour in the batter into the prepared loaf tin and bake for about 50 minutes to 1 hour, or until a toothpick inserted in its center comes out clean. Let cool for about 10 minutes, then transfer to a cooling rack to cool completely.

Well, there was always peanut butter in the house, and with nothing to lose at that point, I SUBSTITUTED! The end result was this recipe.

1 teaspoon baking soda
2 eggs
1 1/2 cups flour (plain)
1 cup sugar
1/4 cup peanut butter

Steps:

  • Grease 2 loaf pans.
  • Preheat oven to 350°.
  • Mash 2 bananas with 1 teaspoon baking soda.
  • Slightly beat 2 eggs, add sugar and peanut butter, mixing well.
  • Mix in the banana mixture and the flour, combining well.
  • Pour into prepared pans.
  • Bake 40-50 minutes (check at 4 minutes with toothpick and adjust baking time if still "gummy").
  • Cool 10 minutes, then remove from pans and finish cooling on wire racks.
