MAGNOLIA BAKERY'S VANILLA BIRTHDAY CAKE AND FROSTING
These comments are from their cookbook: "At Magnolia we decided to make our cake not quite a traditional yellow cake or a traditional sponge cake, given the use of whole eggs in our recipe. We're sure you'll agree this recipe is moist, delicious and makes a beautiful layer cake or cupcakes for birthdays or any celebration. Frost with pink buttercream icing and lots of colored sprinkles as we do, and feel as though you're at your seventh birthday party all over again!"

Steps:
- Preheat oven to 350°.
- Grease and lightly flour three 9 inch round cake pans, then line the bottoms with waxed paper.
- In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth.
- Add the sugar gradually and beat until fluffy, about 3 minutes.
- Add the eggs one at a time, beating well after each addition.
- Combine the flours and add in four parts, alternating with the milk and the vanilla extract, beating well after each addition.
- Divide batter among the cake pans.
- Bake for 20 to 25 minutes or until a cake tester inserted into center of cake comes out clean.
- Let cakes cool in the pans for 10 minutes.
- Remove from pans and cool completely on wire rack.
- If you're making cupcakes, line two 12-cup muffin tins with cupcake papers.
- Spoon the batter into the cups about three-quarters full.
- Bake until the tops spring back when lightly touched, about 20 to 22 minutes.
- Remove cupcakes from pans and cool completely on a rack before icing.
- When cake has cooled, ice between the layers, then ice top and sides of cake.
- To make the icing - place the butter in a large mixing bowl.
- Add 4 cups of the sugar and then the milk and vanilla.
- Beat until smooth and creamy.
- Gradually add the remaining sugar, 1 cup at a time, until icing is thick enough to be of good spreading consistency (you may very well not need all of the sugar).
- If desired, add a few drops of food coloring and mix thoroughly.
- Use and store icing at room temperature, as icing will set if chilled.
- Can store in an airtight container for up to three days.
BAKERY STYLE VANILLA SPONGE CAKE
A moist and flavourful bakery style vanilla sponge cake. This is my go-to vanilla cake and works great as a layer cake!

- Preheat your oven to 350ºF with a rack in the middle position. Grease two 8" circular cake pans.
- Whip the room temperature eggs in your mixer on high speed (using the whip attachment), until foamy. Very slowly, pour in the sugar. Continue to whip until the mixture reaches the ribbon stage (when you lift the whisk out, the mixture with flow off in a wide, thick, pale yellow ribbon), about 5 to 7 minutes.
- Add in the flour, baking powder, and salt, and mix on low speed until combined.
- Put the milk and butter in a medium microwave safe bowl (or in a pot on the stove top), and heat until the butter is melted and the mixture is hot.
- Whisk 2 cups of the cake batter into the hot milk mixture. Add it all back into the remaining batter.
- Add the vanilla and mix until evenly combined.
- Pour the batter evenly between the two cake pans.
- Bake at 350ºF for 25 minutes, then reduce the oven temperature to 325ºF and continue baking until finished (about 10 minutes, watch carefully). The cake it done when you gently press at the center and it springs back immediately.
- Remove from the cake pans and let cool completely on wire racks before slicing or icing.

CAKE BOSS SPONGE CAKE RECIPE
I found this online and I don't know if it really is the CB recipe but it is a scratch recipe, and the secret to its light and fluffy texture is the beating of the eggs! This recipe is best made in a stand mixer. It got everyone raving about it.

Steps:
- 1. Beat eggs in large mixing bowl with paddle attachment for 4 minutes. Do not skip this step!
- 2. Add sugar, and continue beating for another 4-5 minutes until light and fluffy. Add vanilla and stir on low until just combined.
- 3. In a separate bowl, sift together dry ingredients. Add to eggs and sugar on low speed until just combined.
- 4. In a saucepan, heat milk and butter on low heat just until butter is melted. Add to batter, beat just until combined.
- 5. Pour into two greased and floured 8" round cake pans.
- 6. Bake at 325 until the middle springs back when touched, or a toothpick inserted in the center comes out clean (about 30 to 35 minutes). Remove from oven and let stand in pans for 10 minutes. Then turn out onto wire cooling racks and cool completely.
- Hint: Cakes are close to being done when you start to smell them.
