1 cup granulated sugar
2 eggs, beaten
3 bananas, finely crushed (for serious and extreme moist and delicious, try 4 bananas)
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla (optional)

Steps:

  • Remove odd pots and pans from oven.
  • Preheat oven to 350º / 180º.
  • Cream together butter and sugar.
  • Add eggs and crushed bananas.
  • Combine well.
  • Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
  • Mix just until combined. Do not overmix.
  • Pour into greased and floured loaf pan.
  • Bake at 350º / 180º for 55 minutes.
  • Keeps well, refrigerated.

3/4 cup butter, softened
1 1/2 cups sugar
3 bananas, blackened
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 cups flour
3/4 teaspoon salt
1/2 cup buttermilk
1/2 cup mini chocolate chip

Steps:

  • Cream butter and sugar (by hand or mixer).
  • Mash bananas and add by hand to creamed mixture.
  • By hand add eggs, vanilla, baking soda, flour and salt.
  • Gently stir in buttermilk and chocolate chips.
  • Pour into a greased loaf pan.
  • Bake at 350°F for 1 1/4 hour or until it tests done with a toothpick.
  • **I find that coarsely mashing bananas is best and make sure they are over ripe for best flavor.
  • I also find that doing the majority of the mixing by hand makes for better texture in the end.
  • **Even though the recipe says it makes 1 loaf, I usually use 2 loaf pans or 3 mini loaf pans because it seems to yield a moister bread.
  • Just adjust baking time down.
  • **if you do not have buttermilk you can put 1 teaspoons vinegar into a 1/2 cup measuring cup and fill to top with milk.
  • Let rest 5 minutes before adding to recipe.
  • **This freezes well.

4 overripe bananas
1 cup sugar
3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled
2 large eggs
1 teaspoon pure vanilla extract
1/2 cup pecans, finely chopped
Confectioners' sugar, for dusting

Steps:

  • Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.
  • In a large bowl, combine the flour, baking soda, and salt; set aside.
  • Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.
  • Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. 140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
handful dried banana chips, for decoration

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
  • Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
  • Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
  • Cool in the tin for 10 mins, then remove to a wire rack.
  • Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
  • Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

3/4 cup shortening
1 cup sugar
2 eggs
1 cup banana (usually 3 medium)
1 teaspoon baking soda

  • Preheat oven to 350% and grease a loaf pan.
  • In a large bowl cream together the Shortening and sugar. Then add in the eggs and mix. Now add in your mashed up bananas(the blacker the skin on the bananas the sweeter the bananas will be) and add the Vanilla.
  • Now mix in the flour, baking soda and salt.
  • You do not need a hand mixer mix everything with a spoon.
  • Pour the batter in the greased loaf pan and place in the oven for 1 hour or 45 minutes depending on how hot your oven gets. Test the middle with a toothpick. You should have no batter on the toothpick that means its done.
  • SPECIAL NOTE: Make sure your bananas are over ripe. The blacker the skin is the better!
  • Now for the Secret ingredient -- it is the shortening. DO NOT substitute the shortening for butter or anything else. I promise this is what makes the crust so brown and YUMMY! I'm not a big fan of using shortening except I make an acception to this recipe.
