BANANA BREAD FRENCH TOAST
Steps:
- For the banana bread: Preheat oven to 350 degrees F. Spray a loaf pan with nonstick spray and line with parchment paper; spray the parchment.
- Cream the butter and brown sugar in a stand mixer fitted with the paddle attachment, 5 minutes. Add eggs and mix for another 3 minutes, then add the bananas, yogurt and vanilla. Mix on low for 2 minutes, then add the flour, baking powder, salt and baking soda and mix until everything is incorporated, about 2 minutes. Add batter to prepared pan (it should fill the pan three-quarters of the way) and bake until a tester comes out clean, 60 to 65 minutes.
- Take loaf out of pan and put on a cooling rack. Let cool completely.
- For the apple compote: Add apples, brown sugar, cinnamon and salt to a pot over medium heat. Warm until sugar is dissolved, 5 minutes. Add butter and mix until the butter is melted and the sugar is bubbling, 2 minutes. Take pot off heat and let cool. Serve cold.
- For the egg wash: Mix eggs, cream, cinnamon, nutmeg and salt in a bowl with a whisk until everything is incorporated.
- For the whipped cream: Beat the cream together with the powdered sugar with a stand mixer fitted with the whisk attachment on 4th speed until nice and fluffy, 2 to 3 minutes.
- Cut three 1/2-inch-thick slices of the banana bread and dip in the egg wash. Put in a hot frying pan with butter in it. Turn heat to medium and cook until golden brown, 3 minutes per side. Take off heat and cut the slices corner to corner into triangles. Make a circle with the 6 pieces so there is a little hole in the middle. Fill the hole with 2 tablespoons prepared apple compote and add 3 little pillows of whipped cream around the plate. Add some maple syrup (local syrup is best) and dust some powdered sugar on top. Enjoy!

- Preheat oven to 250 degrees. Line a baking sheet with foil and place in the oven to warm.
- Whisk together the eggs, half and half and vanilla in an 8-inch square baking dish until combined. Whisk in 2 tablespoons of the brown sugar, the cinnamon, nutmeg and salt.
- Melt 1 tablespoon of the butter in a large nonstick skillet over medium heat. Meanwhile, dip 4 slices of banana bread very briefly in the egg mixture (don't soak) letting the excess drip back in the dish. Add the dipped banana bread to the skillet and sprinkle each slice with 1 tablespoon brown sugar and pat in. Cook until the underside is golden brown, about 2 minutes. Flip and cook until golden brown on the second side, about 2 minutes. Put on the baking sheet in the oven to keep warm and repeat with the remaining banana bread, batter, adding 1 tablespoon more butter to the skillet and sprinkling the slices with 1 more tablespoon brown sugar. Keep the second batch of French toast in the oven.
- Wipe the skillet clean with a paper towel and add the remaining 2 tablespoons butter. Once the butter melts, add the remaining 2 tablespoons brown sugar and the lemon juice and stir until smooth. Add the bananas and toss until glazed, about 1 minute. Serve the French toast topped with the bananas and chopped walnuts.

It all started this past Easter, where at a wonderful little restaurant called Jane's (in Chicago), I had my first taste of the amazingness that is Banana Bread French Toast. Ever since, I have been wanting to make my own! So when my fiance and I made a batch of Vino Girl's Banana-Oatmeal Bread (#100513 ) originally from Cooking Light, it was the perfect opportunity. If you ever have any kind of banana bread sitting around -- you have to try this!

- Heat a griddle or skillet over medium heat.
- To make the batter, put flour into a wide flat bowl.
- Mix while adding milk to avoid lumps.
- Mix in eggs and whisk or mix with a fork to combine.
- Dip pieces of bread into egg mixture and let it soak in, flipping over to coat.
- Place soaked bread onto griddle/skillet and sprinkle with cinnamon.
- Cook until nicely browned, then flip over to brown the other side.
- Serve with your favorite maple syrup and turkey sausage for a delicious special occasion breakfast!

- In a shallow bowl, whisk together the eggs, sweetened condensed milk and vanilla with a fork. Set aside.
- Melt butter in a large skillet over medium heat.
- Slice banana bread into 4 thick slices.
- Dip each slice into the egg mixture, then place in the hot pan. Cook on each side until golden brown.

I have yet to try this, but it sounds awesome! The banana whipped cream topping must be started at least two hours before serving. I would do this the night before so it is ready to use in the morning. This is definitely on my must try list.

- For topping: combine bananas, orange juice, sugar and lemon juice and cook over medium heat for 5 minutes or until the bananas become very soft.
- With a slotted spoon, transfer bananas to blender.
- Add 1/4 cup of the liquid from the pan and puree until smooth.
- Place in a bowl, cover with plastic wrap and chill until cold (at least 2 hours).
- Just before serving, beat whipping cream in a medium bowl until stiff peaks form.
- Fold banana puree into whipping cream.
- For French toast, whisk together the eggs, milk, cinnamon and vanilla.
- Dip bread slices into egg mixture, coating both sides well.
- Melt butter in skillet or griddle and cook slices over medium heat until golden brown.
- Keep slices in warm oven until all are completed.
- Serve with a generous dollop of banana cream topping and garnish with a few slices of freshly sliced bananas.

BANANA BREAD FRENCH TOAST WITH CRèME FRAîCHE
This recipe comes from the April 1st, 2007 Chicago Tribune. The original recipe is by JeanMarie Brownson. We made it for my dad's birthday on Easter this year -- it was a huge hit. Top with sliced bananas, and powdered sugar, and serve with dollops of marmalade and Crème Fraîche on the side. Personally, we all could have done without the marmalade and just gone with the creme fraiche or sour cream. We used Emeril's banana bread recipe, but of course, you can use store-bought banana bread. If you use your own recipe, make sure that the consistency is more like cake than like the moist bread -- otherwise it will fall apart in the pan.

- Heat oven to 200 degrees (this will be to keep french toast warm later). Cut ends off bread. Cut bread into 3/4-inch-thick slices; cut each slice in half on the diagonal to make triangular pieces. Set aside.
- Mix milk, eggs, vanilla, salt, cinnamon and nutmeg in a shallow dish or pie plate; set aside.
- Heat a large non-stick griddle or skillet over medium heat until hot. Add 1/2 tablespoon oil and butter to the griddle. Gently and quickly dip a couple of slices of the bread into the egg mixture to thoroughly soak both sides with the mixture; carefully transfer each bread slice to the hot pan.
- Cook until nicely golden, about 2 to 3 minutes. Turn each slice; cook second side until golden brown, about 1 to 2 minutes more.
- Transfer to an ovenproof platter; keep warm in the oven cooking remaining bread using the remaining oil and butter as needed.
- Serve with powdered sugar and slices of bananas on top. Add dollops of marmalade and creme fraiche (or sour cream) to the side.
