THE BEST TUNA SALAD
While we love many kinds of tuna salad, this classic version tops them all. The crispy celery and red onion give add zest and crunch, while mayonnaise and touch of mustard marry it all together. The lemon juice is optional as it's not traditional, but we strongly recommend it to brighten up the flavors of the final dish.

- In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion and parsley. Add the mayonnaise, mustard and season with pepper, to taste. Stir to combine. Add lemon juice, to taste, if using.
BEST TUNA SALAD EVER
I adapted this recipe from Better Homes and Gardens, and it's the best I've ever had. Just enough crunch, just enough mayo. It's perfect! I like to serve this in pita pockets with a little lettuce.

- In a medium bowl, combine tuna, celery, green onions, and water chestnuts.
- In a separate bowl, stir together mayonnaise, lemon juice, dill, and salt. Fold mixture into tuna mixture.
- Chill for a couple hours, covered.

BALINESE TUNA SALAD

Steps:
- Combine all the spice-paste ingredients in a deep bowl and stir with a wooden spoon for 5 minutes. Set aside. Season the tuna with salt and pepper and sprinkle it with the lime juice. Add the oil and tuna to the hot pan and cook for about 6 minutes per side. Remove from the heat, cover the pan and allow the tuna to cool.
- When cooled, break the tuna into chunks and transfer it to a large, nonreactive bowl. Add the spice paste and toss. Allow to sit for 1/2 hour, or covered and refrigerated overnight. Serve with warm rice on the side.

One of my favorite salads in the Moosewood Daily Special cookbook. It can be made quickly with leftover rice and served as a main course or side dish that is perfect for last minute picnic or easy summer supper.

- In a blender, puree all the dressing ingredients until smooth.
- In a large serving bowl, combine the rice, pineapple, scallions, celery, peppers, and raisins.
- Add the dressing and toss well.
- Gently mix the sprouts and baby corn or scatter them on tap if you prefer.
- Garnish with nuts.
- Serve at room temperature or chill for about 30 minutes.
- Toast nuts in a single layer on an un-oiled baking tray at 350F for about 5 minutes, until golden.

LEBANESE TUNA TAHINI SALAD
I've recently discovered tahini and absolutely love it! In this healther adaptation of tuna salad, tahini replaces mayonnaise as the emulsifier and adds unique flavor along with the Middle Eastern spices. I like to add apples to my tuna salad for a contrasting sweet, tart flavor.
