8 ounces penne pasta
¼ cup Parmesan cheese
½ cup crushed saltine crackers
1 tablespoon olive oil
½ onion, chopped
2 cups chopped zucchini
1 tomato, chopped
2 cloves garlic, minced
½ teaspoon dried oregano
½ teaspoon dried basil
1 pinch dried celery flakes
salt and pepper to taste
1 cup shredded mozzarella cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add penne pasta, cook for 10 to 12 minutes, until al dente, and drain. Lightly grease a medium casserole dish.
  • Preheat oven to 350 degrees F (175 degrees C). In a blender or food processor, thoroughly mix the Parmesan cheese and crackers.
  • Heat the oil in a skillet over medium heat. Place the onion in the skillet, and cook and stir until tender. Mix in the zucchini, tomato, and garlic, and season with oregano, basil, celery, salt, and pepper. Continue to cook and stir until the zucchini is tender.
  • In the prepared casserole dish, mix the pasta with the vegetable mixture and mozzarella cheese. Top evenly with the Parmesan cheese mixture.
  • Bake 25 minutes in the preheated oven, or until the topping is lightly browned. Allow to sit 5 minutes before serving.

When I'm craving lasagna but don't want to go through the extra effort of building it and ensuring it will slice into perfect pieces, this is my go-to. The noodle bundles come out of the pan perfectly, and the zucchini adds a healthy element but blends right in. They're little pillows of heaven!

2 large zucchini
Kosher salt
2 cups ricotta
3 garlic cloves, grated
1 cup finely grated Parmesan
1 cup grated provolone
Zest and juice of 1 lemon
2 tablespoons finely chopped fresh thyme, leaves and tender stems
1 teaspoon crushed red pepper flakes
1/2 cup finely chopped flat-leaf parsley, leaves and tender stems
Freshly ground black pepper
One 1-pound box lasagna noodles (about 16), boiled according to package directions until al dente, drained and patted dry
One 24-ounce jar tomato sauce

Steps:

  • Preheat the oven to 425 degrees F.
  • Use a vegetable peeler to remove long strips of the zucchini lengthwise using a peeler and place on a baking sheet lined with paper towels; you should have about 32 strips of zucchini. Season the zucchini with salt and set aside.
  • Combine the ricotta, garlic, 1/2 cup Parmesan, provolone, lemon zest and juice, thyme, 2 teaspoons kosher salt, red pepper flakes, 1/4 cup of the parsley and freshly ground pepper to taste in a medium bowl and mix with a rubber spatula or large spoon.
  • Connect two slices of zucchini lengthwise end to end, overlapping them slightly. Place a lasagna noodle on top of one end of the zucchini. Spread 2 tablespoons of cheese mixture onto the noodle. Starting at one end, roll the noodle up, tucking in the remaining zucchini around the noodle to seal it. Repeat with remaining zucchini, noodles and cheese mixture.
  • Pour 1 cup tomato sauce over the bottom of a large high-sided ovenproof skillet. Lay the pasta and zucchini bundles on top of the sauce. Top with the remaining tomato sauce and remaining 1/2 cup Parmesan and bake until the top is golden and the sauce is bubbling, 18 to 20 minutes.
  • Top with remaining 1/4 cup parsley and serve immediately. Enjoy!

5 small zucchini, 1/2 inch slices
salt and pepper
1 (28 ounce) can Italian plum tomatoes, drained/chopped
8 black olives, sliced
3 tablespoons parmesan cheese, freshly grated
1 teaspoon fresh rosemary
1/2 lb mozzarella cheese, cut in 1/2 inch cubes

Steps:

  • Preheat oven to 350 degrees.
  • In a large frying pan, heat oil.
  • Saute Zucchini until lightly browned, about 5 minutes.
  • Season with salt and pepper.
  • Transfer to an oiled shallow casserole dish.
  • Cook pasta in boiling salted water, when pasta is almost cooked, drain and add to Zucchini.
  • Add tomatoes, olives, Parmesan, rosemary and 1/2 of the mozzarella.
  • Sprinkle with a little more salt and pepper; if desired.
  • Gently mix together.
  • Cover with the remaining mozzarella.
  • Bake until cheese is melted and the top is slightly browned, about 15 minutes.

Steps:

  • In a small skillet, saute vegetables in oil until tender, about 7 minutes. Stir in the bread crumbs, salt and pepper; cook for 2-3 minutes. Remove from the heat; stir in pasta. 1/2 to 1 cup reserved pasta water

Steps:

  • Cook the pasta in boiling, salted water to al dente. Drain the pasta, reserving 1 cup of the cooking water. Return the pasta to the pot and set aside.
  • In a large saute pan, add the bacon and cook until the fat is rendered and the bacon is crispy. Add the zucchini and cook until it starts to soften. Place the cooked pasta over low heat. Add the reserved pasta water, cooked bacon, zucchini and the grated cheese. Toss to combine. Season with salt and pepper. Taste and adjust seasonings. Serve immediately.

The large yellow flower buds opened up as wide as the plant would allow first thing in the morning as the sun crept up over the ridge. It was as if to grasp all the sunshine and dew it could as it continued to grow into a mature zucchini, bright green, strong, and solid. Once they start on their upward growth, zucchini, or any squash for that matter; don't stop. As with any garden during the summer months, the garden fairies do their magic and we are blessed with many zucchini, squash, and eggplants. Not very often, but sometimes, you just want to fairies to take a break, and not bring so many vegetables at one time, but alas; this is not the case. I put together this little recipe to warm the souls of all, and still incorporate the use of this nifty vegetable while pondering the many stories of the farm. Go ahead, take a breath, enjoy the work of the zucchini fairies and the nourishment the zucchini plant brings.

4 spring onions, thinly sliced
1 garlic clove, minced
2 zucchini, grated (medium)
4 eggs

Steps:

  • Preheat oven to 350 degrees.
  • Grease a oven proof baking dish, (approx. 2 qt.) with cooking spray.
  • Grate zucchini, drain in colander removing excess water.
  • Cook pasta in large saucepan, until al dente, drain well and set aside.
  • Heat butter in frying pan, add spring onion and cook one minute.
  • Add garlic and saute' for 1 minute.
  • Add drained zucchini to pan, and cook for 4 minutes, or until soft. Cool slightly.
  • Place eggs, cream, ricotta, mozzarella, ditalini, and half the Parmesan in a bowl and mix together well.
  • Stir in zucchini mixture, adding salt, pepper, and red pepper flakes if using.
  • Place this mixture in dish, (be careful not to fill to brim) add sprinkle rest of Parmesan.
  • Bake 25-30 minutes, or until firm and golden.
  • Add chopped parsley or cilantro for garnish after removing from oven.

SPAGHETTI WITH ZUCCHINI

After a recent trip to the Amalfi Coast, she came home with the best possible souvenir: a recipe for Lo Scoglio's famous zucchini pasta. "The owner said it wouldn't be the same because we don't have their zucchini in the States," says Katie, "but I think it's about 98 percent there!"

1 clove garlic, smashed
2 medium zucchini, thinly sliced
6 fresh basil leaves, torn
1/3 cup grated parmigiano-reggiano cheese, plus more for topping

8 ounces spaghetti
3 tablespoons extra-virgin olive oil
1/3 cup grated pecorino cheese

Steps:

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, 9 to 11 minutes. Reserve 1 cup pasta water, then drain the pasta.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic; when it begins to sizzle, add the zucchini and saute for a couple of minutes. Add 1/4 cup of the pasta water and cook until the zucchini is tender, about 5 minutes. Add 1/4 teaspoon salt and half of the basil. Remove the garlic.
  • Add the pasta to the skillet along with about 1/2 cup of the reserved cooking water; shake the pan vigorously, adding a little more cooking water if the pasta looks dry. Cook, tossing, until the liquid is absorbed, 3 to 4 minutes. Remove from the heat and add the parmigiano, pecorino and the remaining basil; toss. Top with more Parmesan.

2 ears corn
fresh ground black pepper, to taste
8 zucchini, about 2 lb. total, cut into half-moons
1/2 yellow onion, diced
4 tomatoes, cored, seeded and cut into 1-inch chunks
1 tablespoon sliced garlic
1 teaspoon chopped fresh oregano
1/4 teaspoon red pepper flakes
1 tablespoon tomato paste
1/4 cup white wine
1/2 cup thinly sliced fresh basil
6 ounces mozzarella cheese, grated
2 ounces parmigiano-reggiano cheese, grated

Steps:

  • Preheat an oven to 400ºF.
  • Bring a large pot of water to a boil over high heat. Generously salt the water, add the pasta and cook, stirring occasionally, until al dente, about 8 minutes. Drain the pasta and rinse under cold running water. Set aside.
  • In a 12-inch nonstick fry pan over medium-high heat, warm 3 Tbs. of the olive oil. Add the corn, season with salt and black pepper and cook, stirring occasionally, until the corn is lightly golden, 6 to 8 minutes. Transfer to a large bowl. Set aside.
  • Return the pan to medium-high heat and warm the remaining 3 Tbs. olive oil. Working in batches, add the zucchini, season with salt and cook, stirring occasionally, until the zucchini is tender and golden brown, 6 to 8 minutes. Add to the bowl with the corn. Repeat with the remaining zucchini, adding more oil to the pan as needed.
  • Set the pan over medium-low heat. Add the onion, 1 teaspoons salt and black pepper, to taste. Cook, stirring occasionally, until the onion is translucent, about 2 minutes. Stir in the tomatoes, garlic, oregano and red pepper flakes and cook, stirring occasionally, until the tomatoes soften and begin to form a sauce, about 5 minutes. Stir in the tomato paste and cook for 1 minute. Add the wine and cook until the wine has reduced and the sauce is fairly thick, about 3 minutes more.
  • Add the pasta, tomato sauce, basil, mozzarella and half of the Parmigiano-Reggiano to the bowl with the vegetables and stir to combine. Transfer to the fry pan and sprinkle the remaining Parmigiano-Reggiano on top. Transfer the pan to the oven and bake until golden brown on top, 20 to 25 minutes. Serve warm. Serves 8.

Steps:

  • Grate the onion and zucchini in a seperate bowl.
  • In large skillet warm the olive oil and add the grated onion to the skillet. Cook at medium heat until they become translucent then just barely golden.
  • Next add the zudchini and cook until barely golden also. For the first minute or two raise the heat a bit then turn it back to medium. Don't burn the zuchinni they may turn bitter. Cook for 8-12 minutes.
  • Salt and pepper to taste. If the sauce is a little too dry add a little more olive oil.
  • Add the finely chopped garlic in the center of the skillet give it a minute or so then add the fresh chopped rosemary herb and cook for a minute. Fold gently and turn off the heat.
  • Meanwhile you should have your pasta boiling and ready for the sauce. Add the cooked al dente pasta to the sauce and mix gently. Add just a little pasta water if needed. Plate each dish and drizzle a little olive oil, freshly grated romano, parmesan or even gorganzola cheese on top. Che buono!

  • Heat oven to 375°F.
  • Cook pasta in large saucepan as directed on package, omitting salt.
  • Meanwhile, cook and stir onions in large nonstick skillet on medium heat 3 to 4 min. or until crisp-tender. Freshly grated Parmesan or freshly chopped parsley for garnish.

Steps:

  • Bring a large pot of water to a boil and salt it. Put olive oil in a large skillet over medium heat. Add zucchini, onion and thyme, and cook, stirring occasionally. Add salt and pepper and adjust heat so onion and zucchini release their liquid without browning. Cook for about 20 minutes, or until very tender.
  • Add tomatoes and their liquid to zucchini and raise heat a bit so mixture bubbles. Cook pasta until it is nearly but not quite tender. If sauce threatens to dry out, add a little pasta cooking water.

1 lb small zucchini, quartered lengthwise and cut into 1/2 inch pieces
1 teaspoon salt
1/2 medium sweet onion
1/2-1 stalk celery (1/2 large or 1 small celery stalk, from the heart)
1/2-1 carrot
3 ounces pancetta, cut into chunks or 3 ounces bacon, cut into pieces
4 -6 tablespoons olive oil
6 cloves garlic, thickly sliced (optional)
3/4 lb spicy Italian sausage, casing removed,broken up
3/4 cup red wine
1 3/4 cups tomato sauce
1 3/4 cups beef broth
1 lb rigatoni pasta
4 ounces smoked mozzarella cheese, grated
1/4 cup freshly grated romano cheese (optional)
1 pinch red pepper flakes
1 pinch pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Bring a large pot of salted water to a boil.
  • Generously butter a 9x12-inch casserole pan and coat with half the bread crumbs.
  • Place the zucchini in a colander and sprinkle with the salt.
  • Cover with a plate (press down on the zucchini), weighted down with a heavy object.
  • The salt will draw the liquid from the zucchini; the plate will help squeeze it out.
  • Allow the zucchini to sit for about 20 minutes.
  • Place the onion, celery, carrot and pancetta or bacon in the bowl of a food processor and pulse until the mixture is chopped into tiny pieces.
  • In a large, deep sauté pan, heat 2 tablespoons of the oil over medium-high heat.
  • Add the vegetable-pancetta mixture and the garlic.
  • Sauté for 5 to 6 minutes.
  • Add the sausage, stirring to break it up further and cook for 4 to 6 minutes, until the sausage is cooked through.
  • Add the wine, scraping up any browned bits from the bottom of the pan and cook for 1 to 2 minutes.
  • Add the tomato sauce and broth.
  • Bring the sauce to a boil, reduce the heat, and simmer for 10 to 15 minutes.
  • You should have a thin rather than thick pasta sauce; you want it liquid, as the mixture will eventually bake.
  • Set the sauce aside, and cook the pasta in the boiling water according to the package directions.
  • Do not overcook; the pasta should hold its shape.
  • While the pasta is cooking, rinse the zucchini.
  • Wrap in a clean, dry kitchen towel and squeeze out all the moisture.
  • Heat 1 to 2 tablespoons of the remaining oil.
  • Add the zucchini, and over high heat, brown on all sides for 3 to 4 minutes.
  • Cook in two batches, adding more oil if necessary, if the zucchini pieces are too many for one pan.
  • They should be softened but not mushy.
  • Remove and set aside.
  • Drain the pasta, reserving 1/2 to 3/4 cup of the cooking water.
  • Remove 1 cup of the pasta sauce from its pan and warm the remainder.
  • Add the pasta and reserved pasta water to the sauce in the pan and toss well.
  • Add the zucchini and mozzarella and stir well.

1/4 teaspoon pepper

Steps:

  • Cook linguine according to package directions. In a sieve or colander, drain the zucchini, squeezing to remove excess liquid. 1 pound rotini pasta
5 small zucchini, sliced
⅓ cup olive oil
4 cloves garlic, minced
1 pinch crushed red pepper flakes
⅓ cup chopped fresh parsley
salt and pepper to taste
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and reserve.
  • Fill a medium sauce pan with lightly salted water. Add zucchini and bring to a boil; boil for 10 minutes or until tender.

4 small zucchini
2 tablespoons olive oil
1 clove garlic, pressed
1 (14 1/2 ounce) can diced tomatoes
1 teaspoon oregano
1/2 lb italian turkey sausage, cooked and sliced
salt and pepper
1 bunch fresh basil, torn
1/2 cup grated parmesan cheese

Steps:

  • Slice clean, unpeeled zucchini into ribbons, using a vegetable peeler, and turning the zucchini as you go.
  • Warm 1 TBSP olive oil in a saucepan, on medium heat.
  • Saute the garlic briefly, and add tomatoes and oregano.
  • Simmer uncovered for a few minutes.
  • Heat the remaining oil in a large skillet.
  • Add the zucchini.
  • Stir for several minutes, until zucchini is soft.
  • Add salt and pepper to taste, then mix in the sauce.
  • Add the sausage, stir well.
  • Stir in basil, and transfer to a serving dish.
  • Top with parmesan cheese.
