Steps:
- Bring a large pot of lightly salted water to a boil. Add ziti and cook for 8 to 10 minutes or until al dente; drain and rinse.
- In a medium bowl, mix ziti, ricotta cheese, mozzarella cheese, egg and 1 1/2 cups spaghetti sauce.
- Preheat oven to 375 degrees F (190 degrees C).
- Lightly grease a 9x13 inch baking dish and spoon in ziti mixture. Top with remaining spaghetti sauce, followed by Parmesan cheese.
- Bake in preheated oven for 30 minutes; let stand for 15 minutes before serving.

Steps:
- For the Bechamel sauce: heat butter in a medium sauce pan until melted. Add flour and stir until smooth. Cook over medium heat until light golden brown, about 6 to 7 minutes.
- Meanwhile, heat the milk in separate pan until just about to boil.
- Add milk to butter mixture 1 cup at a time, whisking continuously until very smooth and bring to a boil. Cook 30 seconds and remove from heat.
- Season with nutmeg and 2 teaspoons salt and set aside.
- Preheat the oven to 425° F.
- Bring 6 quarts of water to a boil in a large pot and add 2 tablespoons salt (optional).
- Cook pasta for 30 seconds less than the package instructions.
- Add Marinara sauce, Bechamel, mozzarella, and grated cheese to the pasta and mix well.
- Divide pasta and sauce mixture among six individual gratin dishes. Sprinkle with breadcrumbs.
- Bake for about 20 minutes, until bubbling and crusty on top. Serve immediately.
BAKED ZITI
My Italian grandmother's recipe. You can use jarred sauce, or make your own. Either way, it's delicioso! Serve with a tossed salad and fresh Italian bread.

- Boil pasta.
- Drain and set aside.
- Brown ground beef.
- Drain and remove from heat.
- Add ricotta, parmesan, parsley, egg, salt, pepper, and half of sauce to meat and mix well.
- Add ziti and toss gently to coat.
- Spoon mixture into a 13x9-inch baking pan.
- Pour remaining sauce over pasta mixture.
- Sprinkle with mozzarella cheese.
- Bake, uncovered, at 350 degrees for 20 minutes, or until hot and bubbly.

SIMPLE CHEESY BAKED ZITI
When I first saw this recipe I could not believe how easy it was. Of course, I can't leave a recipe alone, and added a few changes to make it more "mine."

- Heat the oven to 350 degrees F.
- Bring a large pot of salted water to boil and add the ziti. Cook until tender, about 8 minutes, then drain the pasta.
- Place the ziti in a large bowl.
- Mix with the ricotta and half of the mozzarella.
- Grease a 9 x 13-inch casserole dish. Use butter, it tastes better.
- Mix the oregano and the paprika into the spaghetti sauce.
- Pour half of the spaghetti sauce on the bottom of the pan.
- Add the ziti mixture and cover with the remaining sauce.
- Sprinkle with Parmesan and the remaining mozzarella.
- Bake uncovered, for 20 to 30 minutes, until the casserole bubbles on the edges.
BAKED ZITI WITH FOUR CHEESES
I love macaroni and cheese. This version is terrific, with a crusty-cheesy layer on top and creamy-cheesy baked pasta in the middle.

Steps:
- Melt butter over moderately-low heat, stir in flour and cook 3 minutes.
- Remove from heat and whisk in hot milk.
- Return pan to heat, bring to a boil, whisking, for 10 minutes.
- Remove from heat and stir in nutmeg, ¾ tsp of salt and ¼ tsp of pepper.
- In a small bowl, combine 1 cup of the Gruyere, ½ cup of the Fontina and ½ cup of the Parmesan; whisk cheese into the sauce, ½ cup at a time, until cheese is melted.
- Season to taste.
- Preheat oven to 390 degrees F.
- Boil ziti until al dente.
- Drain well and turn into a buttered 13 x 9 x 2 inch pyrex baking dish.
- Season with remaining ¼ tsp salt and ¼ tsp pepper.
- Pour sauce over and combine.
- Sprinkle remaining ½ cup Gruyere, ½ cup Parmesan, 1 ½ cups Fontina and all of the mozzarella.
- Bake for 20 minutes, or until pale golden-brown.

A lady I worked with brought this in one day, and it was a hit. Now it is the favorite of all my dinner guests. It's great for a covered dish dinner too. I have made this also without the meat, and it is well received.

- Bring a large pot of lightly salted water to a boil. Add ziti pasta, and cook until al dente, about 8 minutes; drain.
- In a large skillet, brown onion and ground beef over medium heat. Add spaghetti sauce, and simmer 15 minutes.
- Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish. Layer as follows: 1/2 of the ziti, Provolone cheese, sour cream, 1/2 sauce mixture, remaining ziti, mozzarella cheese and remaining sauce mixture. Top with grated Parmesan cheese.
- Bake for 30 minutes in the preheated oven, or until cheeses are melted.

BAKED ZITI
Everyone has a baked ziti, but this one has been tweaked to be as Weight-Watchers points friendly as possible. It's not Core, unfortunately. (To much cheese)

Steps:
- Sautee onions in a spray of oil until translucent, add garlic and continue cooking.
- Add peppers and cook for about 5 minutes more, or until peppers start to get soft.
- Add turkey, basil, oregano, and pepper flakes, and begin cooking over medium heat.
- When turkey is cooked, remove from pan along with the veggies. Drain out the liquid at the bottom. Return the meat and veg back to the pan, add the tomatoes, crushed and the paste. Stir together and bring to a boil, reduce heat and simmer for about 20 minutes.
- Meanwhile, prepare pasta according to directions. Cook until very al dente. Set aside and allow to cool, spraying with olive oil and tossing to prevent sticking. You can also toss it with a little olive oil, if you don't have a sprayer.
- Combine the sauce, ricotta and about 2/3 of the mozzarella cheese with the pasta and pour into a 9x13 baking dish that has been lined with foil Sprinkle with remaining mozzarella cheese.
- Cover with foil and bake at 350 for 40 minutes, or until bubbly. Remove the foil and bake another 15-20 minutes or until brown on top. If you can stand it, let it set for about 20 minutes more.
RONZONI BAKED ZITI.
This is the classic back of the box recipe. I usually double the recipe and it still disappears! Make sure you use pasta with the ridges, this holds the sauce the best.

Steps:
- Heat oven to 350°F.
- Cook pasta.
- In large skillet brown meat (if using) and drain. Add marinara and simmer for 10 minutes.
- In a small bowl stir together ricotta, 1 cup mozzarella and seasonings.
- Toss the cooked pasta with the sauce and add half of it to a 9x13 baking dish. Then spread the cheese mixture over the pasta.
- Add the remaining pasta and top with mozzarella and parmesan.
- Cover loosely with foil and bake for 25 minutes. Remove foil and bake another 5 minutes until hot and bubbly and cheese is golden brown.
