BANANA PANCAKES WITH CRISPY BACON & SYRUP
Treat yourself to a lazy brunch with these American-style fluffy pancakes with pancetta and maple drizzle

- Heat the grill to high. Arrange the bacon on a baking tray lined with foil. Cook for 5-7 mins until crisp, then turn off the grill but leave the tray inside to keep warm. In a bowl, mix the flour, baking powder and sugar with a pinch of salt. Make a well in the centre and add the mashed banana, eggs, butter and milk. Whisk to a smooth batter without any flour lumps.
- Heat a little butter in a large frying pan. Once sizzling, ladle in small dollops of the pancake batter, leaving a little space between each, as they will spread out. Put 2 or 3 slices of banana onto the surface of each pancake and cook for 2 mins over a medium heat. When you see bubbles appear between the banana slices, flip the pancakes over and cook for 1 min more, until puffed up and golden. Transfer to a plate and keep warm with the bacon while you cook the rest. Serve the pancakes with the crispy bacon and a drizzle of maple syrup.

BANANA AND PECAN PANCAKES WITH MAPLE BUTTER

- Preheat the oven to 200 degrees F.
- In a large mixing bowl whisk the buttermilk, eggs, and vanilla together so they are well combined. In a separate bowl mix the flour, baking powder, soda, salt, and sugar. Combine the wet ingredients with the dry and stir with a spoon to get rid of the lumps. Fold in the pecans, most of the melted butter and whisk until batter is smooth. Heat a griddle or skillet over medium low heat and swirl around a little melted butter to keep the pancakes from sticking. Using a ladle pour the batter into the pan, see Cook's note*
- Cook the pancakes on 1 side until they are set and then lightly press the bananas into the batter. When small bubbles appear on the uncooked surface, flip the pancakes and cook until golden on both sides, about 8 minutes. Transfer pancakes to a warming plate in the oven while you make the rest.
- To serve, slice the maple-honey butter, layer it between the stack of pancakes and place in the oven to melt for 1 1/2 minutes. Sprinkle with confectioner's sugar and candied pecans.
- In a mixing bowl, using a spatula mash the butter with the maple syrup and honey until well blended. Roll it up in the paper, like a tube and twist the ends. Chill in the refrigerator for 30 minutes.

- Combine 1 cup milk, sugar, and egg yolks in a small heavy saucepan; stir well with a whisk.
- Place over medium heat, stirring constantly.

VEGAN BANANA PANCAKES
Ripe banana, a common replacement in vegan recipes, pulls double duty here as both an egg substitute and a delicious pop of flavor. In this case, the riper the banana the better! We recommend using unsalted vegan butter which lends a flavor reminiscent of traditional pancakes, but coconut oil also works in a pinch.

- Whisk the flour, sugar, baking powder and salt in a large bowl.
- Whisk the mashed banana, almond milk, butter and vanilla in a medium bowl until combined. Whisk the banana mixture into the flour mixture until just combined (it's OK if there are a few lumps).
- Heat a large nonstick skillet over medium heat and brush with butter. Pour 1/4 cup of the batter into the skillet for each pancake and cook until the bottom is golden brown and bubbles form on top, 1 1/2 to 2 minutes. (If the pancakes are browning too quickly, reduce the heat to medium-low.) Flip and continue cooking until golden brown on the other side, 1 to 2 more minutes. Transfer to a plate. Repeat with the remaining batter, brushing the pan with more butter as needed. Serve with more butter and syrup.

- Whisk together milk, egg, vanilla, cinnamon in a shallow bowl.
- Preheat a non-stick skillet on medium heat. Add butter.
- One at a time, dip bread and let excess egg mixture dip off.
- Once butter is melted, place bread slices in pan and cook for 2-3 minutes until the bottom side is golden brown, but not crisp. Flip bread and cook for another 2-3 minutes. Remove from pan and repeat the process with the second slice, unless you have enough room to do both at the same time.
- Let French toast cool and cut into 4 pieces. You can also cut off the crust for smaller babies.

- Preheat oven to 350°F. Line an 8-inch spring form pan with parchment.
- To make the topping, heat butter in a small saucepan. Add in brown sugar and maple syrup. Cook over medium heat until sugar melts and a dark syrup forms, about 10 minutes. Transfer mixture to lined cake pan.
- Cut bananas in half lengthwise. Arrange bananas cut-side down into the syrup.
- To make the cake batter, combine butter and sugar in the bowl of an electric mixer. Beat until light and fluffy, about 2 minutes.
- Add 1 egg at a time, then add vanilla. Beat until combined.
- Add in bananas and stir well.
- In a separate small bowl, combine flour, salt and baking soda. Add to mixture and stir to combine. Do not over mix.
- Pour batter over top of bananas then smooth the top into an even layer. Place in preheated oven until cake is golden brown and a toothpick inserted into the centre comes out clean, about 50 minutes.
- Remove from oven and let cool for 15 minutes. Release spring form and flip cake onto a serving plate so the bananas are on top.

- 2. Process the ingredients constantly for about 2 minutes or until the mixture turns a really pal,creamy color and has a nice frothy texture.
- 3. Pour the banana and maple flip into a tall chilled glass and serve immediately. Decorate the glasses with a orange or lime slice, if you like.
