BANANA BREAD BROWNIES

Banana Bread Brownies image

When you swirl banana bread together with fudgy brownies, it's a mashup that takes these two homey favorites to the next level.

Provided by Food Network Kitchen

Categories     dessert

Time 3h5m

Yield 24 squares

Number Of Ingredients 24

1 cup all-purpose flour (see Cook's Note)
2 tablespoons unsweetened cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon fine salt
1 stick (8 tablespoons) unsalted butter
1 1/4 cups light brown sugar
3 ounces unsweetened chocolate, chopped
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour (see Cook's Note)
1/2 cup granulated sugar
3/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon fine salt
1 large egg, at room temperature
3 very ripe bananas, mashed
1/3 cup sour cream
1 stick (8 tablespoons) unsalted butter, melted
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter
2 ounces unsweetened chocolate
1 cup confectioners' sugar
3 to 4 tablespoons boiling water, plus more if needed
1 cup toasted walnuts, coarsely chopped

Steps:

  • For the brownies: Preheat the oven to 350 degrees F. Line a 9-by-13-inch glass baking dish with aluminum foil so that 2 inches hang over each end.
  • Whisk the flour, cocoa powder, baking powder and salt together in a small bowl. Bring the butter, brown sugar and 1/2 cup water to a simmer in a saucepan, then turn off the heat. Whisk in the unsweetened chocolate, then let cool slightly. Whisk in the eggs and vanilla. Stir in the flour mixture. Set aside while you make the banana bread.
  • For the banana bread: Whisk the flour, granulated sugar, baking soda, cinnamon and salt together in a medium bowl. Beat the egg in a large bowl. Add the bananas to the egg and mix to combine well. Stir in the sour cream, melted butter and vanilla. Stir in the flour mixture until just combined.
  • Use a medium ice cream scoop to dollop about half of the banana bread batter in the prepared baking dish. Spoon or pour the brownie batter around the banana bread batter (it will cover it partially). Scoop the remaining banana bread batter over the top, making sure some brownie batter still shows through. Bake until a toothpick inserted in the center comes out clean, 35 to 40 minutes. Cool in the baking dish on a rack, about 1 hour.
  • Lift the brownies out of the pan using the foil overhang, but leave in the foil.
  • For the topping: Combine the butter and chocolate in a small heatproof glass bowl. Microwave in 30-second intervals, stirring in between each, until melted. Sift the confectioners' sugar into a medium bowl. Whisk in the melted chocolate and the boiling water to make a smooth glaze, adding a little more water if it is too thick to drizzle. Drizzle the glaze over the top of the brownies with a spoon. Sprinkle the walnuts all over. Let the glaze set, about 30 minutes. Cut into squares and serve.

GRILLED BANANAS WITH WALNUT CARAMEL CLOUD NINE BROWNIES

Grilled Bananas with Walnut Caramel Cloud Nine Brownies image

Provided by Food Network

Categories     dessert

Time 30m

Yield 2 servings

Number Of Ingredients 9

Sauce:
1/2 cup heavy cream
2 tablespoons banana liqueur
1 to 2 teaspoons freshly grated nutmeg
1/4 cup bourbon (recommended: Maker's Kentucky Bourbon)
1 ripe banana, sliced into 4 strips
1/2 cup whiskey (recommended: Jim Beam Kentucky Bourbon Whiskey)
Couple of shakes from a cinnamon container
2 store-bought brownies

Steps:

  • Sauce:
  • Preheat grill to high.
  • Place all ingredients, except bourbon, in a small saucepan over high heat on the grill. Bring to boil and reduce by 1/3 until thickened. Remove from heat, add bourbon, and reduce by half. Remove from grill, cool slightly, and pour into a plastic container. As the sauce cools, it will thicken more.
  • Bananas:
  • Brush bananas with whiskey. Place bananas over medium-low heat on the grill. Generously sprinkle cinnamon over banana. Grill for 2 minutes and remove from the grill to a plate. Pour 1/2 cup of whiskey over bananas. Return bananas to the grill until a little charred. Flip bananas over to char the other side.
  • To assemble: Crumble brownies into 2 martini glasses, lay sliced bananas in an ornate fashion around rim of glass, and top with sauce.

Provided by Diaryofamadbathroom

Categories     Bar Cookie

Time 50m

Yield 12 bars (average size), 8-12 serving(s)

Number Of Ingredients 11

4 ounces good quality unsweetened chocolate
3/4 cup unsalted butter
3 eggs
1 1/4 cups white sugar
1/4 cup brown sugar, firmly packed
1 teaspoon vanilla extract
2 cups flour
3/4 teaspoon salt
1/4 cup maraschino cherry, halved
1 ripe banana, sliced in rounds (1/4-inch thick)
1/3 cup roughly chopped walnuts

Steps:

  • Preheat oven to 350.
  • Line a 13X9" pan with foil and lightly spray the foil with a vegetable oil spray.
  • Melt chocolate and butter in a double boiler or bowl set over barely simmering water. Stir occasionally. When everything is melted and smooth, remove the bowl from the top of the pan. Stir in the sugars, butter, vanilla and eggs until well combined.
  • Add the flour and salt stirring just to combine (just until no more particles of white flour are visible).
  • Add in the cherries and bananas and fold in gently to avoid breaking the banana slices. When combined, pour into foil lined pan and top with walnuts.
  • Bake at 350 for 25 - 35 minutes or until a moist crumb clings to a toothpick when tested.
  • Allow to cool at least 30 minutes before slicing. Pull the foil lining out and slice.
  • Yield is dependent on the size of brownie you prefer.
